I been in business since 1983...made it through the recession in the 80's. Made it through 9/11...made it through recession 2009....made it through hurricane sandy.....but I gotfa be honest here... I'm scared of the current situation were in....god bless you daddy Jack....and the rest of the world.... we will prevail

I made my first pan sauce last night without using a recipe. Just winged it after watching how Daddy Jack does it, and it turned out great! Thank you!

I’d mince some habanero pepper and add it to the glaze. The combination of sweet, heat and citrus would balance nicely. Serve with some Thai Jasmine rice and some grilled string beans.

I am cashews crazy myself..............I reside in Thailand and when I get a very hot spicy salad wether beef or chicken I ask for the extra nuts.....They think I am NUTZ hahahahaha but the texture and crunch is just right. I would cook this off easily and just as you suggested. However its not even funny how juicy you can tell this Chef kept that bird so moist.........This guy knows what he is doing for sure. Hope u all staying safe and healthy and cooking..Now is the best time ever and people thought I was weird when I went from just a beans on toast guy to making some amazing dishes from the content being shared here. Hope You're feeling better Carlos! I was in the hospital for a week In January, had bypass surgery in Sept. and ended the year with the flu for two week but we're still blessed to be here. The Leidenfrost effect is what makes the water dance around in the pan. The pan is so hot that the water boils as soon as it hits the surface and essentially creates a "blanket" of steam between the pan and the water which lets it move around without surface tension or friction interfering.

Now this makes my mouth water, well done Chef. Hope you are all staying safe and inside down there. Up here in Kingston Ontario Canada we are to do the same, and I am for the most part. I work in a grocery store so my hours are the same and we try our best to keep the ten foot rule in effect.......try and keep your distance when you can. Close to retirement and could walk away from this but I feel a sense of duty to help out people. We will all make it through provided we act responsibly Chef by sitting and watching your great show we are being responsible. Cheers to you and yours and may you all be safe

The water moving like that is the Leidenfrost effect, I think is what you were trying to remember. It's essentially where a liqud touches a surface hotter than its own boiling point. (so the pan was hotter than 100C)
