Hoppin John is a Southern stew traditionally made on New Years for good luck. It is usually made with ham hocks and black eyed peas and rice, and is typically served with collard greens and cornbread. I have omitted the rice to make it lower in carbs and have made it in the instant pot to save some time. Spices can range from mild to very hot. This recipe is what I would call medium spicy. Enjoy!
