Yeah, he REALLY likes his sugar. I made CJ's rice pudding a few months ago. Couldn't finish it. Wow it was far too sweet!

GiantRobotUppercut He literally added 2/3 cups sugar. Thats 1.57 tablespoons per cup of drink. So in a standard 12oz serving, thats 2.3 tablespoons or 7 teaspoons of sugar. A healthy diet is only supposed to include 9 teaspoons of added sugar for a male. 6 for females. Diabetic cascade is right lol

Chef, mexican here! You can also soak the rice and almonds in hot water overnight. It will work better and blend even easier. Results are breathtaking.

THANK YOU for not adding milk!!!! Since I've been little, I've always had issues with milk. My Aunt would make Horchata for me so I wouldn't feel left out during lunch. I have tried to find a Mexican recipe WITHOUT milk and it's almost impossible. Thank you for sharing this! 🙏

I want to try the mexican version. The salvadorean version is made with the seeds of a fruit called "morro" or "jicaro", it's nutty and sweet It's blended with sesame seed, peanuts, cinnamon and sugar. I hope you taste it some day chef John!

I'm heading down to Mexico in 2 weeks. Happily, they have horchata at the hotel where I am going. You should show a bunch of Mexican drink recipes, including jamaica (pronounced "ha-my-ica"), which is hibiscus tea. Really refreshing drink.

Horchata typically has milk (I'm Mexican). I'd really recommend adding the milk. It's like adding milk to tea! Sure tea is good, but milk tea is da bomb.

I don't see what many of the Mexicans in the comments are complaining about this is a very good agua de arroz/horchata recipe and very authentic, seems to me a lot of people forget that there are different variations of the same thing all over Mexico BTW I'm Mexican lived my whole life in Mexico and I like this recipe and love chef John for all the Mexican recipes he puts out always makes me proud

Chef john, small thing to add. When you use the almonds, a lot of almond milk recipes call for soaking the almonds for at least eight hours in water with a pinch of salt to soften them. Makes them easier to blend up. after using the nut milk bag, you can also use a mesh strainer and strain a second time.

Doesn't seem like he did since his grains were dry and not stuck together. Plus, washing it would remove some of its starch, which is essentially why there is rice in the first place.

Boxs I honestly am not qualified enough with cornstarch and/or nutstarch to give you a proper answer! I never wash my rice, even though I've been told I should when only preparing rice (removes excess starch and cleans the rice). I would just trust Chef and follow his recipe ;) or you can always try it out yourself, I am sure if you don't put TOO much starch it won't ruin the recipe! Remember, nothing wrong with tinkering recipes!

Unfortunately I'm allergic to raw almonds, so could I boil this for a few minutes or would it change it?

Boiling the almonds (or blending them and adding boiling water to them/cooking the blended almonds) should be fine for the taste. it shouldnt change anything dramatically. You could also experiment with other nuts, although it would change the flavour a bit, of course.

Horchata is my all time favorite drink and I've made it from scratch and it takes way longer than this. And I've only ever used a sifter to strain out the grit and I had to do it 4 times and it STILL had a lot of gunk left on the bottom. And I've always thought that I needed cheese cloth but I have no where to get it. Super glad you made this fast, easy way. Now all I need to do is find cheese cloth
