Really good restaurants don't limit themselves to one base gravy and nor should you. If you want to make truly great butter chicken, chicken tikka masala and other dishes it's time you expanded your base repertoire.

Yes nice base Makhani recipe - i make with base gravy, macadamia nuts or cashew's depending where i am in the world and even almonds. Nice one gets my like

Living here in France I’m asked to cook lots of traditional recipes for people who either miss a good curry (we live in he countryside where there are no Indian restaurants) or want to try some. Your videos have become my go to guides! 🙂

Hi Romain. I’ve been making restaurant style curries for some years now and they’ve all been very well received. Your recipes are great. But since I’ve been using the hotel base and makhani base -Wow! Have they gone up a couple of levels. The comments from the people who I give them to are just awesome. In short, the bases are superb. Romain - this recipe and the accompanying butter chicken absolutely nailed it. I pretty simply made it vegan (using Farm Boy "Chicken", oat half-and-half, and Melt for the butter) and everyone loved it. And I used cashews instead of macadamia nuts since we're not allergic. A quick trip out to Bombay Spices to load up on some of the ingredients was well worth it. It's better than most restaurants - posh hotel level, I'd say :-)

@@glebekitchen I tried this a couple times with Hotel Style Chicken Tikka and turned out awesome. The second time, I marinaded the chicken with pickle masala. It was pretty awesome. It made the dish much hotter and added a nice tangy flavour to it.

I sometimes leave nuts out altogether, especially for dishes other than butter chicken. It is different but I like it just fine and sometimes prefer it.

Having just watched the hotel gravy video, tikka masala and butter chicken are my two most often cooked curries. Should I be making makhani gravy instead?

For butter chicken all you need is the makhani gravy. For tikka masala you need both. I don’t have a video for chicken tikka masala but it is available on glebekitchen.com

I used a good quality canned tomato with no ingredients except tomatoes and their juices, salt and citric acid.

I'm the opposite. I accidentally found out that I could eat cashew nuts and almonds without knowing I ate them in Indian restaurants. Other nuts are terrible with me. Stomach cramps for hours and horrible skin rash.. that takes hours for antihistamines to remove.. no thanks. Surprisingly many people, especially in Asia don't understand allergies. In Thailand, I had a waitress say "it's only a bit of peanut, a bit every day is good for you. It can help you get rid of allergy". I just left to the restaurant next door, and it was someone who understood it. A thai guy who grew up in the west explained in thai that in worst case people can die from an allergic shock. But enough ranting and to the point. You and I think quite similarly in terms of cooking. I also always use canned tomatoes, and not fresh. Canned can often provide better results than fresh because they were picked while in season. Will try your recipe, as they never failed.

Food allergies can be a huge problem. Thankfully for me it is just cashews and pistachios. A peanut allergy would kill me.

@@glebekitchen could you do a hotel curry base video too? I’m actually a lot more fond of authentic style over British indian curry style. Btw I’m planning to make a neapolindian fusion makhani pizza with grilled tikka in my 420 celcius pizza oven.

@@theguynextdoor4978 - yes, it's on the list and coming up soon. I make a NeoIndian pizza but half makhani gravy and half tomato sauce (just San Marzano through the food mill and salt). Topped with chicken tikka, red onion and sliced jalapeño. Everyone who has tasted it raves... BTW - have you ever checked out the Neapolitan pizza dough recipe/technique on glebekitchen? Two day room temp ferment...

No. This is not meant to be fried like an onion gravy. I have a butter chicken video coming that uses this gravy but if you don't want to wait there is a link to the butter chicken recipe in the description of this video.

Wouldn't cashews give a grainy texture to the gravy?

They are boiled and pureed. It comes out pretty smooth when blended.
