Another way is the first perk tree in Diplomacy and get the Accomplished Forger perk.

It's always better to have the Westerlands kingdom title. Vassals de jure to that title (who haven't drifted to Castemere) will pay full tax and levy if you have it, otherwise they'd only be paying you half tax and levy as normal because you aren't their rightful liege. As long as you have Castemere as your primary title, duchies in the Westerlands will still de jure drift into your primary title.

yk i just did what you did not do with the florents, in my florent playthrough I married the middle daughter of edmure tully (he had 3 daughters) and then few years after that I made a shit ton of strong alliances and pushed her claims and now she is the reigning paramount and my heir has both the florent high lordship and tully inheritance(but sadly he will take up the lord parramountcy of riverlands fromost )

If yous switch character you can manually choose which title is your primary title which should fix that! :)

As long as your holdings don't change I think it should stay the same, you will still hold both kingdom titles but you get to pick which is your primary
