Watching it was delightful :) and great timing with it. I just got a new pack of Dan Cong, didn't had a chance to brew it yet. My next Gong Fu session definitely will be with it. I personally tried roasting but only with Japanese teas like Hojicha that were getting roasted right before brewing - for me this procedure impacts the flavour in a really nice way :))

I have a business suggestion for you. How about opening up a second Mei Leaf shop in Castle Valley, Utah. I think you'd do really well in this village of 300 residents only 5 hours from a major city. Well, at least you'd have me.

Fantastic video. It's this natural interest in experimenting and understanding how tea works on every level and the overall passion for tea that comes through in all your videos that made me order samples of pretty much every non-blended tea you still had in stock and a bit more of the ones I figured I'd like. I feel like I'll be buying tea from you a lot in the future :) It's probably only a matter of time before you try growing your own tea in a greenhouse in London :D

I just received the house roasted one and I can say I am in looooooove, very smooth and smell of it reminds of something in my childhood, a perfume or something . I still have the previous batch and I am planning to do a comparison soon. BUT I can say I already love the house roasted more !

Great! good on you for experimenting. I ordered tea seeds so I could play around with growing and drying. I don't expect much but I figure it's a good way to really understand. :) Hopefully, one day I'll get to roasting.

Fascinating video! I've considered making Hojicha, but I believe you need a special clay pot with a side handle for that.

You can certainly try in an oven! Start with a handful and if it works then roast your batch.

I really love your channel and have been following you since a few weeks now. Today a colleague told me that I should try Lapsang Souchong and the first thing I did was go to your channel to see what it is and what you think about it. I just went to the tea store and the shop sold me 20 grams to try it. The smell of the leaves is very smoky. I decided to brew it very light (only a coffeespoon of tea leaves for 1 cup) and I'm happy that I did. The taste is a mix of so many flavors. First smoky with a sweet aftertaste, but also a hint of flowers and another taste I can't describe. I don't hate it, but I'm not a fan. I'll try to make it stronger next time and see if I like it better strong. Otherwise, I'll just give my leftovers to my colleague :-)

i would really like you guys to Do a video about Umami. I had a tea party with my friends and started to diskuss this flavour and it was really hard to make them understand what its like. I Think I have understood because of all my japanese tea drinking. but Im not totally sure!

Try roasting it if it tastes too green.

Yea, it was a little too bitter. Also the colour of the leaves were also green. So I think the tea is still "young". Would self roasting affect the tea in a "bad" way? Since it's not natural fermentation.

WongFeiHung1847 there is a trend to sell Duck Shit too raw and green in my opinion so I would try roasting a handful and you may prefer the taste.

Jake Gardenhire lol you know there is no duck poo in the tea the farmer just named it that to make other farmers to not want to try to find out their secret but maybe they could have used duck poop as fertelizer (I dont belive they do though)

The shades of Earl Grey 😄 So many similarities with coffee! Gong Fu tea is like Espresso. Home roasting of coffee is also spreading.

How is it similar? Coffee beans can only be used once when making espresso, a batch of tea can be infused up to 20 times. Espresso is also very strong and you drink it in tiny amounts, while tea is much more mellow and during a typical gong fu session you can easily drink more than a litre of tea. Then there's the fact that tea is often accompanied by what is sometimes a ritual practice or meditation... Other than them both being hot liquids, I really don't see many similarities :)

First and most important - you brew always a fresh and small amount and not a large pot! Other similarities between tea and coffee... There are countless varieties of plants to choose from. Countless variables to tweak during manufacturing and brewing. A lot of different ways to brew coffee or tea. Tea, coffee and wine have many complex flavors. Labs have so far identified 1200 essential oils in coffee beans (more than in wine) and a lot is still unknown. Tea is even more complex with an estimated amount of 30000 chemical components! (The chemists were surprised that tea is the most complex substance that were ever examined!) And the espresso fanatics have their ritual practice too. Just not a universal ritual that all are using. I see a lot of similarities between tea, coffee and wine but yes - only tea can be infused more than once! 😉

True, but if you look at it in this way, then coffee is not any more comparable to tea as it is to wine, beer, cheese... They are all very similar among themselves, yet you have thousands of different varieties.

Rok Sraka If you want to explain Gong Fu tea to somebody a short methapore is "the espresso of tea". Just a fresh and fast brewed cup instead of a slow drip brewed large pot. Everybody knows espresso and they want to hear more.
