This is 40+ years of constant improvement and attention to detail. We venerate the Jiro's of the world for their dedication, but this guy is literally farm to table, taking care of every part of the process including what his goats eat, butchering, prep, etc. It's great to see a showcase of guys like this.

It's been done for over 500yrs before modern times. The Aztec & Mayan been doing this method of barbacoba with forest animals at the time before the Spanish arrived.

its chefs like Gonzalo that keep me motivated. I am a chef by trade and in my younger days I was inspired by Michelin star chefs. You know, $300-600/person dinners, super fancy blah blah. Nowadays, these are my chefs. Down to earth, not pretentious and a REAL passion for what he is doing/cooking. Raising your own livestock for this is wild and amazing. It's a small moment but it makes me smile seeing traditions like these carried on by the next generation! What amazes me so much is the volume of food produced relative to the wastage. I don't think he wasted an ounce of this lambs throughout the process. The cuts and butchery were extremely basic so he wasn't looking for super clean fillets and segments meaning all the meat was used. And cooking with the offal and blood, that's old school flavour and delicious

Its very interesting how close Pancita is to Scottish haggis which is also the lungs heart and kidney but with added pearl barly and oats sometimes then cooked in the sheep's stomach. I would be very interested to try this Pancita.

The same principle is used in Oman🇴🇲 widely to make a traditional meat meal called "Shewa". Resulting meat is super tasty, but has to be eaten fresh and warm to best enjoy it.

My mom told me they tried to do this in Mexico a few years ago and nobody really knew what they were doing. They dug a whole and put the meat in with a bunch of water and they super sealed the lid. They left no room for the pressure to slowly leak out and then they heard a loud boom and they saw a giant hole in the roof of the gazebo and barbacoa flying everywhere lmao

I worked in a factory long ago where a Latino woman would sell her homemade food out of her trunk. My Latino/Mexican coworkers would ask me if I knew what was in it? I'd say no and they would all laugh. I to this day still do not know what was in that food. What I do know is that that woman made the BEST DAMN HOMEMADE LATIN/Spanish food EVER! I imagine she probably didn't waste any part of whatever animal she was cooking with either. I hope she's doing okay. That factory shut down a long time ago.

I've been to this spot and gotta say is one of the best birrias I have tried in my life. The only issue is that sometimes when you want to order in advance, it may already be sold out for a couple of weeks.

It's called barbacoa because it's made out of sheep/ lamb meat. Birria is made out of goat meat it's different.

Hardworking people, filled with gratitude. It is kinda sad when traditions aren't kept in time, with regards to changes in life etc. Food looks amazing at the end! Also nice, they somewhat wrap the meats with leaves first inside those plastics.
