I think this is one of the most educational videos of frying chicken I've seen. The 3 flours (which I have done for years), foam to eggs, slow drop into hot oil, cutting a whole chicken. Quite a few good techniques here!!.

@@evilcanofdrpepper "all purpose". In the US, it is a flour that does not have a high gluten content like bread flour, and it does not have sodium bicarbonate (baking soda) so it doesn't self-rise.

Then why not just say all purpose? AP is 2 syllables and all purpose is 3 but 99% of people know what all purpose flour is and AP sounds like something special when added in with rice flour. She is saving one second at the cost of clarity, using jargon is never appropriate for a general audience unless explicitly explained within said exposition. Also the can of Dr Pepper I bought just sits on a shelf maniacally laughing and mumbling about how it is going to take over the world by inducing diabetes in everyone after taking controll of the insulin factories... It's evil.

@@evilcanofdrpepper I agree with you. but I think it's a natural thing that everyone does in their life. especially coworkers, they use acronyms that customers have no idea what they are talking about that companies use internally. Most people just do it naturally, not to make their speach faster.

Would have been really nice if the camera man/woma would have realized, that the lady just showed where the insition slices are made at the collar bone and turned the camera around, so we can actually see it ....

You cut on the outside of the wish bone in order to separate the meat from the bone and it will pop out. Same thing for a Thanksgiving turkey.

Crispy Crunchy Chicken Tenders Recipe: Yield: 10 pieces Prep time: 20mins Cool time: 15mins Ingredients: 10 Chicken tenders Canola oil 3 cups buttermilk 5 thyme sprigs For the Shatter Batter: 3 cups soda water + more if necessary 2 cups all purpose flour 1 cup rice flour 1 cup cornstarch 1 tablespoon baking powder ½ tablespoon baking soda 1 teaspoon kosher salt 1 teaspoon onion powder 1 teaspoon garlic powder ½ teaspoon cayenne pepper ½ teaspoon paprika ½ teaspoon mustard powder ½ teaspoon black pepper 4 organic large egg whites 1 teaspoon sugar Preparation: Step 1: In a large mixing bowl, add buttermilk, salt, sugar and marinate chicken tenders in buttermilk brine (for about 25 minutes up to 24 hours). Step 2: In a large mixing bowl, sift AP flour, rice flour and cornstarch. Mix briefly. Step 3: Add baking powder, baking soda, salt, onion powder, garlic powder, cayenne, paprika, mustard powder and black pepper. Whisk together. Step 4: Add soda water and mix briefly. Step 5: In a separate medium mixing bowl, add egg whites and whisk until light and airy. Step 6: Fold egg whites into a larger mixing bowl with shatter batter ingredients. Do not over mix. Step 7: In a separate medium mixing bowl, add 2.5 cups AP flour. Step 8: In a deep skillet, add canola oil. Heat to 350f degrees. Step 9: Once oil is heated, add 1 TSP (or small spoonful) of oil blend to shatter batter and mix gently. Step 10: Dust chicken tenders in flour, then dip into shatter batter. Step 11: Fry for 4-5 minutes or until chicken is thoroughly cooked. Step 12: Rest for 3-4 minutes. Step 13: Take rested chicken tenders and fry for 1-2 additional minutes at 425 degrees. Step 14: Season w fine salt.

I did this recipe this evening with all of the ingredients except for the rice flour. I halved the recipe but still put in a 12 oz. can of Budweiser in place of the soda water and it was too much; the batter was a bit thin. Not a show stopper but I'll correct that next time. The biggest challenge was keeping the oil at the proper temps for Cook1 and Cook2. They were delicious but not as crunchy as they could have been. It is a process. Don't give up if it doesn't work out perfectly the first time!

You should watch Dave Arnold, J Kenji Lopez Alt (and most SeriousEats videos), Heston Blumenthal, America's Test Kitchen, or even the Epicurious 4 levels, from Amateur to Food Scientist series. I rarely watch a cooking show unless they can explain the science behind the technique.

I whole heartedly agree! I have put onto my shopping list the ingredients I do not have so I can try this. I liked the disclosure of the oil temp settings, and the double fry reminded me of doing french fries!

Its the tenderloin, but i think its safe to say a lot of fastfood tendies include cut up breast as well.

sometimes they are, its cheaper, the tenders are a small muscles and only 2 of them so its cheaper to cut up breast.

I like how she explains why she does things a certain way. It especially helps those of us who don’t understand technical cooking. She is enthusiastic and presents clearly. She’s one of my favorite KZfaq chefs to follow. There are plenty of cooks but she’s a chef. Someone like me is merely a hack 😂

Wow! I want to try that batter, but I want to try it on cod. Any tweaks that you’d suggest I make to make it fish friendly, or just sub out the protein get to frying?

I asked someone else what they would try in the place of the thyme stems and after thinking about it for a moment I would get some Tony Cacheries to replace the cayenne, and Old Bay to replace the thyme. Good eats?
