Another youtuber said first coat the meat with soda and then wash the powder off completely before marinating. In short, she said do not add soda to marinating sauces. Otherwise there would be a metallic aftertaste.

I learned the hard way. I tried the baking soda trick but didn't wash it after. It tasted really weird. I couldn't eat it.

Just don’t add too much baking soda or it’ll make the meat rubbery. You only really need a tiny amount.

Don’t you need to wash the baking soda off before marinating? Thought you just use water 2 parts water 1 part baking soda and let it sit for 30 mins or so then wash it off then marinade. Baking soda will leave a bitter taste

This is a common way to tenderize meat but I wouldn't suggest using it as it gives the finished dish an unpleasant and unnatural taste. Use starch instead if you don't mind the carb, or use cooking wine if carb is a concern.

Oh wow... I didnt know about baking soda, I usually just use either honey or onion to tenderize meat, and it works as seasoning too 🤔 Gotta try with soda sometime

@@geltermachona very simple just marinade the meat using these ingredients, you can also use kiwi and pineapples they also work as tenderizer. It all just depends on the flavor profile you want, oh and if u decide to use onion, make sure you squeeze it a bit so it lets the juice out, same for pineapple and kiwi, since its the juice that does its magic there ☺️

Can also use it cut down on the cooking time when you brown onions. Just be careful in how much you add.

with meat that you would typically stew, its toughness will go away with the low and slow cooking process while for stir frying it should be more of a flash in the pan type thing. also for velveting, it tenderizes the surface of the meat which is good for a thin piece of meat, but not as effective for a larger stew cut

Why would you do that? For stews, the meat will break down after a few hours. If you don't have a few hours, you can use a pressure cooker to speed up the time.

I have been using buldak packages because its got the seasoning packet for the oil and the sauce packet for the meat.

I wish i knew Cantonese. I speak mandarin and speak my provinces dialet but Cantonese didn't really stick to me. i love southern food because i try to avoid spicy northern food sometimes.

This is how I do with my veggies as well. Idk what is their name in english, but everytime I boil 'daun pepaya', I will add 1tbs of baking powder too to save time!

If the meet is already grinded, you don't need the baking soda. Just add the rest of ingredients, corn starch, soy sauce, water and oil, then you patties will be tender

Baking soda is the most important part of this, almost everything else can be skipped or changed, but the baking soda has to stay. I would recommend you add some to any meat marinade, what it does for meat is nothing short of amazing.

I tenderize pork choy or spare ribs with baking soda and a little water for about 20 min. Then rinse with cold water before I marinate with sauces. I don't use baking soda on anything else.
