How Chinese Cook Their New Years Food Abroad (Chinese Living Abroad Beef Dumplings + Chili Dip)

A rare and wonderful occasion to have traditional beef dumplings made from scratch! And Li has blessed me with this (blessed us with this!), letting me make a video about it here for you today.
Super fun times in Thailand for this beautiful Chinese teacher living abroad (and again, I got most of the benefit today as she was look my for ‘someone’ to cook for while living abroad, all her family back home in China).
The Spring Festival is the most special holiday for the entire year, the time when Chinese will make sure to spend time with family, offending traveling far and wide to do so. This year, I’m lucky to spend this week with Li, and we’re both looking forward to the next Chinese New Year IN China...
Until then, we have beef dumplings, we have each other, and we have you to welcome to this home-cooked Chinese food video today.

A very popular food vendor in Charlotte, NC is from Chendgu, China. She uses many of her family recipes for preparing food for her stall. She is best known for her dumplings and noodle dishes. She uses lots of Sichuan peppercorns and her dishes are spicy, numbing and delicious. Her stall name is “The Dumpling Lady”....her personal story is cool and she’s gained quite a huge following of local foodies.

Oh wow! Ian, right on! thank you for noticing, yes it is a fairly simple food that really takes time. BUT, its worth it, the difference in even the dumpling skin on its own is huge! (between the store bought ones, and making them like this)

So good Shella, and.... very, very accurate. Haha :). Its so amazing how filling these dumplings are, honestly when she makes the normal ones for me ("normal" being the lotus root and/or Chinese chives, some photos Ive sent you over the past 2 years), those are not homemade dough. These ones today, I dont think I could even eat half as many! They are wonderfully heavy, she did a GREAT job. It was funny, even she was impressed with how good the blend was for the ingredients. (hahaha "wish I got excited going for celery," hahahahaha)

Thailand has 3 official new year days, this Chinese one, Thai New Year (Songkran), and the international one on Jan. 1st. Besides an exception for Chinese tourists, Chinese in Thailand were never been differentiated, because basically no less than 30% of the whole Thai citizens have some or more Hokkien/Hainan/Teochew/Canton/Hakka lineage.

So good! Sonexay man, again killin it with the FLAVOR included in those comments of yours :). I can tell you I was totally blown away the first time (5 years ago?) I saw Li pour hot oil over something... I actually thought it was some special pepper in the dip, and that it was just reacting with the hot water. Haha :). I did not take a linguistics class previously, but I can see from just this one example that it would literally be impossible to speak Thai UNLESS you had taken (at least 1!) linguistics classes :) :) ). BRO! Haha, yeah that was some style, wow. But it felt great!! That day in China I think was about 5C? Maybe 8C? So we were in some serious need of those piping dumplings. What a spot (happy you watched to the end man, actually that town was my favorite yet in all the places in China that Ive seen (maybe 12 towns I have visited so far) - LiJiang is just amazing.
