Typically when I’m frying an egg I use a neutral oil just like you did except once the bottom is fried I use a spoon to splash a bit of hot oil on the top of the egg instead of covering for a minute. That’s how I ensure I get that perfectly fried egg the whole way round and avoid any uncooked egg on the top while keeping that gooey yolk. Hope this helps!

Start in a cold pan with some olive oil, turning the heat on after putting the egg in the pan. Once the whites are about halfway cooked I take my spatula and spread the bottom apart just a little bit near the yolk, causing the concentrated whites to break and pour down, cooking the thickest part more easily. Once the whites are mostly cooked I flip for like 10 seconds to finish cooking the whites then I plate. My goal is to leave as much runny yolk as possible with fully cooked whites.
