4 years later I still go back and watch these, max was such and still is such a comforting presence within the Hercules channel even though he doesn't work for you guys anymore! I think that depending on which state they're in there might be a legal requirement for them to say it because if somebody hits their head as an employee they could file a lawsuit. I'm just surprised that every time they lift that pot off to carry it around that they don't yellow hot pot, because I worked in a restaurant for a long time and every time you move something you had to announce it if it was hot enough to burn somebody because people sometimes sneak behind you or move around or they're not paying attention so you have to get their attention.

I love Max, so respectful and does anything to help Steve and Terry out. I also love seeing Steve having the help he needed for so long that he doesn’t have to do ALL that hard work by himself anymore. Max is a great asset to Steve and Terry! Just wanted to say, while on my Hercules Candy binge, that the "don't think" technique you guys mention for creams and the ribbon candy at one point, is because the act of dropping creams and twisting ribbon candy is part of procedural memory. So when you think about what you're doing, it messes up your brain from retrieving the information on how to do it!

Love the cornstarch method instead of using plastic. Seems more environmentally friendly and natural. Plus, it's so satisfying to watch!!!

Unless they recycle the cornstarch then I imagine with transport, refining and the bag manufacturing for the cornstarch, it would get to a point that it's more friendly to use a plastic tray. Though it depends on how they get their starch.

Craig does an amazing job putting these videos out and advertising which IS him contributing to the family business. Not everyone is cut out for a certain role in their families. Mary Mosqueda Hi Mary Mosquera! I am not trying to be mean, but I wish he would help open doors, help turn on and off lights, run and pick up his mom when she fell but he didn’t. He just stood there and looked at her. That was sad to see then Steve came running in ( which Craig should of done and helped her up to make sure she was ok). I don’t know what goes on behind doors but only on what I see. Yes he does great video taping everything and I know that has helped their business but I also clearly see the difference between him and Max. Max is very respectful, willing to learn how to make and do anything and everything Steve and Terry needs. Max is a great asset to Steve and Terry. But there are a lot of things Craig can do better to help his mom and dad out and most of them are so easy. In all reality you’d think Craig would of learned all this and would already know how to do and make everything while growing up there but he really doesn’t know how to do much at all. Are you saying you’d be the same way because that’s what it’s sounding like. I’m the hard worker, and would do anything to help make my parents life easier especially if they’ve been working so hard to make the company bigger. I’d be the one carrying all the heavy stuff and helped open doors especially when my mother is carrying stuff, turning on and off lights for her. My brothers and I would of worked our butts off and maybe, just maybe if him and Cara worked a lot harder helping their parents build their business, it would of and could of been in a bigger building like they are now in the ten years Steve and Terry were hoping for instead of forty years later. Steve and Terry are very hard and dedicated workers and Max is following in their footsteps. He is so respectful, does exactly what he is told, always in a great mood and very fast in what he does. Craig and Cara are both nice kids but can you imagine if they both stepped up to the plate years ago where the company would of been by now? and while Steve and Max are with the chocolate machine, Craig could be getting more creams ready for Steve so he can keep covering with chocolate and Max takes care of the other end. Wouldn’t that be so awesome? Keep the system going? But I do love his videos don’t get me wrong and we wouldn’t be able to see everything being done if it wasn’t for him but there are tri-pods so we can see him cover chips, clean creams, wash molds, putting candy in the little papers, breaking up the chocolate, pouring the cream into the molds, making the molds, ribbon candy, hard candy, ect. Have you seen how fast Max is pouring the cream in the molds? Craig should be the same way already. Just putting a lot more effort to help his mom and dad out. I know I’d want to see my son help keeping the system going to keep the upstairs full of candy. And I’m not a bad or mean person! I’m just so happy for Steve and Terry making their and the grandparents, great grandparents dreams come true. Hope this helps you understand more. Have a nice evening!

Sharon Zagrodney here is a good example where Craig could of been cleaning more creams and getting them ready for Max to keep the rhythm going. You really should use a tri pod more Craig so that you can help out more. It’d be nice to see you in action with Max and your dad!

Remember watching Lucy and Ethel working at the conveyor belt in the candy factory and it all got backed up - - - while pockets got filled - - - and mouths got filled and cheeks poked out - - - and finally everything went to hell!! SO funny - hilarious - and anxiety producing!

Antoinette Marlow I think many people will be too young to remember the show I Love Lucy, from the 50’s but yes, I did grow up on the reruns in the mid 70’s. I loved the chocolate episode. I also remember the Laverne and Shirley show where Laverne gets drunk on chocolates filled with rum while at work. Both were great shows.

It’s the corn syrup that resists recrystallization (graininess). The water makes the sugar easier to melt. Sugar can be dry caramelized but it needs a little water to pause at the soft ball stage instead of going straight to caramel. Creaming causes the crystals that will form as it cools to be small, which is creamy. Corn syrup is an invert sugar. Invertase can also be used to invert a sugar or you can heat a sugar syrup and add a bit of (lemon juice) to make your own at home.

25lb bag isn’t too bad. I remember when I was a pizza cook in my teens and making dough in the morning and dumping 50lb bags of flour into the mixing bowl like it was nothing. And I probably a 130lbs at best. Oh to have a young strong back again.

@@scotty3034 even 50lbs isnt bad at all. I have to tack feed for a farm once in a wile and i carry 2 50 lbs bags of it. And im about 130-135 lol. A real killer is putting them over your shoulder and doing a fire mans carry about 150 yards.

Love how the place is so clean, looks chaotic in places but they know where everything is, it is really very well organized. I wonder how they made so much in old place ? Max is a quick learner ! For some reason I was not getting the vlogs? So I’m going along the ones I have not seen before but I think they are out of order! It is amazing to see them make the candy ! I’m sure there are lots of bloopers! LOL. But it seems they all work together ! And get along well, a great workspace !

So cute seeing Max so confident and able in the Candy doings...lol he can now teach Craig how in the Candy doings...lol You 2 talking about why people watch what you think are bland/boring things made me think as to why I was watching a 1hr 19min video on Mango creams, when mango would have to be the 2nd worst flavour (1st is licorice). I watch for the bants, the witty puns and Mum's inner voice or course. You all have similar humour to me and I love watching channels that can have fun and work at the same time. (I watch for super cute Max and silver fox Steve too!)

Just a little tip: try freeze dried fruits if you want to use them as a real fruit sprinkle. The break down really well.

I was thinking the same thing, but freeze dried mango is very fibrous and becomes soggy from moisture in the air really quickly, so it wouldn't keep very well.

I absolutely love how the use the old machine for making indentations in the corn flour. And the old funnel with the stick to portion the mangocream into the indentations. Ingenious. And not plastic like modern "easy pour" (but probably "more difficult to clean") funnels.

I’ve always had sleep problems too. So I have three things. 1. These really help with my insomnia, thank you. The casual conversation and candy really helps. 2. I used to stay up till 3 and get up at 6-6.30* (Still do 😅) bout because of these it’s gotten down to about 2ish 3. These are really cool and I love to see the way things are made

May I suggest that you try using Harvel's 8 1/2" titanium serrated scissors for cutting the mango strips? They are super sharp and the finely serrated edges might help with both cutting and holding the mango pieces in place while you cut them. :) Love your videos, and love the family dynamics that undergird each and every one. Well done.

You guys should install a kick panel on the bottom of all the swinging doors on both sides of the door too so you dont end up ruining the wood on the doors and the kick panel will hold up longer and is stronger than just the door itself.

I like to call my grandson over to me and ask him if he smells smoke. He like most people, raises his nose and sniffs real deep . His demeanor changes from curious assistant to perturbed lineage denier. He always says "grandpa!" and I think "so gullible, get him everytime" .
