In this video I demonstrate how to make a two pound recipe of dough and bake into canapé bread molds.

I baked rye bread dough for this. Recipe below.
How to Bake bread in canapé tubes
Choose your two pound recipe (I made rye in video) , put ingredients into bread pan and choose Dough course.
After dough is complete, take out if bread pan. Weigh the dough and then divide into three equal parts. Roll into ropes that are about 9”x1 1/2” .
Spray the inside of the three tubes and the lids with nonstick spray. Put the ropes of dough on a parchment lined jelly roll pan or cookie sheet with lips.
Only put one end cap on.
Let rise in slightly warmed oven for 40 min.
Take the pan of tubes out of oven and set it to bake at 400 degrees.
If any dough is hanging out of open side just push it in gently and put the second end cap on.
When oven is heated, bake at 400 degrees for 10 minutes then at 375 for 30 minutes. Bread should slide right out if tubes but if not, clear the edges a bit from the edges then shake it out.
Cool, slice.
Serve as part of a charcuterie board, or with cheese and salami. Serve with chopped liver or even make tiny peanut butter sandwiches for the kids. Use for sliders, mini grilled cheese, etc. Lots of possibilities!!
Ellen’s Rye Bread
(2 pound) loaf

Make in a 2 pound capacity bread machine on dough course.
1 1/3 cups (287 grams) water
1 ½ tablespoons (22 grams) grape seed oil
1 tablespoon packed (10 grams)brown sugar
2 (12 grams)teaspoons salt
1 cup (141 grams) dark rye flour
3 cups (404 grams) bread flour
Fistful of caraway seeds (There can’t be too many caraway seeds for me!)
2 teaspoons (6 grams) SAF instant yeast (red and white package)
Ingredients for just before baking,
1 egg to make egg wash
Caraway seeds and cornmeal to sprinkle on egg wash
Set bread machine on basic or white or use dough cycle.
Put ingredients in according to your bread machine’s directions.
Use basic
Set for dough cycle. My machine is liquids, flours, sugar,salt, yeast. I sprinkle part of the seeds on each side but it probably doesn’t matter. I make a well for the yeast away from sugar and salt and seeds.
Before dough is ready, prepare a 2 pound loaf pan. Take dough out when dough cycle is complete , and reshape on floured or slightly oiled board.
Spray nonstick spray in pan. Sprinkle with caraway seeds and a little bit of cornmeal. Put dough in pan of choice and let rise in a warm place for 45 minutes. (I turn on my oven for one minute at lowest temp, and turn it off and then put dough inside. I don’t cover it.)
When dough has risen, take it out of the oven. Preheat oven to 375 degrees. Gently brush top and sides of dough with 1 beaten egg + a bit of water. Sprinkle more caraway seeds first and then a tiny sprinkling of cornmeal. (If you do cornmeal first, the seeds will all fall off!) Bake for 35-40 minutes. Test with instant read thermometer until the middle of the loaf reaches 190-200 degrees. The crust should be nice and crispy! Freezes and toasts great!

Good vid! Exactly what I was looking for! My wife is making a charcuterie board for her thread & yarn club Valentine's Day brunch. She just ordered the exact same canape bread molds! Even the pictures on the box are the same... I'm the baker in the house so I wanted some instruction on how to bake in the molds - and here you are! I was considering using my favorite French bread recipe to fill the molds. It uses 6 cups of white bread flour and a lot of yeast to produce a much more open crumb than your rye. Maybe I need to re-think that part... How about just plain old Betty Crocker white bread...? Or a practice run next week! Or both! Thx for what you do. P.S. - Just looked at the YT play list and the top 4 videos on my feed all use those bread molds! Obviously those are the cheap and easy ones to buy!

Hi Matt, I loved reading your comment! Let me know what you end up doing! Do you like rye? I think that’s way better for cheese, salami, etc. To me, white is too bland for charcuterie, but that’s just my taste.

@@BreadMachineVideosWithEllenH Thx for the reply! I'll do an over night cold bulk fermentation on the white bread. I've gotten good results with that method. Time = flavor when baking yeast breads. Some of it will be brushed with garlic infused olive oil and made into crisps to serve with home-made hummus. I'll let you know how it goes.

Another great video, but this Wisconsin gal had to laugh at the way you pronounced Kaukauna. 🤣 I'm just wondering what else you could use the Canape Molds for, I hate to have something I might only use once or twice a year.

Hi Ellen May I know how to find out how much dough to put in each tube. I had tried putting two Regrucken/Almond Cake Loaf Pans (each of 4.74" x 12.25"x 2") together to make a tube shaped mold. I was told to put 2 lb dough in it. But it turned out that that was too much. Thanks!😊

I fill 3 of my canapé tubes with a two pound recipe. I haven’t used my Rehrucken pans in a long time, but I’m pretty sure I used a two pound recipe and it was fine. Why don’t you try a 1.5 pound recipe. I’ll give you my master butter dough recipe to try in next comment. It’s what I use for cinnamon rolls so that’s the video I’ll link you to.
