Overall guide feels good, but, IMO, while making a guide for newcomers to Chemex, Brodie should have used paper filter and explain its specifics. Newcomers for sure won’t start with cloth one. And won’t use it for a long long time

Clear and concise guide, thanks! We love our chemex, occasionally on a hot day we'd make ourself ice coffee with it. Just replace the 500ml of water with 200gr of ice cube and 300ml of hot water and you're set!

It was invented in the USA by a GERMAN CHEMIST NAMED PETER SCHLUMBOHM. And that cloth filter is made with ORGANIC COTTON IN TEXAS USA BY A COMPANY CALLED COFFESOCK.

This makes me want to pick up a Chemex to try out for myself and see what's different to my current go-to (V60) as far as flavor goes. But definitely - I'll get a larger one so nobody's going to complain about brewing fresh coffee in my house! 😂

@@Assenayo Great! I'm using between 26 and 28 (even 31 in bigger recipes) and had good results too. I was expecting the clics to get another opinion because there are too few recipes with comandante and even less with a proper number of clics (most of the videos are unboxing or reviews)

@@Assenayo please never wash it with detergent. just put it in a boiling water for about 10 minutes.

great video, nice explain, inly thing is really wonder is no wetting the filter? I spend normaly nearly as much water on washing the paper filter out with water as using for the brew? btw. can any barista say something about the "cloth filter" vs paper ? i saw james latest video was about cloth filter but never saw them on chemex. cool!

Most people forget it is a batch brewer not a single cup brewer so it has to be compared with either a large press pot or drip machine.

Just to add. About tips at 5:20, wouldn't lifting up the filter not work with a paper filter? Because Brodie used cloth filter. Meanwhile paper has thick tri-fold on one side that is being held by the coffee bed, water resistance, and stickiness to the glass around. Lifting it would mess it up, I think. The solution from James Hoffman was to insert chopstick to the spout air gap, or I learned from some commenters you can fold the paper itself in a way to make an excess ridge / crease that later can rest exactly on the gap therefore it wouldn't clog / stall the brew. It's possible even when it's wet because normal chemex paper is already thicker than general v60 paper, let alone using the 3 ply part.

A straw between the filter and glass will vent the Chemex preventing back pressure.

How do you wash your filters? Don’t they stain your clothes in the washer? With just water in the sink? Don’t you get a soapy taste in the cloth? Just curious. Most ppl have paper. Some have metal cone (from Coava) and even fewer have cloth. Every filter has different flavor. This is for cloth filters not cone or paper. Regardless very good video and and you killed it man with your process 👊🏽

I really like the way that you do the Chemex and everything but I think that the person who do every video keeps me watching the video cause the ambient of the place, the way to talk, music, etc.... But I really love this video!!

Using chopstick between glass and filter might be more convenient to avoid a vacuum.

If you live in a soft water area, you need to increase the water for the bloom phase to 3x the mass of coffee.

If it's one cup with 17grams of coffee would it be 300ml water and still 3 minutes or less time?

Pretty much the same procedure. I have a Chemex and was looking around for "Brewing with a Chemex" videos. Didn't find much (this one hadn't been made yet) so used James Hoffman's V60 method which is the same as in this video.

If you are using the brown square filters, you REALLY have to pre-rinse those things, and put through ALOT of hot water; as they will tend to leach bad tasting paper taste.

I use a chemex filter in a V60 because I love the filter paper. Using a cloth filter in a chemex is just inconvenient and pointless.

Won't a cloth filter allow those oils to more easily to pass through, thus nullifying the one thing the Chemex does well?

Yes, exactly. I don't know why the chemex is so poorly reviewed on YT. A lot of people miss the point: the filter.

Best advice for using Chemex is leave it in the china cabinet right in the middle so everyone can see it.

It's a Helor 101 for sure. Grind quality is supposed to be fantastic but its stepless and it's not all that well marked compared to a Kinu or a Lido which could make repeatability difficult.

You mentioned a vacuum being created.... somehow that doesn't make sense to me. Wouldn't it be positive pressure built up inside the Chemex rather than negative?

@@rehannoor4961 That right there is subjective. A quick google search can show you a myriad of temperature preferences in drinking coffee. Just do a quick research and you'll see the preheating is highly encourage even when it comes to specialty coffee. Heck even this channel encourages it. Iirc, they preheat their carafe in their V60 guide. It's just this "special" guest that failed to do so. With how haphazard everything was set-up and the fact the he didn't even use chemex filters (ya know, the actual thing that make chemex coffee). I'd take his guide with a grain of salt and doubt.

@@rooky3526 I dont need a quick research for that 😉, even james hoffmann and scott rao didnt preheat their dripper and use cold tap water to rinse their filter. You'd also be surprised how us Asian brew our coffee.

Products like Hario's V60 Drip Decanter will always be more superior. Chemex has way too many functional flaws with poor designs which makes it nothing more than a decorative pretty garbage on your shelf.

@@michaellmikeyymike you can buy a Chemex bundled with a metal filter cone too. Chemex is a brand much like AeroPress. An AeroPress doesn't stop being an AeroPress when you use a metal filter or even a Prismo. Same goes for the Chemex. I won't dispute the thick paper filter gives a distinctive clean taste but putting a different filter doesn't change the brand name of the brewer.

@@Assenayo disagree 100% the filter IS the reason(also it's a batch brewer) to use Chemex. THAT is what makes it different.If you use a metal filter you might as well use a Hario vessel or a large mason jar. Aeropress i.e.quick extraction with air doesnt change using metal filter.
