Pretty good explanation but you didn't actually cover what the kits produce. Off grid over 20 years now and my system is only 800 watts. That runs a 12 volt OD water pump, led lights, laptop, wifi router, swamp cooler, small cooking appliances, microwave, and recharges all my gadgets and ebike. The key is to only use heavy loads in the day time when the sun is shining after your batteries are full and not at night when you are only drawing power from your batteries. If people will do that you can use a smaller system. At the prices of solar panels today I would oversize the system to double what you expect to use and then on cloudy days or in winter you will have enough solar to recharge your batts.

the next issue is, what happens when you get zero solar gain for several days in a row or 12 days in a row like i've experienced this year, twice. you either run out of power or use a generator. I took my lithium battery to the neighbors house to charge them, i would never of even considered it if they were gel or lead acid then then the grid went down and the sun was out, the neighbor came and used out power

Yup, no matter how many solar panels you have you need a generator to get through those cloudy periods sometimes - great that you and your neighbour were able to help each other out though!
