Our primary goal on the homestead is to grow all of our veggies, fruit, and meat. Today we reached a GREAT goal by officially putting up more than 1 year of canned green beans!!!

We started as a small urban homestead in Gilbert, AZ and after the city grew up around us, decided it was time leave corporate America and take a big leap of faith by moving our family to the Missouri Ozarks.

In March 2003, my 83 year old mother asked my younger brother and me to plant a garden and grow her some green beans for canning. So we did. In May, we learned she had Acute Myeloid Leukemia and only had a couple of months to live. In the week leading up to July 4th, be picked 300+ pounds of green beans and with the help of mom and 10 other members of the family we broke them up. Then on July 4th, at 6 AM, my brother and I started loading the quart mason jars ad using 6 pressure canners and 3 turkey burners, canned 154 quarts of green beans in 6 hours. We ate some that night and she loved them. She died 18 days later.

That is such a sad, yet heartwarming story of love of family. I’m crying of course. My mom canned up until she lost that ability to dementia. We sometimes don’t appreciate how wonderful our parents are until we face our loss. You and your brother gave your mom the gift of love.

My grandfather, who passed this January at 92, canned 250 quarts of beans one year (with some harvesting help from my sister, 2 cousins and me). I inherited all his canning equipment, right on time I must say, and have been doing my best to carry on his tradition of food preservation. His canner has wooden handles and it warms my heart to think about how many quarts of food came out of it. I miss him but every time I look at my shelves full of preserves I know he’s still with me.

years ago, my best year at growing green beans, my wife canned 65 quarts. it took us years to eat them. but properly canned, the quality of the bean will last for at least 6 or 7 years. good luck. You guys are an inspiration to the homesteading and homegrown world. Thanks for your work.

@Lynn Lamont Kentucky Wonder aka Old Homestead green beans are multi purpose. You can eat them, can them, and dry them to use as dried beans. I prefer them as dry to cook with. The skins are brown and you need to bring them to a boil, take off and drain, rinse, and then bring up to boil a couple times. It also has the way of rinsing off the gas from the beans. When cooked, the beans are a wonderful creamy texture. The best beans i have ever cooked in bean soups. They never are gritty like the navy can be.

Exactly! We try to grow our garden. Green beans to very well, but we have woodland critters that help themselves to the rest of our garden. It's a bummer. All that hard work, but the critters do get full bellies😕 We were told to plant enough for them and the family so this year we're going to try it again. Never give up.

Roundmot this is my first year growing a garden and it was a challenge, the rewards pays off. I too have a lot of critters and pets running off with my food but you just have to find a resolution that will work for you. Don't give upb/c it pays off in the end.

Canning beans bring back memories with my Grandparents. Grandpa woke at 4am every day until his last days. He was 89 years old when he planted his last garden and grandma canned so the had enough veggies through the winter.

We always wipe off the rim with a clean cloth just before adding the lid and ring.

A great thing to do while you are cleaning or working outside, you can self teach yourself a foreign language, literature, history, etc. Get books on tape! This also helps to keep you from talking to yourself. As always, Chris Bitonti

So nice to see your girls in the videos!! Love your videos, you are inspiring, and we are going to try the landscape fabric next year, for 29 years we have tried to keep ahead of the weeds and are still losing LOL. Canned 26 pints of green beans yesterday. God bless!!

I just watched your video on canning dried beans. I soak my dried bean overnight or quick soak, usually try to do overnight. Then I cook then in my pressure cooker with onion, garlic, bacon that was cooked in the pot first, salt and pepper for about 10 to 15 minutes depending on quantity I’m cooking. The quick release the pressure and thicken with cold water and cornstarch. My husband who has eaten pinto beans his entire life says they are the best beans ever. No need to can them, dried beans store very well long term as I put them in my vacuum seal canisters and vacuum all the air out. I’m telling you girl that vacuum sealer was an investment that has paid for itself many times over. I bought my fist one years ago and gave it to my friend when we moved to VT. Went to a yard sale and found the newest model for sale for $10.00!! The person who had bought it apparently put the drip tray in backwards and never used it. Brand new still had the instructions and labels on it. Still have it, it is now 8 years old and I am going to get another one. It will be the best money you ever spend for food preservation. The canisters are the bomb!! They do have to have the edge spotless or they won’t seal! Wipe your edge with a damp cloth and then a dry paper towel. I’ve tried all the tricks. I had a couple of my canisters crack on the bottom and I think it was my fault for vacuuming the too long but when I called they sent me out replacements for free and there is also a special vacuum lid for mason jars! I have found them at thrift stores too. I pray God blessings on you and you family and homestead!!

You have had an absolutely beautiful and abundant harvest this year! I wish I could say the same. The heat and humidity on the coast is almost unbearable. I had a good harvest in the Spring before the summer temps hit us. Enjoy watching you videos!

Thank you so much for this video. We doubled the size of our garden this year. I invested in a pressure canner but have never used one before. This was really helpful. In the past I have always put our green beans in the freezer from the garden, but they just do not have the right flavor frozen.This year I am going to can them. I also do have the Ball canning and preserving book as well.

I got the same presto pressure canner with the dial, this video has helped me feel so much more comfortable canning for my family ❤ I have done water bath canning but I am looking forward to pressure canning!

I love doing double canning. Hearing those double jiggles is an awesome sound! Wonderful feast for your family. We often have the same meal. Right now we are down to our last two quart jars of vension tho. Hope to replace it during the hunting season. Green beans were the first thing I learned to can 40 years ago. This week we pressured canned 125 quarts of tomato juice.
