How To Can Roasted Peppers - Preserve Peppers

Join Mama Hoss in the kitchen! Tonight we are canning roasted peppers! In this video, Sheila uses many different varieties of peppers, mostly sweet but she also used some that are mild in heat. You can use hot peppers in this recipe as well. Hoss isn't a fan of the heat so we have to keep it sweet to mild on the Scoville scale!
Sheila shows us how to can both cored and whole peppers! You need a pressure canner when canning peppers, the extreme heat is required so it will kill the bacteria that can cause serious issues!

I like to add a jar of these when I do pot roast or mix in my meat loaf. Lots of flavor.

I roast all of mine in the oven. Tomatoes, onions, garlic, various herbs. Then I put into blender and pour into a metal strainer. I use a spoon and rake back and forth across the bottom of the strainer until only the seeds and skins are left in the strainer. Much easier.

I just did this for the first time to make my own “green chilies” with my Anaheim peppers. Yum thanks for sharing. If I get enough sweet red ones, I think I’ll try these.

Thank you Mrs Sheila , I Truly appreciate this recipe , I usually Flash freeze all my peppers so they dont stick together on cookie sheets , then put in Gallon freezer bags , so they just come out , But with losing Electricity constantly here in Montgomery County , Texas like at least 1x every week or every 2 weeks , Im getting concerned , We have a Gas generator , but with the price of GAS THATS OUT , Looking into a solar Generator to keep our 2 deep freezers & Frig going incase we lose POWER FOR A LONG TIME .... Indeed, it is heartbreaking to lose a jar of goodies after you worked so hard on the peppers. Why do you remove the skins of the peppers? Can't you can them with the skin on? I just LOVE your videos about canning, what a wonderful channel!!! Thank you very much Mama Hoss!!!

Mrs. Hoss I wasn't aware that you showed canning and I am elated that you do. I would like to know is this something that you're going to continue doing because I am very interested in this process and I have no expertise in this process although I find it very necessary to learn. Is there any way that you could start showing different ways of canning preserving with the food hydrator Etc as I am so eager to learn how this is my first year really getting into gardening as I have been watching you and your husband. At this point I would most certainly not list myself as a gardener although I am trying and the more knowledge that I can gain the happier I am and if you're willing to teach this process I am willing to learn how. Do you have your own channel that you teach the process of preserving food? Either way I would really love to learn all that you're willing to teach thank you so much for what you have done this far and also Mr. Hoss, the two of you are most helpful and very kind people thank you for all that you do and teaching us how to garden and to survive off the land in which God has given us. Find a mentor and can a few times with them. My neighbor was this way and after helping her twice, she was off to the races on her own.

@@gardeningwithhoss Im the same way , So I freeze everything , but with losing power so much here in Texas , even last week , we r looking into a bluetti solar thingy , but really want to learn to pressure can , we have classes here in town , I need to sign up & go ....

My pressure gauge is in increments of 5. So I am guessing instead of 10 lbs I should go to the higher of 15? Would that be correct?

no, you should only use the recommend pressure. Mine is in increments of 5 also, but has marks between the 10 and 15.
