Nice ! Great looking grilled fish! I caught one nice fat pompano yesterday that I did filet. Grilled in on the wood fired cooker. Skin side down. Only salt and pepper. So good! Happy spring fishing brother!

I use the same duck fat spray as well! I love going to the Butcher Shoppe and grabbing their Wagyu Brisket burgers and then coating them in the duck fat and give them a coat of coarse sea salt....its 🔥!

@@SlotCityFishing Man, I loved it, I have to say, My Mom lives in NC, We had Thanksgiving during the Pandemic first year and I caught a 5 lb drum, we ate it, blackened, Great! I just was lucky, didn't know the best way to prepare it!

The way you crosshatched that Pompano reminds me of an Asian way of cooking I saw, but probably good for only certain fish, local knowledge is real. Love it Man!

Yea I don’t remember where I saw that technique. That drum was a tank dude but believe it or not I’ve caught much bigger.

Jessie, Another great video! Did you cook the Bonita? I'd love to fish with you but I'm in Melbourne and headed back to Buffalo at the end of this month.
