"Appetites" author Anthony Bourdain says beef tenderloin, the cut filet mignon comes from, isn't worth cooking. For a good steak, he uses cuts that don't have such an high price tag.

the piece they showed when he was talking about tenderloin looked brutal... the colour is more like pork. Im actually 90% sure they just showed a picture of a pork ribend with a bit of the centercut still attached...

Mike no that was definitely still part of the loin. I'm a 100% sure. I'm a butcher. Nothing about that piece of meat had a tenderloin on it. That was the boneless ribend of the pork loin

As much as I love ribeye I have found out that fresh cut Chuck steaks are stupid tasty. They are far from the most tender cut but the flavors you get from Chuck is indescribable like my mouth waters just from thinking of it. Chuck has the taste and smell of a roast but offers a side of prime rib and has the same marbling as ribeye never before seen it's great.

the best cut of steak is the one that taste best ...TO YOU,,,, Its subjective. Like Music. I thought for as short as this video is, he did a pretty good job of quickly explaining cuts. For those complaining ( its youtube, who could have seen that coming ! ) there are hundreds of more detailed videos out there if your looking for more info.

I cooked a bottom round steak that was tougher than a one eared alley cat the other day. It had a really nice flavor though. Got an incredible sear on it too. R.I.P. Tony...

Thanks for telling me after I bought my wife a filet mignon steak because I thought it would be the nicest since it was the priciest :(. Turns out, Ribeye is great... lots of juicy fat, super tasty.

I'll never touch a Filet. I love a skirt and flank steak. I am generally firm in the stewing cuts and slow cook cuts of the animal. But when I want a steak, it's a Ribeye, or Sirloin Cap and Filet never enters the conversation.

I don't understand. Where's the part where he explains how to choose the best cut of steak? He just talked shit about tenderloin, and rattled off is preferred cuts. But there was nothing about actually, you know, holding two of the same cuts of meat in your hands and discerning which is the better piece, like the title implied. So, thanks for the clickbait, essentially.

Is English your second language or something? This video describes exactly what the title says. The video is on how to choose a CUT OF STEAK. As in, which CUT OF THE ANIMAL YOU ARE SELECTING. This is how you stay ignorant, instead of taking the opportunity to learn the actual terminology, you calling shit clickbait because you don't know how to search properly.

He is suggesting that you go with Rib Eye, Porterhouse, T Bone, and Sirloin Strip. Which are the common choices at any Market, and in that order best to least best, and price is reflective of that. Fat and bone in is what gives you a more tender juicy steak. Rib Eye is Prime Rib with or without the bone, Porterhouse is a Sirloin with the T Bone and a side of Filet, T Bone is a Sirloin without the side of Filet, and Sirloin cut is without the T Bone .

I understand why Anthony(and others) think the tenderloin sucks. In a sense he's right, but he's also missing something here. Because its so tender and more subtle in beefy flavor - it can get paired with some very subtle, but interesting sauces that can really make it interesting.

Maybe because you eat it & want more. If you get a ribeye you eat it & your full plus the flavor is better. I'm talking about cooking a steak no sauces to accommodate the steak.

With a good sauce you can make shoe leather taste good. Cooking steak at home & cooking steak at a restaurant makes a big difference. I worked many restaurants & not once I've seen tenderloin on the menu.

Be me. Have professional sous vide equipment to include atmospheric chamber sealer. Sous vide New York strip to perfection, and the tenderness of filet mignon, but with all of the flavor. Baste and brown outer portion of perfectly cooked tender steak in butter and thyme. It's good to be me.

The ribeye is the best cut of steak any chef will tell you that that's worth his weight in beef on the charcoals is best put the grill marks on it off to the side for 7 minutes perfect medium-rare every time

I personally find the hanger steak (butchers steak) to be the best - season well with salt and pepper, heavy sear in a cast iron skillet on both sides, toss in some butter and baste - then finish in a 400f oven for 5-8 minutes til medium.

There is no better steak than the hanger steak. If you can fucking FIND it. I've talked to almost every butcher, and grocery store with a meat department and the gist of it is... the fucking high-end restaurants have contracts for the fucking things for a hundred mile radius. FUCK.

Not really, Tender cuts are from muscles that aren't used much like a fillet Tough meets are from the leg or back where it's used a lot. Flavour comes from fat. So fillet lean tender and a bit blade Personality i always go for a rib eye or rib steak. Kinda tender but of cooked right it's full of flavour and not like ruber.

he mentioned the short loin sort of.... the tenderloin comes off the short loin and they also showed a picture of a strip loin which is also part of the short loin. Strip loin can be a good value but generally can lack flavour just like the tenderloin. Also, he isnt saying high end placed dont serve cuts off the shortloin. they sell tons of it. hes saying cooks and butchers do not value these cuts because they offer a shitty value proposition.

Porter house my one and only love nothing beats it. If they don't have porter I go Tbone if no t bone I go for skirt or flat iron, if none of those I settle for a New york, or Ribeye.

The Porterhouse is a Tbone from the other end of the roast. It's half New York and half Tenderloin. Most are cut to thin to balance the doneness of the two halves.

Porterhouse comes from the short loin primal cut which also includes the t-bone and loin steaks. These are all bone-in. Without bone, there is the striploin and the small end of the tenderloin. For the bone in steaks, the porterhouse has the most tenderloin and it comes further from the middle of the animal. The trade off is that the other half is the least favorable end of the striploin. The loin steak is the better end of the striploin and is closer to the middle of the animal but has no tenderloin side at all. The t-bone would be a compromise.

Ask anyone who really knows about steaks from beef cattle and they will tell you the tastiest cut of meat is the Hanger Steak. AKA: Onglet in France. The old fashioned name was The Butcher's Steak. Why? Because it's the best meat on the animal and there's only one, relatively small cut per head of cattle. So butchers used to take it home to eat. It's in front of the commonly called 'flap' and it's where 'god' joins the animal (in human anatomy it's called the perineum). There is a huge piece of sinew running through the middle of each Hanger Steak that is inedible when cooked as a steak. It must be removed, leaving two long, thinner steaks. (You can leave the sinew in if you use the Hanger Steak meat in a casserole or stew.) Once the sinew is removed, gently 'bash' the meat fibres flat with a heavy object or meat mallet. Let the steaks sit in some good ordinary olive oil then just before popping on a super hot grill plate, season with salt and pepper. Do not over cook Hanger Steaks! If you like well done... forgetaboutit! 2-3 minutes each side on a hot cooking surface then let REST for at least 3 minutes. A tiny bit tough but the flavour is amazing. Freezing and slowly thawing Hanger Steaks also improves it's tenderness issues a little. Enjoy.

Tastiest is subjective! It doesn't matter if that anyone really 'knows about steaks' to tell you what is the tastiest. YES Hangar steaks do have the strongest of flavours amongst the other cuts. But tastiest... Uhm.. I still really do prefer my ribeyes. Hangars are for days i want a different flavour.

The chuck eye is hands-down the most flavorful steak that you can actually afford. On the grill, it tastes like a ribeye - for about half the price. Do yourself a favor and try one.

I’m not boasting, there smart guy. I’m responding to your assertion that lots of people can afford expensive steaks, while implying that I cannot. “Affordability” is not just defined by what you have the money to pay for. There are objective measures that are based on what is reasonable within a particular category. For example, even a poor person can scrape together $10. But that doesn’t make a $10 candy bar “affordable.” That would clearly be an over-priced option in the candy category.

Filet is delicious, but I never order it at restaurants. Too damn expensive. For the price I can get a larger, more satisfying cut, like sirloin. I only buy filet for home consumption when it's on sale. Oh, and stay away from any restaurant that wraps filet in bacon. That's a sure sign the chef doesn't know what he's doing. You don't need that fat to cook a delicious filet.
