Really helpful information. Thank you! It is funny though that that 28 day ideal cure time is the same as the oft quoted cure time for concrete. I would eat a steak in your restaurant any day. henceforth however I will pay closer attention to nerve lines at the grocery store and bag count at the concrete store. Concrete plant that is.

I knew the tip about looking for a big fillet part on a T-Bone / Porterhouse. I didn't know the nerve issue. I'll look for that now.

I remember ages ago in a Buenos Aires famous steak house called La Chacra, I asked the waiter how long they matured the meat before serving it...since it was both full of flavor and was tender. He looked at me a bit offended and said....Do you think we serve rotten meat here?? LOL!! I never forget that moment!!!!

I didn’t know this! Thank you! Please do a video concerning shaving Ribeye or T-Bone. I see where stores shave the brow/gray off because it was sitting in the store for days. I actually bought 7 steaks and returned them. They showed me 2 nicer red on both sides, but the 5 left over were brown on both sides! What is policy on this? What is acceptable?

@glasslinger About 1985 a butcher told me about Chuck Eye steak. I tried them and I like them better than Ribeye stakes. Even if they were the same price I will choose Chuck Eye. I do like the 2.50 to 3.50 Lb as a bonus for Chuck Eye.

So what you do is throw away perfectly good (tasting and cooking) meat because it has a tendon (NOT a nerve) in it, AND then jack up the price of the other steaks you use because you have to make up for the "loss" you would have because you paid for all of the cut!

Time and time again, I have purchased choice grade porterhouse Angus steaks that have more marbling than a prime steak, so why should I pay double for prime with less marbling ? Prime isn't hard to get, so I don't get that part. I buy the well marbled choice grade, unwrap it, and let it age gracefully in my refrigerator until it changes color. If a store doesn't have well marbled choice grade steaks in stock at the time I'm shopping, then I don't buy one until it does, then I stock up on them. I never have to ask myself why didn't I buy prime.

If you find a very good marbled steak that’s prime buy it. If it looks choice leave that puppy there. It’s like buying bacon you have to really be selective and be willing to look your steaks over before buying it. I will literally go through every package of bacon and find the one that looks best before I buy it and if they don’t have one that I think is good I won’t have bacon. Same with steak.

great video very clear straight to the point I like how your trying to help the working man cook a better steak for his family . There are lots outfits like this claiming what you get in grocery is store sub quality. They just charge you alot more for the same thing. That nerve only shows up in first three or four cuts plus it's the porter house end of the strip. So that's what you get when you get a porter house.

No mention about grass-fed, only vegetable fed. I know this video was shot in 2015, but many of us were ordering grass-fed back then

I think what he’s calling the nerve is the silver skin where the sirloin steak starts that when you look at the whole loin the sirloin steak butts up against it and starts right there

good post, but the tendon (nerve) is not known to 99% of the meatcutters out there. no one is putting a sticker on the package to deceive you. its fantastic this man cares about the quality of the meat he serves and i do not doubt his food on his menu is top notch, this is exceptional ! most steak houses though have illegals working there who have no idea what they are doing . ask for a medium well steak and they will screw it up 9 out of 10 times. its sad, but its extremely hard to find good help these days.

Stater Bros is a joke these days and have been for about 10 years or so. They sell Select grade beef, thats why the prices are lower. They always had choice or prime grade and the butchers did most of the prep in the meat dept. Now, they are a facade "butcher dept" with pre-cut select grade beef. Costco has the good stuff and it's worth the $7 a pound.

The info is good, but it would be better to have a much close-up camera angle at the steak it self. And put up a good vs bad cut side by side. Is not easy to actually recognise the nerve.

At 1:22 the brief clip of the grill cook turning and plating steaks with a fork. You don't pierce a steak with a fork while cooking. I'm surprised these "experts" don't have proper technique.

The fact that he's a standard Anglo-American owner of a steak house that he calls Gow-choe makes it more suspect. I get that it's in honor of South American cowboy culture but I don't see any effort in emulating it here. LOL

My single biggest gripe with this video is he says @1:38 he's going to "cover" New York Strip Loin and rib steak, but only talks about NY Strips and t-bones (which are basically strip plus tenderloin filet in one piece). No rib steak.

Thank you for the tips. Grocery stores are bad for the public due to their enormous clout on the farmers and butchuries. We used to be able to buy "hamburger" fit for a BBQ and now with all the rule changes on what constitutes beef, we are sold "Ground Beef" which is much different than what hamburgers are supposed to be made from and they are selling those ground up scraps for $4 a pound ! The good stuff is not affordable for the average family today when that is all we could buy maybe 40 years ago when stores had real live trained butchers that provided full service and quality beef. This is just another reason why companies who have public stock holders treat the customer second or third in respect. We need the butchers, real ones not the fake ones, opening up shops all over the streets to take back the business.

@volcano hi According to some sources, Hamburger meat is essentially the same as ground beef, which can contain meat and trimmings from any of the primal cuts. But there's a difference between the two. Ground beef can't have extra beef fat added to the mix, while hamburger can, as long as it doesn't contain more than 30 percent total fat. My main issue with either is, big business has been weening away from the usual cuts of "ground" beef/hamburger using just about any scraps vs. the big three that make a great hamburger which is, chuck, brisket, flat iron and/or short rib. The idea is to put a combination together that is from the primal cuts vs. a tub of scraps which is what they do in high volume producers, usually grocery stores. However, of all places, Walmart has ground brisket, ground round, ground chuck on the shelf which yields the best burger for about the same price. So, by definition, hamburger can only have added fat parts, not beef, to yield it's final grind. That isn't so bad if its from the same side of steer.

Look on the label to see if it says "market". Market ground meat contains the steak scraps, etc. from when the store trims their steaks. Regular ground meat is from cheaper, tougher cuts that are mostly just good to ground.

@volcano hi Most modern volume "hamburger" grinds are cheating. What's another wonder is, hot dogs. "Weiners, all beef, all meat, hot dogs, kosher, etc". Who knows what the F they are selling.

I just bought 4 New York strip steaks at $3.99 a pound, and from the cake-eater vibe this dude puts out I strongly suspect he'd throw me out of his establishment. I like how he tears up that T Bone for being garbage, but it's got a Certified Angus Beef sticker on the package.

You're better off buying a boneless cut, like rib eye or NY strip, which is just the tougher part of T-bone and porterhouse. Now, if you don't mind buying bone, that's fine, because bone in tastes a lot better, but don't just throw it away and waste what you actually PAID good money for. Just trim out the bone before cooking it and put it away in the freezer along with other bones until you have enough to make beef stock. Just a guess, but I imagine that after you make REAL stock from the bones, it would actually be not only better but cheaper than the canned variety.

It's an info-mercial. Notice there's no ad before the piece to pay for it. An interesting fact about t-bone steaks. As the tenderloin side gets really big, the nerve on the strip loin side appears. The best t-bone comes from the middle cut

I know a chef who runs a kitchen at a Veteran's Hospital. When guys stuck a fork in meat he would in turn prick the guys arm with a fork! Don't stab the meat! They'd ask, why not? Because it bleeds!

I got one issue with his comments, how can they prove that meat they sell is from Angus or Angus cross cattle, unless they go to the packers and buy them at the kill lines. Just isn't possible, so false advertising.

commercial re-appropriation. every country and culture do it, even Argentinians, but I agree, this guy probably never stepped foot in Argentina, Uruguay or Brazil. He probably ate at a Vegas Hotel restaurant and decided to lift some ideas from there.

As far as i could see he is calling either the spinalis end of the ribeye/strip (between the 5th and 6th vertebrae) or the rump end and calling it a nerve... Come on... You´re calling the third muscle group of a bistecca fiorentina or the best bite of the cow (the spinalis) a nerve... This renders out during cooking and makes for a delicious, only slightly chewer, steak..

Albertson's,ralphs,vons any grocery store suck. Steaks are always bled out over frozen and look disgusting! Especially stater bros it looks like the steaks have been Frankensteined and glued together! Best steaks ive had are from farm communities little local gas marts Pauls market in Weldon best damn steaks! Costco's a pain but steaks are ok.

The nerve end on the strip steak is trash. Only one of my local stores knows how to cut and sell strips the right way and ironically its Kroger. I won't buy them from other stores because they always sell the strips with the nerve in there. They do the sticker trick too and they will even flip the steak over to try and mask the flaw in the meat. Tricky bastards won't get my money.

There is a grass fed beef/butcher shop near me. Grass fed food products are more $$$ but corn fed beef is not as good for you. Cows & steer were not created to eat corn, feed. They graze & eat grass.
