To take this to the next level, before covering and cooking down, add less liquid and cook down until all liquid is gone while stirring. Do this several times to get that popping crackling goodness on the bottom of the pot, be careful not to burn! Stir stir stir, then after 3 or 4 times doing this cover with liquid and put lid on and boil the crap out of it for at least an hour. Do the entire cook with the burner on high. You can add whatever meats you like, I use sausage beef stew meat and Tasso. This takes more time and effort but it is so worth it.

Wow, great video. Really like the step-by-step explanation of preparation then cooking. You put alot of time into your cooking so I bet it comes out delicious.

Hit the mouth of the Avery today, and the shrimp processing plant today on the way back. Even threw out some jugs on the the way down. Not one bite, I think it’s all this rain messing up the bite

I’m definitely making this my pawpaw and grandma from Louisiana , me being from east Texas I have the roots as well I’m from Tyler so It’s a hour away from Louisiana. I definitely was wondering if I was able to make the sausage and gravy in the instant pot my mama giving me😭

When you let it cook down, did you let it simmer? And was it covered?

I keep it at a low rolling boil the whole time to allow it to cook way down and no it was not covered. Need to adjust the temp as the gravy cooks down towards the end

@@LouisianaOutdoorsmen yeah it’s definitely gonna take some practice. The gravy never got thick. And I know it’s me doing something wrong. But we just added cornstarch. The flavor was definitely damn good. We added stew chicken meat and pork.

@@Michael_cgx if you want it thicker you can try adding a little bit of flour or they have a yellow roux mix that looks like tony chacheres but it’s yellow and you can put some of that in as well to thicken it up to whatever you want.

No, there is no real reason to make a roux for a gravy. Normally it’s just for stews and gumbos.
