There are different Cajun Rice and Gravy recipes, out there on the web that are obviously written by Non Cajuns; and if you are a Cajun, you can spot those recipes right away!
There is only one kind of Cajun Rice and Gravy Recipe.... Period.... You can cook a Cajun Rice and Gravy using several types of meat such as beef, pork, chicken or even sausage. Either meat you choose, the recipe is the same; and how you brown or stuff the meat is different depending on the type of meat you are using.
Step by step instructions on how to properly cook a cajun gravy.
How To Make Smothered Pork Chops with onions and gravy
Smothered Pork Chops Recipe
Soak your pork chops in some salt water for an hour, then rinse
Meanwhile, chop up a large size onion into thin pieces
Season your pork chops with Season salt, garlic powder, onion powder, pepper, paprika, and parsley flakes
Get a bowl and combine 1 cup of chicken broth with 2 tsp of corn starch and stir until well blended and cornstarch is dissolved
Place a pan over medium heat. Add about 6 tbs of butter and then add your chopped onions
Add your pork chops and allow them to fry for about 15 minutes
Add your broth mixture and cover with a top (you dont need a top)
Allow the pork chops to cook until the juice simmers down and turns into a nice thick gravy

My Dad is from Mobile AL and mom was born in MS and spent her childhood in NOLA. This is the first dish I learned how to cook from them and it's always been a favorite. We make it with every kind of meat. Turkey wing/leg gravy over rice was regularly on the table. I usually add one or two Serrano peppers to the pot. just cut the top off and throw it in whole. Adds a perfect amount of spicy fresh green pepper heat to the gravy.

I grew up in Opelousas, my mom cooked just like that. She started our dinner. Well supper as most say. About 3 hours to make our meals. She was the best cook in our family. Our cousins used to come over and eat with us. It was known in our relatives my mom was a really good cook.

My grandmother was from Arnaudville! I have cousins I’m sure I never met. I live on the bayou of southeast Louisiana outside of Houma. That’s how we cook lol.

@@LouisianaOutdoorsmen How about showing people how Etouffe is cooked you would be surprised how restraunts out here on the west coast destroy that dish! Some of these people have never heard of corn bread dressing or Beignets! Or how to make the proper Gumbo! I'm from outside of Houston and we appreciate the flavors Louisiana has lent us! Now I'm on the west coast and honey let me tell you restraunts out here need a lesson on proper Lousiana cooking!

@@yadayadayada9335 Ive always wondered how other people even make it outside of here eating bland foods lol. Honestly I have never cooked an etouffe before surprisingly. I stick to more of the creole side of dishes, due to thats mostly what I've learned how to cook growing up.

Check this out there is a Landry's in Vegas, not even close to what Cajun food is suppose to look like or taste like! They don't even serve dirty rice, how can you have a Cajun restaurant and not serve dirty rice! My husband was raised in Pamona Ca. He's Irish and loves real Louisiana cooking! He fell in love with Crawfish Etouffe, Dark crawfish and shrimp Gumbo, he's Irish his family came here from Dublin but you would think he's from the south watching him tear up that Gumbo! I had a hard time finding Gumbo File out here, I finally found but it took a while!

We call it sticky chicken here in Bayou Vista, but in order to make a sticky chicken you gotta make a home made roux. Otherwise, it's just smothered chicken rice and gravy. This is making me want to cook tonight

Maybe somebody can help me out with something. When I was about 10 years old, I went to stay with my aunt on my stepfather's side of the family, and her kids for one weekend. She was an incredible cook and we had rice and pork chops for dinner. After she cooked the pork chops, she made some kind of a gravy. This gravy consisted of oil and the meat juices and I think there was some cayenne pepper involved because it had a little kick to it. It was very thin and it did not contain any flour. In fact it looked just like some type of clear oil plus a brown pool of stuff that had to have been meat drippings. It was delicious, and I've never been able to recreate that since. And I've been trying on and off for about 40 years. Of course this is in Cajun country, and for dessert she made homemade beignets. Has anybody ever heard of that gravy that she put on the rice? And if so, what does that consist of? Thanks in advance.

David Hinson they have multiple stores down here that sell them. It’s a locally made pot, but you may be able to buy them online. It’s a McWare pot or you can buy a magnalite pot

I like how you cooked it, but personally I’m not a fan of kitchen bouquet. Instead I just brown the meat a little longer and use a little flour towards the end. It’s good to see actual Cajun cooking.

You cooked up an amazing looking meal; you put a lot of time into it. Good to see you use olive oil; better for your health. I no longer use any corn oi, canola oil, or hydrogenated vegetable oils. I actually think my cooking tastes better now. Keep up the great videos.

@@dawnwilliams1126 no problem, you just need to cook down some ground meat with onions and bell peppers. Once that’s done mix in “savioes dressing mix” and cook that all down together. Once’s it’s the right consistency, add white rice little but little until it’s mixed but still moist.

Ive got the same type of aluminum Dutch oven he used its about 90 Years old. Everything looks good but i was disappointed with the lack of corn and the rest of the meal. I expected start to finish and this doesn't happen

The corn in the meal was just canned corn heated in a separate pot on the stove it wasn’t a part of the actual meal

I didn't start using olive oil until about 3-4 months ago. Its just for convenience at this point. Makes the process easier.

Never use metal spoons on an aluminum pot or pan. Hard plastic composite will do the same thing and not put microscopic aluminum shavings in to your food. Just sayin.
