Keep a rice paddle (I like one with the little indents) in cold water if you don't want the rice to stick to it. This is what we did as servers at a restaurant where we were doling out rice bowls all day.

Thank you for this! My rice cooker is broken so this is ideal for me!! I have started using Ajishima rice savoury toppings for sushi rice once cooked (seaweed one is my favourite!)

Perfect!!!! Actually my mom makes rice without rice cooker since she prefers the taste! I grow up with Ajishima rice topping! haha😝 so nostalgic to me! of course still love it!

Hi Miwa! Thanks for such precise instructions on how to cook rice, providing us with weight measurements! Following your guide, I was able to cook rice perfectly for the first time! My past attempts using rice cookers and stove top have not been successful, so I’m glad to have found your instructions! Would you be able to provide instructions for how to cook rice on the stove for four people and give general guidelines on how to scale up? The instructions in the video are for two people. Thank you in advance!

So happy to hear this!! If you wanna scale up the rice. Just make sure to add 1.4 times more water than 1 rice. If it comes out too mushy, reduce the amount of water for next time. because depending on the rice and season, the best ratio varies. Please use this as a base and adjust to your liking!

Microwave is the only way I've had good results. Usually lightly covered for 2 minutes or so.

I always wanted to eat Japanese, but every Japanese restaurant where I live use convinience products which have sometimes stuff I am allergic to. I guess I have to learn making my own rice, curry and ramen.

Thank you very much for your videos! I love all of them. My rice is always perfect with this method, I use a different round rice (Milchreis for anyone german speaking) and it works perfectly. But I was wondering, if I could pre-rinse the rice more than one night? The rinsing takes a lot of time and I would like to make more than one portion in the evening before and cook it the following few days. Is this possible? Thank you very much again for your great work!

thank you very much for your kind word! I don't suggest to pre rinse the rice since it's gonna grow the bacteria. I always make a batch and freeze it after cooking it!

Hi I am a bit confused by the amount of water. I cup of rice and 1 1/4 cup water is to add 125% (that is, one and a qaurter) of the volume of rice. 150 grams or rice and 200 grams of water is to add 133.33% (that is one and one third) of the weight of the rice. Which percentage should it be?

I love your channel, can you do a porridge recipe? Also do you know any brands of rice in United States that would work for this rice? I love the sticky rice I get at Japanese restaurant but can’t duplicate it for some reason at home. My rice always ends up mushy

i'm curious, do you always eat sushi rice (which I think is short grain rice)? - i'm in the UK and I generally eat long grain Basmati rice - do you know what are the differences between them?

99% of rice we find in local supermarket in Japan is sushi rice! I hardly find the Basmati rice! 😅The way you cook is different too. Please search on KZfaq about basmati rice! There should be a tutorial for that! sorry I can't help here!

Wow! You learn new things everyday! Greetings from Greece ~~ I had never thought to add the water to the washed rice while measuring on the scale! This way you also take into account the water left on the rice from washing it! Great!! I plan on making curry with rice soon, so I will use this tip for sure! I wanted to ask though.. When you want to make rice for sushi, *how much less water* do you use? Because you add the sushi vinegar/sugar/salt mixture, so you add moisture at the end.. Also, could you make a video on rice cookers? I am lost.. Will a cheap one also work better than stovetop method? Which brands are there in japan? I have heard of zojirushi, but they're very expensive and we don't have them at all in Greece. Thanks!

Hi! Thank you very much for your kind comment! Regarding water and rice ratio. for sushi rice, I do equal parts. for example, if you are cooking 200g of dried rice, I add 200g of water. It will comes out pretty dry comparing to just a regular sticky steamed rice. because like you said, we are going to add vinegar after that! I'm showing how in sushi roll video! if you visit the description box, there are always recipe with exact measurement. Here is the link of video! ( kzfaq.info/get/bejne/n9Fyi5xm2r6lhmQ.html ) Rice cooker....! It's a difficult question! Because the one I was using in UK which was cheap and very old one didn't work very well. So much better to cook on the stove top! but these days, we can get the good one with pretty reasonable prices. but I only know the Japanese brand.... so I'm not sure if that's available in Greece.. let me find the link for you!

Zojirushi is usually on the high-end price, but AIRISUOOYAMA has a relatively good quality one with affordable price. Here is one link. you can probably find the cheaper one. amzn.to/3qGUGCl

I wonder if the milticookers (that also have other cooking programs like for stew etc) will be any good. Anyway, I found we started importing more little by little, so I will wait for something better!

Is kombu stock powder same as dashi powder?

kombu stock powder is under the umbrellas of dashi powder! Dashi = stock in Japanese! there is fish stock, kombu stock and many more when the recipe calls for dashi powder!! I hope this helps!

Hi Miwa, cheers from Prague (Czechia). The 150g rice - 200g water ratio applies to all rice types? I usually use Thai jasmine rice and sometimes long grain rice. Do they need other rice:water ratio? Thanks for your videos, everything looks so neat and yummy served in all those many small cups on the table :) Vítek

Hi Vitek! Thank you very much for your comment! Each type of rice requires a different water ratio to cook with.
