It’s wrong. You need to rinse it a few times in water so that mullet isn’t bitter

This is not a fish though, this is Millet. A mullet swims, sometimes on the back of peoples necks.

For me water is getting evaporated. when i add more water it becomes mushy ..How to cook millet so that each grain seperates??

Same problem. Tried with rice cooker got lumpy. I was thinking of toasting it first?

I soaked it overnight. Cooked in pressure cooker. It was great

Just follow the recipe. Water to grain is 1:1. Start with cold water. After it boils and you remove the foam at the top, cover and let it simmer for 15 minutes. Then remove the lid to allow moisture to leave the pot for a couple of hours. Then you have a nice pot of millet where the grains separate. This is cold, but tasty.

For me it has helped to boil the millet a little longer before putting on a low heat. Figuring out just how long to boil the millet is part of the trick and the other part is how much water or liquid to add in the beginning. When the millet has been soaked it seems to me that about 2 1/4 cups water per cup of soaked-and-drained millet works pretty well, but I have not yet gotten to where you are talking about -- where the grains separate and it is nice and fluffy. Next I am going to try the slow cooker and cooking it overnight at a low heat. This is a big deal to me, because I am pretty much replacing brown rice with millet. I love brown rice, but millet is not only less expensive but is wonderfully alkaline and (it seems to me) a perfect substitute for brown rice.

I need help. Everytime I cook my millet (after soaking overnight), it turns out like a goopy starch. It clumps all together and looks very gooey, like when you add water to potato starch and mix it. I've used rice cooker, i've cooked it in a pan on stove with little water... nothing works. The moment the pan heats up, the millet immediately oozed out starch and made the water cloudy. Was wondering if I bought the wrong type of millet.

Hmm, that could be! What type are you using? Is it possible it's millet flour (ground millet) vs. whole grains?

@@Minimalistbaker Thank u for asking. I am definitely using whole grains, they look just like yours in the video. On the pack, it says organic millet but it doesn't say what species it is. Could i have bought a species that is more starchy? I just feel like i am eating really sticky mochi. I would love a bowl of fluffy millet!

Rice and millets always need to be washed before cooking...take care when you cook it next time.

and how long do I "simmer and cover"? or "cover and rest"? really unclear instructions.

Completely wrong. The single most important step you missed out. It must be washed 7 or 8 times until the water runs clear. Then soak it overnight for breakfast, or during the day if it's for dinner.

@@Minimalistbaker Have a read up. It is important. It's like lentils. Just because they're easy to cook, people don't bother rinsing and soaking. But there is a price to pay.

U.S. and Canada crop do not need to rinse to death. I once bought China crop. Omg... 2 hours of rinsing, soaking just to get rid of the yellow color water. Needless to say , I returned the 3 packages. Don't know if the crop is like that or farmer playing with food.
