I was very surprised at the 1:1 rice to water ratio you use. All the instructions on the rice packages say 2:1 water to rice. Is Thai Jasmine rice different? Thanks!

It's because it's a different rice... It depends on the type of rice, they all cook differently... Different sizes, long grain, short grain and brown rice, etc... Also texture...

The rice is already holding some water from washing, so 1 part additional water makes sense

Tip: You know you've washed the rice enough if it doesnt clump together when you squeeze a fistfull in your hands :)

Call me gross, but I don't like washing rice. It comes out sticky. And no, I don't want it sticky because the recipe I make most of the time doesn't call for sticky rice.
