I used to consume so much oil, I lost track of it. I became aware of this issue (thinking its totally unnecessary to consume oil and adding it to cooking) by cutting it out of my diet and consuming instead high fat products, like avocado, coconut, olives and others. Nowadays, I dont consume oil at all and its so much easier than what I expected. At first, I thought my cooking was gonna become bland and without flavor, but spices are the key, such as ginger, turmeric, paprika, salt, pepper, cumin, garlic, etc. Great video Caitlin. Its really important to be AWARE of what we consume, how we consume it and WHY. XOXO.

Herb Derb I'm not OP but I just don't know if I can go vegan, at least at this moment, for my mental health. I don't feel comfortable in completely cutting any type of food from my diet as I worry about potentially obsessing over it. However, I try to make and eat as many vegan or at least vegetarian meals as I can to limit what I contribute to the meat industry, and maybe eventually I'll feel comfortable working up to full vegan but I'm starting with doing the best I can because it's better than nothing.

Herb Derb also, in the past some of the more militant members of the vegan community put me off. I realize that those people are in the minority of vegans and channels like this help me to feel more comfortable with the vegan community, but in the past I've worried about involving myself in a community that sometimes seemed toxic

Do not make any excuses for yourself. Dont make yourself feel better because you are just pushing yourself further away. It is terrible for your health, the environment, and you are killing animals. i actually got rid of my nonstick pans recently because of the toxic ickies that can ***sometimes*** be released from them. I use stainless steel pans now and I love it. The trick to not having your food stick is to allow the pan to get hotttttt. i am slowly but surely switching out oil for water and veggie broth. love this video, thanks Caitlin :)

One person going vegan is not going to make that large of a difference. Companies that produce meat and live stock won't notice OH HEY, that woman on youtube just went VEGAN. Gosh, don't reproduce those chickens, Bill! We don't need em! No, maybe if an entire state went vegan, it might help. Now, I have nothing against veganism (no, I am not vegan), I'm all for animals just as much as you are. I'm just realistic about production in this US. So one, singular, person going Vegan will not save hundreds of animals on their own. It simply means that more meat is going to waste and animals are dying for no reason because no one is purchasing their meat. With that being said, good for you for being vegan and keeping at it because it'd be far too difficult for me and my family.

If you're reheating pasta at home and don't want it to stick together my tip is to bring some water to a boil nd then throw the pasta into the water for a short period of time (I'd say one minute max) and then drain it in the same way as when you cook it the first time

I've had success with using canned coconut milk in place of oil when baking desserts. It helps to maintain some of the density and fatty flavor. Anyways, thanks for the informative video!

To stop the drying effect while roasting, you can put another separate tin in the oven with a layer of water in it, and that will keep the veggies more moist. Enjoy.

I am not vegan either, but since watching you videos I became much more concious about my meat intake! Normally I would eat meat every single day, now it is already reduced to 2-3 times a week. Also being totally vegan is really inpracticle because I still live with my parents ( im 17) Keep the good work up, loveeeee ur videos ❤️

Great video. I've been oil free for a couple of months now, and my meals taste literally no different. People are just so used to using it that it is seen as an essential cooking element, but it really isn't necessary.

I have to cook with oil because I don't use non-stick pans. I have birds, and when non-stick pans are heated their coating releases fumes, and while those fumes are harmless to humans they can be toxic to birds. And obviously my birds' safety is more important to me than eating a little oil.

Daniel D I think as long as you lower the amount of oil/salt in your diet, you will feel significantly better :) I found that instead of completely eliminating oil in my diet, I just significantly lowered the amount of it that I consume. It works very well!

Yeah dude, I'm trying that. Went down from 6 tbsp of oil to 2 - 3 / day in about 3 months (like 1 tbsp / month lol) and 3 tbsp of salt / day to 1 - 2 tbsp but I feel like I cannot go lower .. foods that I prepare become more dry and tasteless without salt/oil :(. Anyway.. I'm doing a progress and hope to make it to 1tbsp of oil and 1tsp of salt heh...

My Italian grandma always told me never to rise pasta. Just put the sauce on right after you strain it and the extra starch helps the sauce stick to the pasta. I guess you could rinse it if you were eating it totally plain but otherwise just put the sauce on right away and it won't stick :)

Great video Caitlin I love it! So important to teach people this. By the way, when I carmelized my onions I don't use any water at all right from the beginning. I throw them on a pan on very high heat for like 15 minutes, and it works really well!

Here's my tip to prevent drying out on the outside and keeping it crispy. Use potato starch and water or arrowroot and water. That coats the outside of your sweet potato or potato or any other veggie and it creates a kind of wedge fry coating that oil would create. This will keep your fries crispy on the outside and moist on the inside.

I don't believe it is safe to frequently use a non-stick pan on HI heat as it will release fumes from the non-stick surface and shorten the lifespan of your pan as a result. Also, it isn't necessary to use oil to keep pasta from sticking or to use the methods you showed here. when pasta clumps its because 1) you didn't stir enough 2) there wasn't enough water or 3) it's overcooked.

I watched three videos done by other people before seeing yours and you have the best info. The sautéing tips are great and knowing now how to control it instead of accidentally getting the water right was great into. One thing I never really thought of until you used the word glazing, is that wine can be used for glazing the pan as well and leaves a subtle flavor that is enjoyable in many recipes. Something I will be trying hopefully Julia Child's style. I have been having to be creative with not using oil for my vegan cooking the last year or so. Two things that I have used as a substitute in baking are ground chia eggs and avocado for fat. The avocado made for a decent mouth feel and by grinding the chia it made an effective and tasteless egg that helped with binding. I make all my baked goods with just the simplest ingredients. I use yeast (with a tad of sweetener for proofing), flour, salt, and water for pizza dough. It is really good and does not need any soy milk or chia eggs. Granary bread doesn't use anything other than the yeast and sweetener, grains, water, and salt. It is one of the best breads ever. Ever since I started using the baking silicone mats, I feel reborn!!!!!!!!!!!!!!!!!! My family is always asking me "how did you cook this without oil?!?!" I just tell them with my silicone mats. Also, for baking, I coat with avocado sometimes, works like a charm!! And for baked goods, I use avocado as well!

I put flax seeds in water and let it sit for 5 mins. Then I warm up the pan & splash (not pour) it on the pan. I have to keep an eye on my veggies & stir them frequently. Another hack is to start w/onions first (they release moisture), then add carrots, celery & lastly, garlic. The additional benefit is that the cleanup is super easy (no oily stuff on my pans). Your taste buds do adjust with time! I actually didn't notice any difference when I changed to oil-free cooking, but some people do.

I'm not sure if we should go totally no oil, since lots of vitamins are fat soluble, and out body need fats too... maybe not excessive oil but balance is key.

Fat is something that can also be found in almost every whole plant foods, not just oil. Besides, a lot of plants that has vitamins that requires fats usually already comes with fat, or we eat them in starches, legumes etc that already has fat in them. So in the end, whole plant foods in itself has already worked it out for us without needing any more processing.

Oil is a processed food. You're right, some nutrients as fat soluble and there are whole food fats available: nuts, avocadoes, etc.

I just read about a research about non-sticking pans and how they are not good for your health. Critical mind is always good, there is always something bad for your health and environment but it makes me also question if in the made of the pan is consumed many artificial ingredients to meet consumers demands. Just thinking. However we all are searching and trying to find good ways to go. Thank you for your inspiring videos!

I prefer silicone mats too, but you can compost parchment paper, and you can wet parchment paper to keep it from charring super fast in the oven :)

You don't need to store pasta with sauce - just reserve some of the water that the pasta was cooked in to bring it back to life and add moisture that evaporates in the fridge. I haven't read comments so I don't know maybe someone already said this. I like your video.

I've been a vegan for over a year and recently started hearing bad things about cooking with vege oils or any oil, which is quite contradictory to what I believe in. After watching some videos on YT and seeing thousands of comments, I've decided that I'm going to keep cooking with oil anyway, which is peanut oil in my case. Chinese have been cooking with vege oils for thousands of years and our traditional diet has been considered to be one of the healthiest. We never had a lot of health problems until we became richer and people started eating more processed food and animal products, while adopting a more sedentary lifestyle, like westerners do. It's not on the oil, it's on the food you eat with oil, and your overall lifestyle. Now, some of you might argue that cooking oil is processed and vegans should be eating whole-food. I don't think we should get caught up in the word "processed" and make life harder for ourselves than it already is. Wine and beer fall under processed food too so should vegans stop drinking them? Even though we all agree that alcohol does you no good at all I still drink occasionally because it's enjoyable. As long as you have a balanced vegan diet and a healthy lifestyle, cooking with vege oil shouldn't do you more harm than drinking a glass of vegan wine.

I have recently learned that one can cook rice like pasta with 6:1 - 10:1 ratio between water and rice. When the rice is al dente, one can simply pour off the excess water and place the rice back into the original pot, and cover to allow the remaining water to evaporate. This method allows one to boil off the starch without having to do a pre-wash of the rice. Also, this method will reduce arsenic levels in the rice. Burning can make some foods carcinogenic and does not improve flavor like the maillard reaction. Caitlin's advice about the broiler is probably the most spot on for cooking without oil, just make sure to keep an eye on it, most foods only need a minute or two

Thanks for the tip!! Does it work for anything else? What about seasoning? That is what I have trouble releasing most...Water sauteing doesnt seem to release seasoning for me??? I also use an instant pot, but when I throw all the seasoning in there and cook, I don't hardly taste any seasoning??? Thanks!

Oil doesn't help bread rise, just fyi. There are many ways to substitute oil in baking. I use peanut butter as a substitute in some cases, for example. You should not use water -- because oil is a heavier texture than water. Applesauce also works. So does mashed avocado, mashed banana, or milk (non-dairy or dairy). - And there are /many/ other ways to substitute as well. (Sometimes when using applesauce, banana or avocado you may have to add a few tblspns of water on top of that, but go 1 tblspn at a time until you reach the right consistency and be careful, because over-mixing makes baked good tough).

I think the key is not to use that much oil and see when would it be good or preferred to use it. I cook with oil but try to keep it low. By the way ! I love your videos they have inspired me so much ! I've been vegetarian for close to a month , they only thing I regret is to not have done it before .

Thanks so much for making this video! I'm transitioning to (mostly) whole foods, plant-based, no oil (and all vegan) way of eating. I want to cook more at home. These tips will help me a lot. I'm vegetarian now, with little to no eggs and dairy most days, but am relearning how to eat and cook so that I can eat the most healthy, compassionate way possible.

unsweetened applesauce is what i use. cakes turn out really moist. and it can also be a substitute for eggs as well
