My Chinese friend taught me to cut down the back of the chicken on both sides of the spine & remove the rest of the body in one piece doing the legs pretty much like you did making it easy to stuff and make look like a regular stuffed chicken but without bones. It can also be skinned and rolled then covered with the skin, rolled and tied and roasted. The bones can be used for stock for gravy.

Yeah I always like to rape my chicken before eating it makes it much more tender, Cooked it for about 40 minutes in the oven, made roll out of it stuffed it with nuts and what not. Then I finished it in a frying pan pasted in butter, that was a glorious meal.

Stuff it with nuts, rub it with spices, roll it. Rub the skin with honey and bake it 😉
