How to debone elk quarters. In this episode of the field dressing series, Randy Newberg explains how he debones an elk quarter, while on a hunt in New Mexico. Using both his Gerber dual tool system as well as his exchange blade system, Randy goes through each steps in properly taking care of your meat while removing the bones to save weight.
All you are doing is trying to keep the meat intact in one piece while filleting the leg bone out of it. This principle applies for both the front and hind quarter. You can start at a ball joint or wherever makes the most sense and cut down to the femur or shoulder blade. Then you can just shave the meat away from the bone and making sure to not leave any excess meat attached to the bone.

Great demonstration. And thanks so much for not throwing in gratuitous background music. The sound of the knife cutting through meat, occasionally hitting bone, the wind, and the occasional grunt of effort were plenty of background "music".

Great stuff Randy! My dad always showed us kids how to d-bone so you don't pack stuff you can't eat! Wish we had those knives back then instead of the SIX we had to carry! Thanks for sharing. Can't wait to see what's next.

Randy how do you position it in your pack so it's not a blob of meat ,had that problem with trim!

I got spoiled living in the Alaskan Arctic. We'd load the gutted/skinned caribou (or moose, quartered) carcass' onto a 4-whlr. and haul 'em to the boat... or, we'd pull up with the snow mobile/sled and stack 'em in. Good, common sense cutting right there, though.

why do you debone in the field. doesn't the boneless meat stand greater change of spoilage?

Not once it has cooled overnight. Why carry out 10 pounds of bones in each hind quarter?

Bring a zip lock bag and a zip tie. Bag em, zip it tight, and you're good to go. Once home you can make one cut and the boys are already in the bag.

Is it common practice to bone out the meat when packing it out of the backcountry? Do butchers prefer it boned out or bone in? I’m contemplating processing it myself should I get one this fall.

I always bone out, personally. I hike 3 miles up and down hills to get to a road, and those bones add a lot of weight. I also flesh out the skull as good as I can. Spend a little more time now to save a lot of pain later

Randy, gerber question for ya boss man. Is that folding knife a factory edge or have you sharpened it yourself? That knife is incredibly sharp.

Bengt Kiil yeah, I wouldn’t mind canning some elk bone broth. But hiking bones over two miles of deadfall timber isn’t high on my list. Maybe if I have energy after the 5th trip then I might hike some bones out.

The only difference for us would be is that we have switched to a high quality fillet knives (not the Wal-Mart stuff)for just about everything we use knives for.Still have knives like you have around but can't remember when we used them last.

Yeah, or just special deboning knives with a semiflexible blade. Way better than any knife with a stiff blade! That is what I use in Germany;-)
