If you've just bought the Sage or Breville Barista Pro, Barista Express or Barista Touch, and you're looking for a guide to dialling in, a workflow guide specifically for these machines, here you go :-).
I have filmed a dialing in video with the Barista pro in the past, but I thought I could improve on it, so hopefully, this is a better guide and should also be helpful as a first use guide for anyone using these machines, at least for the espresso side of things.

Important note. When it comes to adjusting the internal grind setting, on new machines with burrs that haven't been worn, there's no benefit in going any finer than 5. I've done some experimenting, and if you go beyond 4 on the internal setting, with new burrs, all you'll do is set the zero point (burrs starting to touch) higher. The reason for so many finer settings is to keep grinding finer as the burrs wear. When you say 'internal', do you mean the one you have to remove the hopper to change? I've had to set both settings to 1 to get anything like 2:1 extraction on my new (factory refurb) machine, but I have been concerned the burrs may be touching.

I saw YT videos that suggest having the internal grind set to 2 so I'll change that back to 4 or 5 and see if I have more luck. I have the internal at 2 and the external at 14 and it doesn't produce much of a pour in the default time for the 2 shot button. I'll keep trying. Thanks for the video Kev. I just subscribed! :)

Absolute game changer! Grind setting was at 2 and still 15 second extraction. Reduced the Burr setting to 3, grind size 5 .. with trial and error, the coffee is exceptional!! Great vid! Thank you ☕️

Thank you for sharing. I have had this machine for a couple years now and it's been great for me (not a barista), but the last couple of days been having trouble dialing in even though I am using the same beans I always have. I will have to try the manual method. This helps!

My settings tick all the boxes for my Sage Barista Touch which is 6m old and make a great Espresso. Inner grind wheel manually set to 4. Main grind set to 10. Grind time set to 29secs. 18g of Union Gajah Mountain coffee beans in. Ground output is 18g. 8 secs to begin delivery. At 30secs extraction completed. Finished espresso 37g.

Thanks for the informative video. It has greatly improved the shot of coffee that I am now getting. I am just wondering if you have ever just used the automatic two shot pour button rather than the manual method shown in the video. What would you expect the extraction time to be with that method?

Hi There. Bought a Barista Pro about a week ago. I've also been a bit confused by apparent 'drift' of the grind condition. My previous set up was a Duo Temp Pro and separate grinder. That grinder had zero drift. If having the grinder integral with the espresso machine means that the grind can change as the machine heats up (due to differential thermal expansion) then I'd say it's better to have a separate grinder. Never use the razor, don't see the point of aiming for exactly 18g of grind and then skimming off an unknown quantity that then varies according to the tamp.

Hey Kev! I am learning loads from your videos, ty vm! I wondered if I could ask 2 questions! 1) I prefer a single shot latte as my drink of choice, and I wondered if I can dial in a new bean using the single shot cup rather than the double shot cup? I was aiming for 1:2, so 9 g in 18 g out with the single. 2) When I purchased beans for my bean to cup, I would buy 2kg of Lavazza medium roast ORO beans and keep them in an unsealed bag in the cupboard and drink over several weeks. I realise how bad this is now! I am working thro the last of my bean stock but realise that they are a) possibly stale and b) possibly too light a roast. Should I give up trying to dial it in and instead try a new bean? I have about 1kg left and am currently considering abandoning them in favour of fresh beans...

Hi Kev, thanks for this video it showed me a few things I'd never considered using my barista pro! May I ask though, I don't know if you skipped over it or its just a problem I have with mine, but when you said you usually run a few shots worth of hot water through the group head first to warm it up etc. are you not left with the portafilter/ group head dripping with water after as you start to grind coffee into it? I always have this issue and then I find it affects the weight of the portafilter and even though I 'zero' the scales the group head is still leaking water, often onto the scales etc making a mess, but crucially in doing so it is also shedding some of the original weight I zero'd the scales at, so then I may be getting 18 grams of coffee into the portafilter but the scales shows 19g! I may be getting too concerned about this but I didn't see in the video how you deal with this i.e did you completely drain and dry the group head after running a shot of water through it? Sorry for the long question! Peter

One other thing… your timing… on the first attempt you did 46g in 17 seconds for example… does that include the 7 seconds at the beginning or does the timing start upon when you first see coffee coming out? Thanks

As a newbie to espresso making, I have found your videos INCREDIBLY helpful. Thanks! One question: Assuming 18 grams of coffee, is there a difference in taste (or something else?) between a double shot of 36 grams pulled between 25-30 seconds and 36 grams pulled between 35-40 seconds? I'm using the Breville Barista Touch, if it matters

Thanks for the kind words :-). In theory 35-40 seconds is running on the slow side, I'd expect it to be on the over extracted side, bitter, but it doesn't always work like that, just stick to what tastes great to you.

Hi, thanks for that detailed video! My Barista pro takes like 24 seconds to grind 18g of coffee, that looks pretty long to me compared with any video I see using the same machine. Any idea why?

Hello there, i have the Barista Pro and to grind 18grams i have to make a minimum of 4! runs á 7 seconds, so minimum 28 seconds! Do you have an idea what could be the problem? In my opinion thats very long, but with that grindsize i get a shot with 18grams in and about 40 grams out in about 26 seconds, so i'm almost happy with the taste already. Is there a way to shorten the grindtime or is there maybe something wrong with the grinder?

Hi Kev, great video thank you. do you have any content that explores brewing at different temperatures with the Barista Pro? As i understand that is one of its key benefits. I'm currently torn between Barista Pro or a Bambino and separate grinder (only for espresso based milky drinks). thanks!

What I usually do is taking the filter basket out of the portafilter, fill it with coffee and then reattach it to the portafilter to tamp the coffee. Somehow this way I create less of a mess as I have a separate container for the ground coffee to go in from the grinder. Is this process bad in some way?

Hey Kev. Cheers for the video I recently got this machine thanks to one of your discount codes. I have one issue with trying to set up though, 19g seems to be wayyyyy to much for my basket. After a tamp and using the razor tool trying various different beans 14g seems to be about the max it can take….. I’m using the double basket and the machine is the barista pro. What’s going on here? When trying to reach for 19g it’s putting an insane amount of coffee out

Hi, very useful videos for someone just starting out! A thought that came to mind - why have such a range of grind settings, if they always seem to be towards the finer grind for espresso? Can you imagine ever needing the internal burrs at max setting (10) and the external setting at 16?

Very useful video once again Kev. I use the double shot button to pour two single shots for me and the Mrs. I think I'm dialled in as I am getting a roughly 2-1 ratio from 19g of coffee as you suggest. I am using a medium-dark roast, preferring a sweeter rather than bitter shot. However I never seem to get very much crema on the shots - probably only about 1mm. The coffee beans are fresh, so it's not that. Am I doing something wrong? Is this something to do with the pre-infusion time? Is this why you pull shots manually perhaps? I'd appreciate your guidance and wisdom 👍

Thanks Rico :-). Preinfusion isn't going to me impacting on the crema, some beans do create more crema than others so it could just be the beans, although if you're finding a similar lack of crema on all beans, may need some more investigation. Drop me an email kev@coffeeblog.co.uk, cheers

Would you not re-weigh the dose after using the razor, then readjust your expected output to achieve the desired 2:1?

Good pointers. Thanks for the reassurance about it not being abnormal that pucks sometimes stick to the machine, rather than coming out with the portafilter: my barista pro sometimes does that, and I was thinking I must be doing something wrong (it seems to coincide with a slightly wetter puck for some reason????) It took me ages to dial in my Barista Pro. I wonder why they bother with such coarse settings on the grinder? I had to change the internal grind setting one point finer, and then an external setting of 4 is working well with my preferred coffee. But who on earth is leaving the internal grind at the factory setting and then using a high number?

I found that that mainly happens when you dont immediately remove the portafilter after pulling a shot. Usually when i pull a shot i remove the cup directly after the last drop and the first thing i do is empty the portafilter and flush the grouphead. I rarely have it sticking to the showerscreen like this

Beginner question here. Is the 19g amount dictated by the size of the portafilter? What if I want less coffee in the end? Can i technically use less ground beans or do I have to simply "split" the coffee by using 2 seperate cups everytime??

Question Kev, when your u are grinding the coffee, how long does it take. The factory settings say that grind takes about 10 seconds but sometime I need to grind 45sec

Hi Kev. I have this machine and can never get a shot that looks like yours, even though the weigh (of the ground coffee (19-21g) and the finished shot (~36g in 28 seconds)) tally with your targets. The crema is noticeably less - mostly black, with a tiny head of crema. I've been using your Coffee Works decaff (Caramelised Biscuit & Gingerbread Single Origin Decaf Colombia) which tastes lovely and smooth, but the lack of crema means it looks a less than impressive espresso shot........... Any suggestions? Is it that I'm not making it into a small enough espresso cup or small jug, or perhaps that the basket needs to be replaced for one of the more precise hole aftermarket ones? Hi Peter, you have the Barista pro? If so, reduce the dose to 18-19g, and use the razor tool. If you're using 19-21g in the barista pro you're probably experiencing over dosing. Cheers, Kev

Extremely helpful for a newbie with the sage express machine! Q1… I’ve been weighing beans before the grind and then just adding the beans to the grinder every time. I like your way as it means I can leave all the beans in the grind but how easy is it to get the amount right like you did? Obviously if it goes over 19g I’m going to have to start removing a bit of coffee? Q2 I don’t seem to have an internal grind alteration option so I’m stuck with just the dial. If I go to the finest setting it’s clearly not right and would take hours to get my yield so going to number 2,3 etc should be quicker and it is but then it’s too quick and I’m getting my yield after only 15 seconds. Seems to go from one extreme to the other! Any suggestions please? Thanks for a great video anyway 😊👍

Great video--very helpful! One question. I have owned both the Barista Pro and (currently) the Barista Touch. On both machines, sometimes the beans stop flowing into the grinder and I have to stir them around in the hopper to get the flow going again. Does this ever happen to you?

Cheers :-). Hmm, no I've not experienced that, when you say the beans stop flowing, does the machine make a clicking sound or something when this happens, is it stopping in the burrs or is it literally as if no beans are dropping into the burrs? Cheers

Hi Kev, I'm really enjoying your videos. New Sage Barista Pro owner. I'm getting so close to " The perfect espresso they're tasting so much tastier. Just a question though. I'm getting around 44 grams yield from 18 grams of beans in around 22 seconds. Grind serting is 6, bur is 4. 6 secs infusion 12 secs total including infusion. Would it be best to grind finer and increase amount of water or grind finer and reduce amount of water. So 8 grams over and 8 secs less than the 30. What would you suggest or anyone else reading this. Cheers

@ Coffee Kev thinking of returning sette 270/wi and Barista Pro trying to dial in light-medium roast and do not know if my combination is possible already went to more than 2 kg of beans and no success. Even WDT still spraying all over me. So frustating .. really thinking of returning all and switching back to tea. Actually in my entire life I never had an espresso so do not know what I should get but certainly not sour even using highest water temp.

Hi Ken, sorry for the delayed reply. The Barista Pro isn't the machine to use for light to medium roasts. If you're relatively new to espresso, starting out with light roasts for espresso is really quite a challenge, for the gear and for the barista. I'd recommend starting out more towards the traditional espresso roast side of things, and move towards lighter roasts a bit later on. Cheers, Kev.

Beans clearly make a huge difference. I've just bought some Columbian UVA beans and even with the internal burr set at 1 and the external burr set at 2, I get a grind like CT on a Barista Touch. That surely isn't right?

I've watched this video 4 or 5 times now. I think it is the most informative video on dialing in on a Breville out there. I have been practicing on my Breville (I am a newbie to this), and I am confused about how the ratio is affected by using the razor. It looks like you are shaving off several grams when you use the razor (I know I am when I use it). So if I have 18 grams before tamping and using the razor, and then 15 grams after leveling the puck with the razor, wouldn't I be aiming for 30 grams output, not 36, to attain a 1:2 ratio? In your first shot, you seemed not to care that you had shaven off several grams, and were still looking for 38 grams or so from the 19 grams you had before you leveled. (hope this question makes sense). Thanks again for your tutorials. I've learned a lot!

Yes you want 18g after tamp and trim. either your grind size is too course (too much volume) or not tamped hard or evenly enough. conversely if it's too fine and your trimmer is floating above the surface the grind size could be too fine. 18-20g should be the goal for the 54mm basket.

Thanks :-). Yeah so I'd aim for the desired dose in the basket after trimming. I'd usually aim to grind a bit more than the desired dose, and then I'd expect to trim a small amount after tamping. The plan is to have the target dose in the basket after trimming, if you're using the razor tool. So if you're not using the tool, you'd just dose the basket with your chosen dose, and tamp. If you are using the tool, grind a bit more than the desired dose and aim to just trim a small amount off after tamping, this will ensure a level surface. Personally, when using the Sage 54mm baskets I find that 19g works best when using the razor tool, but just keep in mind that if you trim loads off if you've ground just over 19g, then you're probably too coarse on the grind (bigger particles take up more volume at the same weight) - and if the tool doesn't touch the surface you're probably too fine with the grind (smaller particles means you'll get the same weight in the basket within a smaller volume, after tamping). It doesn't always work like this, espresso can be weird ;-). Cheers Kev

Great video again! So what confuses me with the timing on the pro. The total time it displays is with the pre infusion too. So 30 seconds is 7 seconds pre infusion, then it's just 23 seconds flow time. Is that right? Thank you

Hi Kev Struggling to get decent tasting coffee with this. Using your Classic Espresso blend beans. 19g in 38-40g out. Tried all grinds to try extraction times ranging from 23 to 35 seconds and always tastes awful and harsh. Probably more bitter than sour. Can’t see any channelling in the puck. Use WDT and razer. Purge hopper between changing grind settings. Keep beans in airtight container and use within 3 weeks of receipt. Really struggling to get this to work for me. What is your ‘sweetest’ least harsh bean to try please?

I'm no expert, just what I've read from various specialists but this sounds like you've got the wrong time of beans for your preference of flavour. Firstly make sure you are being freshly roasted beans which shows the date of roasting rather than a best before date. Secondly, aim for medium rather than darker roast to get a sweeter flavour.

Hi Kev, On your video about dialling in, you weigh the coffee to 19 grams, then use the razor to remove some but didn’t re weigh, therefore when you pull the shot there must be a little less than the 19 grams, maybe 17grams etc? Is that right?

Hi John, you don't have to do WDT, it just reduces the chances of chaneling, and if you want to do it you can do it with any pointy relatively thin implement, WDT is the name of the method, you can do it with anything pointy, really, and just one pointy implement will work, but if you have a multi pronged tool it's quicker to do. You don't have to buy a tool, pins in a cork will work. Cheers, Kev.

Awesome videos Kev. I am a total noob and have just purchased a barista pro after using a delonghi eletta bean to cup machine for almost 3 years. I started attempting to dial in today and started with the grinder set to 1, but literally no ground coffee came out at all. Is that to be expected? Also I am struggling to get the right dose amounts, with them being quite low unless i set the grind time quite high (17 seconds). I am a little worried my beans are a) a bit too old and b) too light a roast. But the no ground beans on setting 1 made me thing something was wrong?

Hi Matt, did you buy new or reconditioned? If recon, just take the top burr out and check what the internal burr is set to, if it's any lower than 5, try changing it to 5. Did it make a clicking sound? If so it's probably just too fine a grind with that bean. You're best off with medium/dark espresso blends with the Barista pro, or any integrated grinder machines. @Coffee Kev it was new, I think its just my beans. They've been sat in a cupboard in an unsealed bag for a few weeks. I was buying 1 or 2kg at a time and just keeping in the cupboard! Oops... I'm going to have a proper go at dialing in with some new beans at the weekend and will prob weigh them dose at a time.

I'm a complete newbie to this but I bought the Breville Barista Pro and a medium roast bean (probably my first mistake) and the coffee is ok but not great. I'll try a dark roast next time and see if I have more success with that. I'm still trying to dial in because I can't get the right amount of coffee out of the grinder. Way too much or way too little (so need to figure that out), and I didn't realise you can hold the button to increase the time.

So I bought my Barista Pro and obviously fiddled with everything without knowing what I was doing! So I went through the dialling in video and it turns out the factory settings were spot on: I was using Monmouth Espresso beans 17g, grind size 14, grind time 13 seconds, timing 25 seconds to give 34g of espresso. I guess as the grinding mechanism wears I will need to dial in?

haha, that's espresso for you. It's complex because it's traditional espresso, the pro is that when you get the extraction right the espresso is mega, the con is that you need to get the extraction right, which is complex. Ta, Kev.

Kev, thanks for this vid and the barista pro series, it's really useful. I was wondering if you were going to add to the series of vids at all? I feel there are a few things not covered as far as I can see, as follows: Number one, could you go a little deeper into the relevance of the pre-infusion part of the shot? I still don't understand what is happening, what the difference is in this part and the remainder of the 'normal' shot running. How long would be a good time for this part? You noted holding the button manually for 7 seconds for this part. Why? What would happen if you did 12 seconds, or 2 seconds pre-infusion?? Second, regarding the pre-infusion and then remainder of the shot stage, the user has control to adjust the length of time these run for. I still don't know how to adjust this properly for the best. You can do this blank with just water coming out, or with a real shot of coffee. Is the weight of the output the guide here to landing on the best times to set it on? In which case the user NEEDS to be using scales to re-program this bit I assume? So many questions but I'll leave it there. Videos covering these two things at some point would be awesome :)

Thanks Peter 😀. Thanks for the suggestions, I'll do these as shorts. Pre-infusion is the water being introduced to the puck under less pressure, before the full infusion. The difference is the pressure, so the puck is wet initially with lower pressure, and then in the main part of the shot it's at the full shot pressure. Re 7/8 seconds, that's simply the factory pre-set with the shot buttons, so if you're pulling a manual shot and you want to do the same pre-infusion as pressing the shot buttons, you'd do it for about 7/8 seconds (8 seconds press results in about 7 seconds as it takes about half a second or so to start from pressing the button). You need to re-program the shot buttons while pulling a shot, not just with water. In theory you could do the pre-infusion part with just water as this part is timed, but the rest of the shot is volumetric not timed, so trying to re-set the shot volume without pulling a shot is a bit hit and miss. Although, you can do this to re-set the shot to the max, and then pull your shots semi manually, just press to start, and press again to stop when you hit your desired yield, if you're using scales. The max pre-infusion time is about 10 seconds. Pre-infusion time is one of the things you can use to fine tune things as part of your recipe. Personally I'd just go with the pre-set pre-infusion for now, in the future when you've nailed dialling in, I'd then think about experimenting with pre-infusion time. Yeah you need to be using scales with the Barista pro. Cheers Kev

Back again, re the Express. Just bought one & realized while trying to set the temperature that I can't hear the beep when the beast goes into "advanced" mode. My wife can, and she tells me the wretched parrot can as well since he's imitating it. I wish they buggers at Sage/Breville had thought of beeping at a frequency that everyone could hear.

How many grams are you losing when you use the razor tool? If the grind is too course couldn't you be trimming too much and pulling sub par shots?

When you have the right grind size you'll usually find that at about 19g in the basket you trim little or nothing. If you dose 19g and you trim a lot it's a good sign the grind is too coarse. If If you dose 19g and there's a gap between the coffee and the tool that's usually a sign the grind is too fine. Doesn't always work like that tho as espresso can be weird at times! Cheers

Just thought I’d share a tip on preparing ground coffee in the coffee funnel. Once the coffee has been ground and distributed into the coffee funnel and portafilter, I then move it to my tamping station where I level it manually as best I can. Before I remove the funnel I very gently put the tamper onto the coffee. When I remove the funnel, the coffee is level enough for me to use my Wdt tool. I find that a light pressure on tamping and ready to go. Hope this is useful.

Personally i find anything above 18g for this 54mm bssket too much. Im getting good results at only 15-16g at 2:1 ratio with this machine with medium dark roast

I seem to be getting under extracted shots nomatter what, 38 grams in 40 seconds was very acidic and unpleasant, preheating the portafilter in boiling water didn't help much.

Preheat makes each shot consistent and don't forget there are the outer burr settings and the inner burr settings

I agree but if the Razor tool is to get it to the perfect amount, why weigh at all, use the Razor tool, grind size and time the pour/or get the honey consistency to dial in. That's what I do and it tastes like the local coffee shop that uses the same beans

If one is to accept that a consistent dose Volume is key to good/consistent espresso, and if one accepts that the razor is a good tool to achieve this, then I'm not understanding why you weight the coffee, surely you could grind enough by eye or time and then trim with the razor without the hassle of weighing.

I'm getting perfect espresso with perfect flavour using level 8 and 20,5 secs of grinding, default temperature, preinfusion of 8 sec and 30 sec total time. 18gr>36gr espresso full of crema and amazing taste not bitter nor acidic (lavazza crema e gusto beans)

I hate dark roast coffee and almost always drink light roast. I just bought the barista pro and it’s first espresso machine. I am ok with medium roast. So that’s what I’m gonna be using. I hope I can get it right. Cause dark roast just isn’t a option in my house. At all.

The beans I'd usually recommend with the Barista Pro are what I refer to as medium/dark, they're not super dark oily beans, they're what many people would consider the dark side of medium. You can use medium with these machines, it's just that "medium" does cover quite a range, so some medium may be a bit on the light side, which may make them a bit more of a challenge. Cheers, Kev.
