Hey, after some fishing trip I wanted to share how I dry my catch. I like to make couple dozens with this kind of fish during the summer and consume It the rest of the year till next summer.

Если жабры не вытаскивать, рекомендую вешать головой вниз, особенно если не промыв после соли. Выпущенная жидкость не будет с жабр стекать внутрь рыбы и портить вкус. If you don't intend to remove the gills, it's beneficial to hang the fish by its tail, especially if you don't rinse or soak it in fresh water after salting. That way the accumulated liquid from the gills won't penetrate into the fish ruining the flavor. Great video!

Glad to find how to do this in English, tried it before and failed, so I fiinally bought a couple at a Russian market I found and tried them... it's pretty awesome, much like beef jerky.

In my language this is "kidžukalua", but we only really do it in late winter/early spring when its freezing at night but warm in the daytime, and when there is this weather phenomenon called "ahau", which is like a dry and cold spring wind mixed with the sunshine. Also, instead of using a stick to keep the fish open, we flip the fish inside-out and hang it from the tail, so the salty liquid stored in the head drops out. We do other types of meats like this too, its great 👍

Thank you so much for this video ! I have been searching for years and years for this recipe. I use to have Russian neighbors in Brooklyn ,ny when I was a lil boy and I remember these fish strung up drying in the window n I never forgot how delicious they were . I knew when I saw u rip a piece off at the end of the video that This is the exact recipe I've been searching for all these years ,thanx so much! The only reason this isn't more popular here is because Americans dont know about it n how delicious it is . Better than beef jerky. Its the perfect beer snack ! Can u please teach me how to make Russian borch 😉

I’m from Texas and married to a Ukrainian woman. I love taranka and beer. My favorite is gustirka. I’m crazy for this. We have a fish in Texas called crappie or white perch I want to do this with. I think it may be the best salt dried fish anywhere.

Literally any fresh fish that's the appropriate size. If you don't mind waiting longer you can use a catch of bigger fish too. An important part of any type of preservation is making sure the whole batch is fish that are around the same size. Having one fish tiny and one huge will make for a very inconsistent final product.

Hang them sideways. Just put their gill plate over the string. They will dry faster
