Bamboo shoot is known as a super food now. It has been a part of north eastern Indian cuisine since ages. Fermentation helps in preserving our precious bamboo shoots. Hope you enjoy the video !

And store where?after putting it in the container?room temperature or on top of fire hearth?

Dats how we arunachali keeps d bamboo shoot fermented so dat we cud use them later in meat....😁

Once I cooked a piece of bamboo shoot using proper condiments but could not eat because it tasted bitter suggest me how to cook

Boil in pressure cooker for fast boiling or just boil

You are not suppose to cook it alone. Mix with pork or other veggies

I tried the process and the bamboo shoots on the upper part of the container turned brown after a few days. Are they still ok to eat?

Same...then they all turned black. Had to throw it away :(

May be the container was not air tight or you did not press the shoots properly 2:30
