I worked in the fishing industry and although this fish looks fresh, I never like/recommended getting a fish without a head. You can see how fresh a fish is from the color of the gills, so if they are removed...you can't be sure if it's fresh.

In my experience, you can tell freshness of trout and salmon by testing the strength of the meat. If the rib bones come out when you open the fish, no good. If the meat feels good and the bones stay intact, then good.

@@alextchieng7621 sometimes the meat is just soft though. You’re not gonna tell me the fish I just caught that day and threw in the cooler as soon as it was caught is not fresh just because the bones popped out when i cut it. I’m assuming your talking about the pin bones because yeah those stick up sometimes. If you’re talking about the actual rib cage then, no I can’t say I’ve had that happen

@Thomas Flores you ever caught kokanee? Put em in your live well for a couple hours. The meat will start falling apart. Used to catch em at night. When we got home, rib bones would be separating from meat. Now we put em on ice.

When the head isn’t shipped that’s a clear sign of the fish possibly being old. Also I’ve seen fresh gills shipped with old product with no head. As a fish monger for the past 12 yrs it’s the oldest trick in the books. Not only that, but you are being charged for the head

He started copying the signature moves and distinctive features from all the top tiktok chefs, max the meat guy, the sgt. Gilbert one, the other guy with the perfect loops etc.. one or two from each chef and cram all of them in each of his videos to the point of confusing people by mimicking them so shamelessly. His videos're like mashups. So unoriginal. Thank God he's starting to relax a bit but that's how he got traction. No such thing as bad publicity as long as one can trigger the yt algorithm to force his videos to be shoved in the faces of people who were already watching cooking and recipes shorts.

In the Philippines if you buy fish at the wet market, you can tell them to get the stomach and the fish bones but the big bone that connects to the tail is not included. But with a milk fish, there are still fish bones at the sides.

I've worked at one of the processors that likely chopped that things head off. I worked the "slime line" that was responsible for making sure the guts were removed properly and the artery along the spine is gone. It was fun work.

I typically drive to the Copper river to get Copper River Salmon. Kenai River Reds are my favorite though. But to be honest Silver and King Salmon are both tastier.

The outfit I fished with a few times sold all of our H&G to copper river. We were in Egegik, a small fishing village on Bristol Bay. That is most likely a Bristol Bay sockeye. Also cooking tip, for salmon anything above 125 is considered overdone.
