Take the leap! You can always store it in the freezer for quite some time (after you've cut it up), or invite some friends over for a big dinner.

One of our favourite fish to eat. We usually throw it in a pan with soy, honey, ginger & chilli... and a bottle of white to match, natch.

Despite the comments here this just shows Jamie Oliver is a true chief when it comes too food. Filleting a fish & not just showing us how too cook it & eat it. Don't throw that skin away! Peal the scales out, cut the skin in slices, and fry it crispy on a pan, like bacon. It tastes so good!

You can remove the scale BEFORE doing your filet as well ! Way easier ! You just have to be careful not to put too much pressure, else you'll break the meat. You can buy a tool to remove scales in pretty much any cooking shop. They cost little and make magic !

My first job was selling seafood at a farmer's market and this video almost makes me miss the job! I learned how to fillet a fish (I figured why not learn if I was selling it anyway). I left the job knowing how to fillet salmon and halibut which helps so much when trying to eat nice fish on a budget.

That's a nice guide. I personally like to use a more flexible blade and I dont cut the head off.

i've just moved to dubai and salmon fillets are CRAZY expensive here so i've started buying full salmons instead. this is so helpful, thank you! 😊

THIS WAS SO HELPFUL! I go fishing for trout but I was never that good with filleting them so I always left the fish gutted. I cant wait to try this out the next time I catch trout.

If you want nice salmon steaks, take filet with skin on, cut it about 4cm wide and than cut the meat in the middle without cutting skin, than fold it that skin is in the center and meat on both sides. Olive oil, lemon zest, soy sauce and tiny bit of pepper, 2 mins on each side.

A Norwegian chef demonstrated how to get all the scraps off a salmon skeleton - drag the edge of a fairly large spoon along the spine and bones to scoop up all the scraps, not hard to figure out what to do with the paste like meat, omelettes, spreads etc. Shocking amount of fish meat is wasted by not doing this. Don't forget the cheek meat too.

When you're getting the skin off, just make a small cut by the tail with the sharp edge of the knife so that you can get a grip of the skin, then use the backside of the knife, angled downwards to "jiggle" the skin off, instead of actually cutting it. It leaves more meat, making the skin come clean off, giving you SO much more flavour and more meat to cook!

Great video! Can you show is how to butterfly a chicken Jamie? I think it would mean that you could roast a chicken much quicker than normal?

you roast is quicker because its much thinner cut and you get it crispy as well. what you want to do is take your chicken breast and place on hand on top while you slice through the middle stopping when you get to the other side, at that point you "butterfly" the chicken and open it up into two symmetrical pieces. From there you just grab a rolling pin and roll the chicken out at thinly as you would like. Look up Gordan Ramsay's video on stir fry, he shows you how to do it.

I would love to see more videos where you teach us how yo cut the perfect steak of meat... and videos where we can learn all the things we need to know for becoming professional chefs, like how to cut vegetables... and how much oil we have to use to cook fish or meat or vegetable, when do we have to remove it from the heat, how to know if a steak is perfectly cooked without cutting... things like that basic things for the beginners at cooking but so so important to know. Thank you so so much again.

When skinning fillets try angling the knife on a 45 into the tail end about an inch up from the end don’t cut through the skin ! Grab the little tab u have made with one hand and with with pressure on the blade still with the other don’t move the knife but rather pull the fillet while wiggling it left to right ! Perfect skinless fillets every time

Beautiful job! It was a pleasure to watch. Long time ago I read about the ways to take off the salmon's skin and one of them was to put it on a hot pan, skin down, for a short while and then you gently peel it and it comes off. I did it and it worked. I guess the fat melts of sth. Do you think it's a good way to get rid of the skin? hugs

Only if you plan on cooking the fish right away. Otherwise I would cut the skin off with a knife. You have to always remember that bacteria thrives in low heat temperatures. That's also why fresh fish is always being kept on ice.

People like variety, trout/salmon are relatively easy for chefs to learn to fillet, but if you opened up a resultant that served Pike Zander Perch and many others after acquiring a specialised chef who is trained on filleting these more complex fish, it would open doors and untapped markets.

Great instructions Jamie. It's important to add: Get the salmon gutted and scaled when you buy it. It's a nightmare to remove the scales at home - they go everywhere!
