So for all of our backcountry and interior trips for the last bit we've been using the freeze dryer to make powdered eggs to take on trips. These eggs went into the freeze dryer raw, were powdered and all you do is add water and cook!
You definitely save money when it comes to how much you can make compared to buying bag of powdered eggs for $8-12, especially for bigger families like mine.

Liked seeing them cooked from the final product..... You can crush them to near the same consistency once they are in the bag.

I make a parchment paper boat in my trays when freeze drying liquid foods. It helps with the clean up and also makes it easier to transfer the finished product into it's containers.

Interesting! We tend to wash the trays anyways after each session as sometimes whatever you make leaves a smell in the tray (bananas are the worst lol). But that would be useful for sticky items too! We do have the Harvest Right silicone mats also that we use for a lot of non-liquid foods.

Really enjoyed this video. We have a Harvest Right and love it. What other foods have you made for camping? Have you done any meals? I would love to see more of this. Meats and meals especially.

They stay good for years if sealed with an oxygen packet properly! We have chickens as well and do the same!

Helpful video, thanks! Do you ever fill the trays more? Have you ever baked with reconstituted eggs? Did you buy the pad for your freeze dryer separately or did it come with your model? I have a large and don't have a pad.

Hey! You could add more egg to the tray but we always add a certain amount as the dry times differ the more you add. We haven’t baked with freezedried eggs although now that you’ve said it I think I’m going to try! The pad we purchased separately although I believe you can get kits for each size that come with different accessories.

After you seal your bags, do they just peel open, or do you have to cut them open?

Depending on the type of bag you could do either but typically just peel them open :)

Are you still happy with the freeze drier? I almost bought one but heard horror stories from Canadians. Some who purchased one and had issues with warranties. Others with the drier not lasting long.

Yup! We love it! We’ve never had any issues with warranty and they’ve honoured all of our previous warranty claims on both machines without any problems. We’ve had these a couple years now and no issues.

What does everyone prefer? Freeze dry raw eggs into a powder like in this video or cook and scramble the eggs and then freeze dry them?

Good question. We’ve done it both ways, in this video they went in raw but I actually prefer it cooked first than freezedried. It’s just a slight difference in taste/texture.

Depends. If I am going to use them for recipes, raw. If I am going to eat them cooked.

Definitely freeze dry raw, prefrozen. The cooked scrambled FD'd tends to be a little chewy/rubbery. Raw FD'd scrambled are perfect and can't tell they were FD'd.

Just for anyone reading this now, in November of 2021, you can put up to 18 eggs in a tray. ALL of the trays are the same size for all of the units... it's just the number of trays for each size of freeze-drier, 3 for the small, 4 for the medium, and 5 for the large.

all the trays are different sizes. The small trays are smaller both length and width than the med or the large trays all you have to do is to look it up.

You put the oxygen saver packets in and they stay good for years when unopened

We order them from amazon.ca, you can get a good amount for a decent pricing on there. Lots of different options 🙂

They have recently jumped in price due to covid, I used to be able to get 50 of the thick bags for $18, now they are nearly triple that cost.

They have little oxidization packs you throw in the bag, they keep for quite a few years when sealed.

How would a regular freezer draw out all of the moisture from something?

@@WildCanoes I saw a video, the temp in your freezer has to be the right temp you're supposed to put things on racks so air flow gets to all sides and leave it for a week to freeze. I haven't tried it but supposedly it's supposed to work. I just Google it.

That would give the food freezer burn but that’s about it, the air flow to the sides of it would just give it that gross taste. It would still just be frozen at the end of the day, and once it thaws afterwords it would just taste gross. The dryer portion of the freeze dryer pulls out all of the moisture from a product, without that it’s just a freezer.

In this case you wouldn’t need to since the eggs are going to be used to replace raw eggs. The freeze drying process kills/inhibits any bacterial growth.

Exactly, and once we scramble the freezedried egg powder we are cooking it anyway which would get rid of any bacteria that freeze drying didn’t already eliminate.

No your correct, but freeze drying does eliminate some pathogens and reduces the chance. Also, we don’t eat raw eggs as I’m sure many don’t and once cooked it’s safe to eat regardless. 😅
