This is how to get plates off the table and move customers along.
So if I'm a customer, I want the plates out my damn way. I don't want to sit amongst dirty plates that no longer serve any purpose. Some restaurants (and guests) are weird about this. They may want you to wait on every single person to be done before busing. This way no one feels rushed. I get it. But it's still absurd. And there's a way to clear plates without drawing too much attention to the person still eating.
So no, I don't wait. But there are exceptions.
I wait for a 2-top. I want each person to be done.
Especially if it's a date. Especially, especially if it's a first or second date. I wait for BOTH to finish.
NOW ON PREBUSING
THIS is how you move people along. Never rush a table, never. But of course, you want them to move on. So when I notice a guest isn't real active in their dining, I'll approach and ask if they're done. "Still working on this?" If they hesitate, I don't immediately back off. I'll wait and USUALLY they're like, "mmmm, OKay, yeah I'm done."
I see coworkers let people pick at their plates for three hours. Nah.
Of course, I never get an attitude with anyone about it, but I don't cater it.
NOW ON HOW I PREBUS
*The same way I drop plates.
I don't get my elbows in people's faces, I hold the plates properly (this is also to make carrying the plates either which is discussed in next video).

The date example was a huge help. I often miss out on social queues due to growing up with hardly any social interaction on top of potentially being autistic, and as a new server it helps that you're showing both sides.

I know it's an old video, but you never want to ask if they're still "working" on their meal. They're enjoying the food and experience, not clocking in to eat. Therefor, I find better verbs to use: Enjoying, savoring, relishing, etc. "Are we still enjoying our meal(s)?"

I never felt a welcome plate of food a few minutes before was an imposition when I was done eating. I think clearing plates is a subtle way of letting the patrons know it’s time to move along….

I'm not going to lie to you, I do pile them 😅 but the big question is how do you avoid the forks, spoons and knives from falling? Regardless of how I hold the plates, they still fall from them from time to time, which is embarrassing 🙄

I think I have been putting too much weight on my pinky finger. Can do four plates pre bussed and keep it classy. I always put the knife through the fork prongs, work's well. I love to aggressively clear when the function guests must leave. Nothing is left. Blowing out candles says a gruff, " goodbye. Now."

At a formal restaurant you cannot clear any plates until everyone at the table is done.

Correct. This training is not for fine-dining -- more for an American style, nice, but relatively casual restaurant.

I don't try to make people leave -- I'm just quick to get plates when they're done eating. This often moves them along but they can stay a while if they want.

Instead of open arm taking plates off of the table, shouldn't you walk around the the other side of the table to minimize reaching over your customer(which makes them feel uncomfortable). Now if you have a booth against a wall obviously you can't do that. But I was thought that you walk around the table to get their plates. And likewise for a round table.

yeah! absolutely walk around - this is more if we're against a wall/ booth or if it's just a super busy more casual restaurant. and ideally if I am reaching over guests, I serve guests on outside first so I'm not reaching over other plates.
