Ingredients
4 lbs oxtails
¼ cup Jerk Marinade Store-bought Walkerswood is a good alternative
¼ cup apple juice
2 tbsp apple cider vinegar

i like pecan or oak. of the fruit woods i prefer apple

This looks good, could you rate your tenderness on this method for preparing oxtails? from 1-10 (1-not tender, 10-fall off the bone)

@@christopherl.2593 I’d say an 8 but that was intentional. I could have cooked it longer wrapped for a 9-10 but I prefer my meat with some texture vs super soft like vegetables

​@@FoodFidelitythanks for the tip I am going too wrap my tails next time . I usually put them in a half pan with beef broth covered with foil but I like this option too

I liked the idea of smoking ox tail but that looks really burn to me.

not at all. Can't burn these at such a low temperature. The color is similar to smoked brisket and the color comes from the jerk seasoning paste.
