Most walls I see IRL are usually flat and don’t have random gaps.

i agree with using small parts. i suggest to not use anything bigger than a 1x2 brick

Tbh, just throwing random small pieces together at various angles is noisy, and that doesn't automatically make it good. Sometimes some good structure can help a lot Randomness does not equal detail
