Set of 4 pink Wheat/Straw bowls (unbreakable) : amzn.to/2Zzj2Tf
Hand Held Mixer : amzn.to/2ZICpJj
Sieve : Purchased from Home Bargains for £1.20
Recipe for this 6 inch round Christmas Cake:
225g of Currants
75g of Sultanas
75g of Raisins
40g of Glazed Cherries
40g of Mixed Peel
(steeped in 2 - 4 tbsp of Brandy)
110g of Plain Flour
110g of Butter
100g of Muscovado Sugar or Soft Dark Brown Sugar
2 eggs
1 and a half tablespoons of Black Treacle (Molasses is a great subtitute for Black Treacle)
1 tbsp (optional) of Golden Syrup
Pinch Nutmeg (optional)
half teaspoon of Mixed Spice
Bake for 3 hours in pre heated oven 140c / 275f - Gas Mark 1

as a 74 year old man I have never made a cake in my life but I wanted to learn in memory of my late wife - this video made it so easy to learn how to do it - my result 1 nice (not perfect) cake that I am sure my late wife would be pleased with - thank you so much. shows you are never to old to learn something new

Hi thank you for the tutorial. But I want to know, do I brush brandy over when cake is still hot to soak in faster?

Feeding the cake with brandy is done over a period of time. You can soak when warm but it will need feeding a few times prior to decorating or eating. Check out my video on how to feed Christmas cake xx

Thank you for your lovely comment. I would recommend fresh orange juice as a great non alcoholic substitute. Again dont over do it, between 2 to 4 tablespoon will be enough. Anymore than that will make it too over powering. Hope that helps? Xx

I put loads of apricots in my cake .fig and dates.i don't put raising or currents in the mix or mix peel.

Sounds lovely, there are so many variations... this is a Traditional British Christmas cake recipe, with traditional currants sultanas and raisins. I believe in Scotland they use whiskey traditionally and here in England its predominately Brandy. In some countries they even use pineapple. xx 🥰

Hi Dev, happy baking 🎂. I've heard of christmas cakes lasting years, but in order to enjoy it at its best, I would suggest eating within a 3 month aging period.

Hi, the baking tray you use is 6* 3 inches or 6*2? I have heard in 6*2 trays is for 500g. If so what are the changes in the recipe. Please advise thanks

Hi There Dulanga. This recipe is for 6 inch cake tin 3 inches high. It will be fine, just use same recipe. It will fill the pan to the top and will just need your baking times extending. Hope that helps? X

Thank you so much for your recipe. My husband is English and we live in America so he always liked to have something from home but I haven't been able to make a decent one in our 23 years of marriage after several attempts so I gave up. I'm determined to make one this year with your recipe to make him happy. We don't have Black Treacle here so my husband told me to try with molasse so again not sure how it will come out. I want to make a small Christmas cake this year for a couple I'm friends with, and your recipe is perfect. When you feed the cake with the brandy, how much do you pour over it? Also, I live in Australia and we have some delicious dessert wines that would go very well with Christmas cake, such as Orange Muscat and Tokay. Do you think I could put Orange Muscat in the the fruit before making the cake? The other thing I wanted to ask is are there recipes for glace peel because the stuff we get here is inedible!! Hi Amanda, firstly Muscat would be great with this recipe. (Although Brandy is just a little more traditional and fuses slightly better with the decadent flavours of the cake), just Soak the dried fruits prior to baking in around 3 Tablespoons of the Brandy or Muscat. After baking I'd feed the cake with 2 Tablespoons of the dessert wine/ or Brandy once a week up until start of December and then one final time before decorating or cutting. Yes mixed peel isn't great to eat right from the packet it's bitter and strong. Trust me though, once it's soaked overnight and baked in this cake, the flavour is subtle and the peel softens and becomes more delicate. It does add the perfect balance, to make this cake amazing. If you're unsure just add 10g less. But I would recommend adding it. Hope that helps. Please let me know how it goes? Happy Baking 😊 🎂 xxx

Hello! I just came across your channel, firstly, congratulations on your new home! I’m also in the process of moving into my first property, I’m disabled & I’m moving into my own little bungalow & I can’t wait! My parents love Christmas cake (& I’m afraid I don’t.. I know I know! But I’m eyeing up some of your other delicious bakes instead for a little cake treat this Christmas !) - my mother sadly got diagnosed with dementia this year, but I’d still love to keep things as normal as I can. She was always the cake baker so I’m a bit daunted, so I’ll be trying your Christmas cake recipe! Just a few questions; does it matter really on the size of the tin? I’d rather use what we have so I just wanted to check. I think ours are just wider & flatter, unsure on size until I have a rummage, but wanted to check regardless. Secondly, is 140C for fan assisted? Thank you so much! Take care xx

Hi Laura so pleased you found me 😊 Wishing you happiness in your new home too. How lovely of you to continue your mothers tradition of Christmas Cake baking. I'm sure you'll do a wonderful job! Interestingly enough, I will be uploading a video on Monday just for beginners, on what equipment you'll need to make your first ever Christmas Cake. I do cover cake tins in that video, so hit the bell and you'll be notified when I upload. I would recommend investing in at least one 6 inch or 8 inch cake tin that is 3 inches high. Otherwise if its baked in tins that are shallow the baking times will be less otherwise it could burn. And finally in answer to your question on temperature, yes its 140 if it's a fan assisted oven. Nice recipe, very sensually presented 😁 Just to ask what would be the temperature if using a fan assisted oven. And what if I decided to cook this in a halogen oven, what would be the timings and temps to suit.

It's 160 degrees if fan assisted Cazza. I am unsure on cooking with Halogen so would not be able to help you there xx

My 6 inch cake came out rock hard at the sides. I had it in the oven at 325 convection heat for 2 hours 30 minutes. I think for my oven I would check it after 1 hour 30 minutes. It taste great but crunchy so I am going to try again and bake it less time.

I think your oven is on too high try turning it down to around 140c if fan assisted or 275f. Hope that helps ❤🎄 x

Absolutely loved this simple yet detailed video. Have my fruits soaking and gonna follow your recipe to the T. A question though, I'm using and aluminium cake tin for baking. Can I cover the outside of the cake tin with plain aluminum foil instead of greaseproof paper?

Welcome Belle, you'll need a 3 inch high cake tin. Oh and I believe you can use molasses as a substitute for black treacle. If you decide to try this cake, please let me know how it goes ❤

Only my husband and myself here for the holiday and this 6inch size should be perfect. Yes, I will let you know how the cake turns out. Yes that's right, my recipe doesn't use raising agent. The reason for this, is first, because the taste and texture without raising agent is superior and secondly, sometimes the large amount of fruit and the use of a raising agent, can cause the cake to rise too much and fruit to sink. This cake looks amazing but I just have a few question. 1) If I wish to add nuts, how much, how and when do I add them in the batter. 2) Are there any other alchohol that I can use in this recipe for both the soaking & feeding? Firstly, thank you very much for your kind comments 😊 Of course you can add nuts to this recipe, I'd suggest chopping them rather than leaving them whole and to this particular recipe I'd add around 50g - 60g. Add them to the batter at the same time you add the fruit. You can use your favourite, but traditionally Brandy, Whiskey or Rum work so well with recipe. I hope that helps? Happy Baking ❤😊

I made your cake last week and it was lovely it was eaten the same day by every one, but was made with only orange juice they want an Amaretto one for wedding thanks again for your help ❤️

If you're intending to feed the cake with Ameretto, leading up to decorating the cake I would not do it as many times as when using Brandy, as it may overpower the cake. Instead I'd suggest doing it once or twice only. Hope that helps xx

You'd need to increase ingredients, so you're better off using my 8 inch christmas cake recipe if you have a 7 inch square tin. If you only have a 6 inch square tin, when using 8 inch cake recipe, there will be a little left over. So you can always make yourself a little tester cake too. X

@@bakersfun5480 You can, but it wont be a high cake and will also require less baking, as if you leave it in the oven the same time as the high round six inch... you'll burn it

Absolutely, they sometimes vary in quantity of ingredients but they are the same spices. Hope that helps? X

@@MysteryBaker Thank you😍. Ma'am I want to know if we can feel the brandy in the fruit after baking the cake. I gave someone my fruit cake and she is saying she can't taste the brandy in the cake. I am a bit puzzled. Do I put a lot of brandy in the cake? I followed what is required for the cake. So I really want to know ur opinion ma'am. Thank you.

@@bakersfun5480 You won't get the boozy taste in the cake, just by soaking the fruit, the night prior to baking. You need to feed the cake afterwards. Here's my video explaining how to feed your cake and why you need to feed your cake with Brandy kzfaq.info/get/bejne/r7plbLxitaebj4U.html

@@MysteryBaker ok understand. My customer ordered last and ask me to deliver the cake this week. In that situation I can't feed the cake. I only did once coz I baked it a week ago. If this is the case, how to handle this situation maam?

@@bakersfun5480 Im not sure if I'm understanding your question fully. Just ensure you make the cake a minimum of a week in advance of when the cake is due. Then feed 1 - 2 tablespoons of brandy daily for 6 -7 days. Hope that helps xx

Teresa, here in the UK we don't use cups in our measurements. I will keep in mind for future recipes. You could still try to make this cake, if you could get hold of some weighing scales. Happy Christmas 🎄🎅🎄
