I’ve found that flipping the “slate” of sugary items like these once it has become solid helps immensely to remove the residual moisture - and reduce drying time - which is usually at the bottom.

I love your videos and am learning so much. When you make the videos breaking down the cost, could you include the cost of the bag and oxygen absorbers? Also, I learned in Home Economics that you need to use the liquid measuring cup for liquid ingredients and dry measuring cups for dry ingredients because they do measure differently. It would help for consistent results with your recipes too. Thank you!!

Love the video, but what about drying the fruit without a slurry. Less volume, but also less dry time. I'm wondering which is more economical.

I have an experience of drying fruits and vegetables in my dryer, which is 6-floor rack with ventilator and heating element at the bottom. Each rack is grid/net like round ABS plastic with 39cm diameter and 4(or 6cm) height. Each rack can dry up to 2-3 kg, depending how dense you place minced/cut products. My dryer is the cheaper copy of famous dryer Ezidri (made in New Zealand, costing around 1000 USD for 30 racks plus all accompanying accessories), which (Ezidri) can dry up to 30 racks at one time. Cut fruits or vegetables are dried up to 12-36 hours, depending how much you put on rack (spacing) and how small you cut them. But minced sweet fruits (like paste or purée consistency) as in your video will dry longer. It is not because of water content, as all fruit and vegetables have up to 70-80% water content, whereas greens have up to 90% water content. It is the because of sugar and paste like structure. Sweet paste like masses are hard to dry, because water is strongly tied to paste like mass (hence need more time to evaporate it) rather than water in ordinary cut same fruits the above paste is made from. I experimented with apple sauce. Made 2 different versions. Ground raw apples in blender and dried the apple paste in my dryer (first version). Then ground raw apples and added (up to 20-30% weight) ground cooked/baked apples (it is second version). So first version dried in 15- 20 hours depending on thickness, and second version dried in 20-30 hours. Because baked apples acts like glue plus they are sweeter, so it is harder for water to evaporate. But this apple paste/sauce is more flexible thanks to its glue like structure, don't crack when dried. So good to roll them in tubes and to give children as sugar-free snacks with natural fiber(apple pectin) in it.

That's what we intend on doing It acts as a great ingredients for cooking I intend on powdering based on what I would actually use in a smoothie Making a meal in a jar

These powders are an awesome idea! We don’t give our children and food with dye in them like red 40 blue 6 etc… so I can use this to add coloring to bake goods!!

It depends on the fruit. It can also vary from batch to batch depending on the fruit itself. Best method is to determine weight before and after fding

wow this is incredible. sooo much effort went into this video, i a so humbled and grateful. making fruit and veg powders is the exact reason i want a harvest right! i LOVE that vacuum sealer machine you have. would that work for vacuum sealing fresh green juices in mason jars? i want this for when i batch prep my juices. they will stay fresher longer in the fridge if i can get a serious vacuum seal on them. rn i just use a cheapie hand held pump with special lids to vacuum seal. works decently for now.

How long do you think the powder will keep shelf stable? Will it begin to clump like dehydrated powder? I would love to do think I'm just curious about the life of the powder?

I have powder that is several years old and not clumpy. Certain things will be clumpy over time however.

I have not tried to do this with dehydrated fruit, but my guess is that it will not get to a fine powder like freeze dried. If you try it, I would like to hear the results.

The nutrient density in those jars is really high. The amount of space needed per the nutrition available can't be beat. We have replaced all of our wheat/beans that take up a lot of space with freeze dried meals and ingredients. A good water filter is as must.

You will still have to cut the fruit into smaller pieces, or it will take a very long time to freeze dry or not at all. It will also be much harder to process into powder

Having an issue with freeze drying sour cherries, they are still sticky but dry, after 40 hrs of dry time. Any advice?

Cherries can br tricky. I would just keep adding dry time. Things like cherries, strawberries, watermelon, mango etc. can take 60-80 hours.

So the other day I did some bananas and some candy. I have done this before with no issues and it usually takes 16 hours. Well this time it only took 11 so it stopped while I was still in bed so it started refreezing. Well it made the bananas start reconstituting and made the candy sticky so I added more dry time. Well all the candy came out fine but the bananas were freeze dried on the outside but squishy on the inside. I threw them all in the freezer thinking I’d just throw them in a smoothie and that squishy center won’t even freeze. Have you ever experienced anything like this? I also had the bananas on the top shelf and it seems like things don’t do as well on the top shelf.

You can manually turn on the heater function in the diagnostic test mode, but i feel this would be a waste and also may not be very good for the machine.
