Save my recipe for Beef Stew! This hearty stew is a perfect Fall recipe for those cold evenings. Start with cubing 1.5 - 2 pounds of Beef Chuck Roast, season with 1/2 tbsp of salt, 1 tbsp of Worcestershire and 2 tbsps of flour to coat all the beef. In an large pot heat 2 tbsp of avocado oil on medium heat high heat and sear the beef a few minutes on each side to form a crust. You most likely have to sear the steak half at a time to not over crowd the pot. Remove the beef and add another tbsp of oil, 1 cup chopped onions, 2 cups chopped celery and 4 minced garlic cloves. Cook on low heat for a few minutes and then add a sprinkle of oregano and 2 tbsps of tomato paste. Cook for a few minutes before adding 32oz’s of beef stock. Cover with a lid for 30 minutes. Lastly add 2 cups sliced carrots and 4 quartered yellow potatoes, 2 cups of water and 1 tbsp of salt

Dutch oven's work the best in an oven. They're the original slow cooker and you won't get stew burning to the bottom of your pot like you do on the stove top.

You could literally dump it in at the end when removing the stew from the heat and the stew + dutch oven would have enough residual heat to remove all the alcohol from the dish.

So they use the beef broth , and she should stay away from beef Bourguignon that must be made using wine . Also if you cook with wine use a wine that you would drink , avoid using cheap wine it will affect the flavor of your dish .

We did beef stew a lot in northern & midlands in England but we had vegetable shortening dumplings and some more variety of veggies. Like runner beans, celery, peas, red onions and white, canniloni beans, or black eyed beans, turnip and swede much more variety, even lentils.

We are an alcohol free house as well so when a recipe uses beer or stout I do whatever I have. Coke,root beer cream soda works really well. If it calls for red wine, the best thing I have found is a 100 percent grape juice or for white wine, white grape juice.even better if you can make your own grape juice and just reduce it down and let it cool to room temp before adding it to your recipe

I deglaze the pan after I sear the meat with homemade chicken broth. Then, I season, flour and saute my vegetables (except potatoes) separately. If you don’t use very high temperatures, alcohol takes up to 3 hours to cook off and that’s only if you don’t use a lid. Better use dealcoholized wine.

This is similar to mine, but I add a bottle of beer to mine. I also make a roux with 1/3 of a cup of flour and 1/3 of a cup of avocado oil and cook it to medium darkness. This makes the stew gravy-like, not soupy. I also like to use bone-in beef short ribs and I will add beef soup bones too. The collagen from the bones adds more flavor to the stew.

Just made this in my Instant Pot. Smaller portion though. This is really good and I’m not a stew fan. Since I did it in the IP, I had to add a cornstarch slurry to thicken it. Beef is tender enough for my mom to chew. Perfect for a chilly day👍🏽

The Alcohol is cooked out especially in a recipe like this but you can also purchase non alcoholic wines to use in these scenarios because of the flavor it offers. I use them often and it tastes the same as using real wine.

The evaporate point for alcohol is 173 degrees. In this video she has the stew cooking at a simmer (over 212 degrees) for well over an hour. I stand by what I said, but the alternative is to simply use "cooking wine" which is alcohol free

That works ok, but maybe try two suggestions: 1. Don't ever use your lined dutch oven with direct stovetop heat. The lining inside will eventually fail and you can burn the stew too easily. 2. Instead, always use the Dutch oven inside an oven, with temp set for braising (never over 250°f, preheated & pre-oiled). Prepare all ingredients exactly as you did in a good cast iron or other non-teflon skillet using the stove top. When everything is fully prepped and combined, pour the ingredients into the Dutch oven and bake until ready to add the carrots. Return the covered Dutch oven to your preheated oven and cook until done. It will likely take an hour more or longer than your stovetop cooking time, but the incomparable texture of the meat without any chance of burning will be the payoff. Thanks for your great video! 🙏

Looks great. On beef stews etc I always add some bay leaves and whole all spice. Also more onions, and I do not add flour to the meat, rather at the end to thicken the gravy with a flour/water slurry. The extra onions usually thicken the gravy nicely.

I made a very similar beef stew in my slow cooker yesterday. Because I am concerned about my blood pressure, I added a tiny pinch of salt and used no salt-added beef broth. It tasted fine without the salt. A healthier choice especially for older adults.

I have the same white Staub Dutch Oven and I use for almost every meal. Made a beef and barley soup just the other night. It started out almost identical to this.
