Hello There Friends, Today I will show you what a REAL RATATOUILLE is!! Not to say that the one from the Ratatouille Movie was not beautiful, it's just not the Authentic Version. Everyone on KZfaq loves to recreate the movie version whereas I will show you how to make the Real Ratatouille. While also adding a little flare to it at the end so you can also make it look fancy! To the contrary, Chef, you do not talk too much. A good teacher explains things; a brilliant teacher explains it thoroughly as well as makes it enjoyable. You do all that in the most natural, friendly and humorous way possible. Brilliant!

Yes, FANTASTIC! And, you've vindicated me, dear Chef Jean Pierre! I'm a lifelong fan of Ratatouille, having lived and traveled much in Europe as a child. My mother taught me to sauté each vegetable ingredient (except the tomatoes, of course) separately, to caramelize!!! (I would add individual herbs de Provence to the individual sauteeing veg. This was to layer the herb flavors!) It is so beyond delicious, this fabulous vegetable stew. Makes Lent and Advent fast periods A Treat! Now, my most grateful thanks to you for showing and teaching us how to "glamorize" the plating! Last but NOT least. Please, most humbly I ask you, never say about you talking to much. I know I speak for all of us. WE NEED YOU TO TALK. About the instructions & teachings related to the food being prepared. About the incredible cultural contexts which enrich our understanding, our souls and make joy for us when we learn about you and your life and adventures. I could see you in the airport with your black bag full of 10 kilos of herbes and the sniffing dogs heading your way. I started laughing. Then your punch line: dogs turned away from you to go elsewhere. Of course, Heaven was with you. Plus, of course, all the great plastic lining in your special black bag? LOL we are not complaining because he talks too much....but he does and we love it....can you imagine him at a party....he would be the hit of any party.....wonder if he talks that much at home? Wonder if his wife ever gets in a word LOL.....he is so cute when he cooks and talks a mile a minute and says something about how someone else cooks and then he kinda apologizes and says that's ok, you do it like you like to do it, I'll do it my way.....he is still the best Chef I know.....can you imagine him & Martha Stewart in the same kitchen.....? I know it’s therapy for me too! PBS was like this for me when they had all the Chefs that did step by step cooking like Julia Child and Jacques Pepin, but it’s not the same anymore. I miss the good old days for tv.

I remember watching ratatouille with my grandmother who at the time owned a bar and restaurant. I asked if we could make it and the next thing I know, we’re at the restaurant depot shopping for ingredients. We made it and it was amazing. We made plenty extra and it was a special for a week. Everyone loved it and that’s what sparked my love for cooking.

Finally, someone said it out loud: technically ratatouille (and/or tian) is a stew. Every once in a while we all have tasted a more flowy stew and discovered it tastes the same and has (basically) the same ingredients. I would never order a spoonful of vegan stew in a restaurant, I don't care how perfectly it is layered.

Honestly, the people who say you talk too much can beat it if you ask me. Clearly shows your passion for not only the art of cooking but for teaching as well. You not only teach me how to cook, you teach me how to live a full life. You make no apology for your own personality when others say you talked too much. You did your best to teach others how to cook and yet there are people who nitpick and you tell them to watch another channel. You did it with a smile. I know friends who try to please everyone and ended up with a miserable life.

Chef, if you didn’t do any talking, I wouldn’t do any watching. Lot’s of other channels show you how to cook, but you “teach” us how to cook and you do it with perfection, humility, and humor. It’s always so enjoyable watching and learning from you! Thanks for another terrific recipe.

You don't talk too much, chef JP. Out of all the chefs on You-Tube, you're the best and easiest to follow because your commentary simplifies everything so that even a novice cook can follow. Also, its easy to learn from you because your friendly commentary, stories and demeanour humanize yourself to the point its not like were speaking to some sort of expert chef whos skill we will never be able to match, but more like a kind uncle who loves teaching and spending time with you. PS. Also I'm sure some of the viewers find French accents sexy, so that's another reason to speak to show off that magnificent voice.

The only way I can deal with the fact that there are dislikes on this video is by believing they were left by professional chefs who were dirty about Chef calling this a REAL Ratatouille. Keep up the good work Chef. Never had Ratatouille before but this makes me want to try it.

Alas, I am allergic to eggplant. I love it, but it gives me hives. I still make ratatouille, but it just isn't the same without the star ingredient. Hmm, maybe allergy desensitization for food allergies is a thing? At least I can still eat mushrooms!

You see one thing that’s so remarkable about this chef is that he’s not only teaching you how to make his recipe, but also how you can develop your very own recipe. He tells us what are the fundamental techniques and knowledge he uses in the process of developing his recipes, and how you can use them to develop your own regarding to your preferences that might differ from his as well. You hardly find an online “chef” that’s genuinely trying to teach you how to be a good cook. At this point, I don’t see any good reason for him to talk less, because what he talks is so helpful, and I don’t think we should let the opportunity to learn from him go to waste. Don’t take him for granted. Love you chef❤️

Years ago, I fell in love with Ratatouille, and now I make it in the oven mostly with homegrown veggies. I have never seen it presented like this... and I cannot wait to try it the traditional way. 😋😍 You really need to grow your own tomatoes... very easy and the taste is incomparable. You'll never go back to grocery store tomatoes, guaranteed!

Oh Chef you are bringing back some wonderful memories!!! In culinary school many moons ago I did a real Ratatouille for a 1st course in one of my tests. I did mine is a 4 in round mold layered. I did have a Eggplant layer but it was on the bottom. Served it with Basil Olive oil and a Red Pepper Coulis topped chiffonade of Basil on a large White plate. The Chefs really enjoyed it, and I think it caught a bit off guard as I don't think they were expecting it. All the others were doing very high techie dishes but I wanted to do a classic type of meal. What I loved about cooking professionally is your ability of making and bringing back memories in people. Food is one of those things we have in our life that cement time, family, love, and happiness all together into a memory. We all have a good memory of family, friends and a kitchen all tied together by food and as a Chef we can spark those feeling of happiness and joy. There are very few professions that can do that and I thank you for sparking an wonderful feeling of joy and accomplishment. I say accomplishment because I can still see the expression's of the 3 Chef as the tasted my Ratatouille. Sorry I got long winded,,,,, Talking to much must be a Chef thing!!! Thanks again!!

That's a great story, not long winded at all. I consider myself a home cook and I take great pride in the dishes I make because I agree that it cements wonderful family and friend memories. Gotta admit I've made a few duds and I'm usually mortified by that......but I bonce back and cook on!

You inspired me, so I made this today, and sautéed it in batches as you recommended. After sautéing the onions and peppers, I added the garlic until fragrant, and then added 1-1/2 cup of white wine and let it reduce before adding the tomatoes. Mama Mia…it was soooo delicious! Thank you for your awesome instructions and great recipe!🍅🍆🫑

I'm very sensitive when it comes to voices and certain sounds, but your voice is comfortable to listen to Chef :) i love learning about food on your channel :) Freddie Mercury loved some French foods and drinks :)

I love this guy probably the best teacher/chef on KZfaq for beginner cooks..... Like holy shit I'm from India and thought making those dishes will be so damn complicated but Chef J.P makes it easy.....trust me this guy knows his stuff

I am not even surprised anymore... prepared the Ratatouille yesterday and it was... legend! I have been making a Chef Jean Pierre dish every weekend since Christmas (after I have found the channel searching for "caramelized onions") and each and every one of it was just great. It was easy, too... some people might even say, I child could do it... ;-)

I love how Chef picks up stray bits of onion and squash and puts them back in the dish. Keep your area clean, and don't waste food! If your stovetop is so dirty you wouldn't want to eat off it, you shouldn't be cooking on it, and if it is, then use what you paid for, what you prepped, and don't toss it in the trash. Love your food from farm to counter, to table, to the tummies of your loved ones!

Your talking is the best part of your videos. I can't imagine why anyone would say you "talk to much". We can't taste your food. And if I just wanted instructions I would read a recipe card. You talking describes everything and also makes us feel like we are there in your kitchen. It's an absolute delight. So you just keep talking Chef. I'll enjoy every word.

Love this guy. He's like everyone's favorite uncle. His enthusiasm is contagious. Today I made Chef Pierres fish cakes and they were a huge hit!. This video is so fitting. His enthusiasm and love for cooking reminds me of chef Gusteau from the movie. "Anyone can cook". One of my favorite movies, watched it prolly a dozen times. Chef Jean-Pierre, You do not talk too much. I would be willing to bet that I’m not the only subscriber that quite enjoys your banter. As a matter of fact, you could do longer videos (25-30 minutes) with even MORE talking, storytelling, etc. and I bet you would be surprised how much positive feedback you would receive. Keep doing what you’re doing, Chef. That’s why we love you.

I follow a few cooking channels, but this is the only one that makes me want to get up, set up a mise en place and start cooking. Even if I don't have the same ingredients or kitchen tools, I know it's going to be an amazing meal because I'm cooking the right way by following chef's instructions.

Another think: I’ll try to find an English video with one of the most famous and regional favorite dishes here in Brazil, called “Moqueca capixaba”. It is a kind of Bouillabaisse, made in a special type of cooking pan. I’d love to see Chef JP interpretation of this dish.

I know this is an old video but you absolutely do not talk too much. Watching you is almost like sitting and talking with my grandfather if he had an awesome accent. Your joyful personality reminds me so much of him that I've been going through and watching every video on your channel because of how much I enjoy listening to you talk and watching you put a joy and love into food that I haven't been able to master in 8 years of being a chef.

My Friend! When I served onboard the USS Comte de Grasse (DD-974) we would deploy to the Mediterranean quite often. Your Nice comment had me chuckling, because everyone who lives there is so “Nice”. On one deployment we pulled into Villafranca, and my wife flew over from Virginia to meet me. For lunch one day we had pork medallions, in a raspberry reduction sauce that was soooo delicious. It was served with ratatouille. Perhaps you could do an episode on the pork medallions? I’ve tried a couple of times, but they just don’t have your flair or flavor. I love that you sautéed the squash and Zucchini separately. I do that for a beautiful Mexican dish called Cabalacitas. It’s that carmalization that is key to make the best cabalacitas. To me and most people that do this dish it’s not. It’s soggy and essentially just steamed. Me no likely. Also I enjoy hearing you talk. I get a kick out of it so keep doing you my friend. It makes your show. I promise you.💪🏼Salute Senior.
