If you ask me those Jedi holocrons look a lot simpler and bland than the Sith ones, kinda like they were mass produced by one or a few Jedi. Maybe they intentionally made a lot of small and simple holocrons containing limited information each so they didn't have the need to make a complex gatekeeper (or even a gatekeeper at all) and if a Jedi went rogue and stole one they wouldn't get as much information. Sith holocrons seem a lot more complex and brimming with information on teachings, advice to the user and even personal records of their creators. Such devices would need a lot more work and effort put into them.

The Jedi make their holocrons based on specific knowledge, the Sith pour everything they know into their holocrons. In the Clone Wars, we see the Jedi use a holocron to contain the list of discovered force sensitives for security purposes, with an additional crystal needed to access the information.

For a Jedi Holocron,there is a creation of a holocron in SWTOR Shadow of Revan,Jedi Consular class specific quest where player's Jedi Consular is requested to make a holocron.

Honestly, I really want The Bane Trilogy to get the Thrawn Treatment. Bring Back the Original Author(Drew Karpyshen, who still works at bioware on Star Wars The Old Republic fun fact) to write a Canon trilogy about the character. Or even better just have Drew and The Story Group rework what little of the Bane Books would need to be reworked and just re-release them as canon variants.

Seems the Jedi process is similar to the Sith holocron creation Sith holocrons were around first and seems Jedi followed after them I finished the trilogy last weekend it was awesome a part of me thinks Bane lived on Zannah was too focused on her dark side tendrils to follow focus and fight him off, if anything Bane had a head start and advantage in possessing her Even if he didn't succeed he might have his dormant in Zannah's body and might find a different host later and may have spent years watching his Sith Order from the shadows Would make a nice fan-fic if nothing else

In Star Wars Legends you could add to one after it's construction. Aside from the primary, Holocrons could have multiple Gatekeeper personalities stored in them. It seems that this is also true in canon, since the Holocron possessed by Kanan in Rebels received Obi-wan's warning transmission.

Why did the clones in the animated clone wars have individually stylised armour whilst those in episode 3 were all the same? (Apart from plot/needing to know characters)

Lazy writing irl. In lore they "upgraded" the armor multiple times. Individual clones were known to customize their armor according to personal taste if they survived long enough. Colors were exclusive however representing indivual legions of clones typically. Leading to over 500 variants in color schemes and styles. Probably not entirely correct but I hope this helps.

What about unlocking holocrons? Rebels makes it seem sooo easy... Also, Sidious collected relics (per Empire's End), so is it likely that Snoke or the KoR etc. would have access to a holocon the Emperor himself created? Would they have shared Yupe Tashu's fate?

Hey I uh... I've got a little complaint. I mean the holocron's cool and all but 4GB of space?! That's not much if you're asking me. Much else it's only got 300MB of RAM to run the holograms. I mean it is cool it's powered by the force and all so I never had to recharge it but damn. you'd think they'd store more than just 1 holovideo in one holocon
