I'm a home baker from Ms, and I make a variation of this cake and let me tell you.....YOU GOT IT GOING ON,CHARLIE! When I saw the method of mixing and texture of the cake, I knew you were legit!! Some people can cook and not bake. You my friend....are a JACK of all trades! Almond cakes are soooo flavorful, especially with pineapple filling (Louisiana thing). A few people don't like the taste of almond, but for those that do....it's remarkable! Keep doing yo thing Charlie❤

Made this for Christmas, and it’s every bit as good as it looks. The addition of butter flavor was genius. Cake is perfect. My frosting seemed a good bit thicker than video, so I added more milk, but I was concerned maybe it would end up being too thin so I stopped. There was no way my frosting would have fallen down the sides of the cake. finished product was slightly thicker than I would have liked, but it still had great flavor and texture. Maybe the difference was in climate? Time of year, weather etc. excellent recipe well worth the effort. Thanks for sharing !! Merry Christmas!!

Charlie, that is the prettiest cake I've ever seen. I was pounding on my computer table while you were eating it!! Ok, now seriously, I've asked you many times in the past if you would open a restaurant/bakery in New Orleans - and I understand how huge a move that would be and you inform us it just isn't in the cards now. HOWEVER, Charlie, I have never seen anyone as passionate about cooking as you. Your dishes/desserts are varied, true to our creole/cajun culture of food. Brother, I know you can make it. With this pandemic, hopefully, winding down (albeit we have to use the information we're given about it) maybe it is time to re-consider. You and I know some of the nouveau restaurants in the area do not require huge nor fancy buildings or shops. I KNOW you would make it. For your food - price doesn't matter - the people - locals and tourists- would gladly pay for your labor and creativity. Please consider it Charlie. Heck, I would imagine your devoted followers would gladly help for you to get the ball rolling financially. I've told you time and again that you are a special young man with a God given talent. Thanks again and, as always, forgive my nagging. However, you have really got something you should share with the world. James
