I live very rural and when I drive along the roads here I keep my eyes peeled…..I found an elderberry bush and for the last 3 years I visit this bush faithfully every august, it’s the highlight of my summer. I also found a hug bush of blackberries and an old apple orchard looks like it use to be a homestead years and years ago…..I pick all these and in the winter I can a lot. Thank you for this recipe!!!

@@SpiraeaHerbs you’re a natural on camera. do you sell your canned syrup? it was cool seeing that big tub of honey :) honey and elderberries aren’t cheap (unless you’re picking them yourself)!

For added benefits, add more honey after opening jar. May be too sweet but the added benefits of honey can never be underestimated.

@@johnvaughn3489 You can also can it without any honey at all and add it in afterwards! That way it retains all the great benefits of raw unpasteurized honey :)

I don’t understand why people don’t can the decoction and add honey when it is opened. Then the honey preserves it for quite a while in the fridge. Before I started freeze drying the decoction I used to can it and give instructions to add equal part raw honey when opened and then refrigerate.

You absolutely can do that with no problem at all! Just add the honey after you open the jars.

Hi thank you for this detailed video. Do I have to do the canning process? If I opt out how long can the Elderberry Syrup stay in the Fridge? I will be using Raw honey and Arrow root. Thanks so much

Hi there Patty. The canning process is totally optional and if you are using arrow root, it technically will not longer be canning safe. Having never used arrow root, I cannot speak to how long it will keep. If you were only using honey the shelf life would be 2-3 months in the fridge. I am uncertain if the arrow root will increase or decrease that.

Thank you so much for watching! Very much appreciated. Once opened it stores about 2-3 months in the fridge. This varies based on how much honey you used (as it is the preservative) and if the environment stays relatively clean (meaning you don't double dip your spoon etc.).

People have used organic cane sugar and maple syrup however I cannot comment on shelf life once opened. It would still be safe to can if you use cane sugar.

How long does elderberry syrup last in the fridge if you have only mixed the honey in the syrup while warm and not done the canning? I watched another video that says it lasts in the fridge a month?

I loved your informative video. What dosage amount is recommended to take when feeling sick? Can you also have the syrup daily as a preventative measure? If so, is it the same dosage as when sick?

Hi Amanda. Thank you for your comment. Unfortunately I cannot tell you how to take your elderberry syrup due to the very strict rules we have here in Canada. However, I can speak if it were me (stating that I am not pregnant, lactating, chronically ill or on any medications of any kind ~ I am also in very good health for the most part). Individual doses are one tsp but the frequency depends on how sick someone is. If I just had a cold - I would take it 3-4 times a day. If I was dealing with chills, fever, body aches etc. I would be increasing and taking a dose up to every 2 hours. AGAIN, this greatly depends on the actual virus and the severity of the symptoms and the baseline health of the person. Please consult your health care practitioner of choice. I have a great video on navigating immune herbs. Elderberry should not be used as a preventative, in my opinion, but there are other herbs that can be. Should I pick out the light colored berries from my bag of dried elderberry I bought also should I concerned about the little stems?

It is almost impossible to get all the stems out truth be told. As some who dehydrates berries. It is the large stems, twigs and roots that we need to be worried about. And unless the berries are visibly green, some colour variation is totally normal.

Elderberries have to be cooked to be safe to consume. So even if we do lose some medicinal benefit (which has not been my experience), it is necessary. Now the heating DOES destroy the honey benefits. So it comes down to pros and cons. Pro... you have syrup ready made on the shelf. Con... the raw benefits of the honey are gone.

If you can with honey it in, it will no longer be raw. So in those cases I would just can the juice and add honey afterwards. Canned goods can last up to two years if stored properly :)

Yes you can definitely add the honey after canning. So that way you are just making elderberry juice and able to add the raw honey (and keep it raw) afterwards. And yes you can add dried herbs and it does not interfere with the canning process or change the processing time.

Definitely some issues! The most being that you will be completely unaware if you have a seal compromised because the pressure from the ring could reseal it. That leaves you unaware but your food compromised and unsafe to consume. It also helps to prevent any bacteria growth that can occur between the ring and the lid. Hope that helps!

Older jars can totally handle that. But I heard from the people at Berdnardin first hand that they have changed the quality of the glass. The new jars cannot handle the shift from dry to wet heat and can shatter in the canner.

Thank you for your video, just wanted to ask, if I was to water can my elderberry syrup jars without honey for a longer life expectancy... wouldn't it be ok to just add it later when I'm in need of that syrup? That way - you wouldn't loose the goodness of raw honey 😊

Yes you can totally do that and I have done that in the past. Canning protocols are the same. Just add the raw honey afterwards :)

Yes definitely does! If you are freezing a small amount, ice cube trays work nicely. That way you can thaw out individual doses. For larger amounts, you can definitely freeze them in your upright or deep freeze.

You absolutely can BUT the honey is the preservative. So if you omit it, you've essentially made elderberry juice and the shelf life is very short. So my suggestion would be to freeze it in ice cube trays that way you only have to thaw small amounts at a time :)

I made eldeberry syrup but measured equal parts. 1 cup fresh berry to 1 cup water. Is my syrup concentrate now. I made mine with raw sugar because I canned it and didn't want to waste my raw honey. I got 6 pints and 1 half pint from eight cups of fresh berries. Can I add water to my syrup when I open a new jar? Because your recipe is 3 cups of water to 1 cup of fresh or 1/2 cup of dry. Mine must be really concentrated. It taste great, I added lemon peel and orange peel also to mine. I love it, but I wish I could add water to the jar to make more as it is concentrated and will last longer in the fridge once I open. What do you think? Im subscribed now and enjoy your all your videos so far. I am using and growing alot of herbs now in my garden.

It is the honey that is the preservative, so the shelf life is indicated by how much honey you add. Since I have never used cane sugar, I cannot comment as to the shelf life once opened. I don't see why you can't add water to it! Just transfer it to a bigger jar once you open them. But I would be mindful of that shelf life. If it were me, I would add a bit more water (not a lot because remember we do have to compensate for evaporation during the simmer process). I would then transfer some into a jar that can freeze well and freeze some of it (especially the first time you open it). Then you can monitor the stuff left in the fridge and see how many months it keeps for. Hope that helps!

@@SpiraeaHerbs i was told in many videos of preparing eldeberry for canning that it would be better to use raw sugar as you would loose all the properties of the raw honey when you simmer the elderberry. I always used raw honey for my prep and only kept in fridge, I have never canned eldeberry until this year. I really like the fact I can store it in my dark pantry in my medicinal shelf of herbs and tinctures. I have really gotten into growing and drying my herbs for medicine. I am just getting started this year, but I feel so much better as being prepared and also knowing I have medicine that is from God's creation and not just pharmaceutical. I have not got all my herbs that I need but I bought The Encyclopedia of Herbal Medicine by Andrew Chevalier FNIMH. I got the idea of the book from the Bee Honey Farm KZfaq channel. The gal there has a Apothecary and is so knowledgeable as you are. I love learning from you both. So back to the eldeberry. I took my jar from the fridge as I opened what I had canned and put in fridge, I took another pint and split them the syrup was still pretty thick. I added water to each and also added a tbsp of raw honey. I then got my ice trays out and filled 2 trays with 1 pint and put the other pint back into fridge. I have heard of people making icecubes out of eldeberry syrup and using when they need it. I will see how that goes. I have also been conversing with Rover Hills Harvest. They are a large eldebarry farm that is in Missouri, USA. Missouri now is now the largest eldebery producing state in the USA. The Missouri University along with River Hills Harvest have created a 5 or 6 species of the American Eldeberry. It has more anti viral property that the European berry, and has less Cynide properties. I have 3 different areas on my property that have wild eldeberry, I have been harvesting for years. But I have this year purchased 2 bare root eldeberry trees from River Hills Harvest. I am excited to have 2 of there large berry and pest resistant plants. I have a organic vegetable garden and small herb garden I just started. I have always had a vegetable garden and planted organic always. But never a real herb garden. I am excited to keep it going and learning more each year. Let me know if you think its ok to add some honey when I open the canned jars and when I also add more water. I have always taken a tsp of eldeberry daily, but when cold and flu season comes I take it 3 times a day if I get sick. Thank you for all your help. Im in California foothills. ♥️🙏😀🙋‍♀️

@@user-fd1qb7ml2j Yes so the way around this would be to can just the juice and add honey afterwards! You can add more water or honey to the jar, but be mindful of the sugar content at this point! Personally, I would not be taking elderberry syrup daily. There is a huge difference between immune tonics and immune stimulants and as a stimulant, elders are best used when you are already sick. @@SpiraeaHerbs i will be canning it next time without any sweetener and add the raw honey when I open a jar. Sounds like a plan. I will make sure I do the right ratio of water to eldeberry next time! Hahaha! Thats interesting you say not to take the eldeberry daily, I hear so many people and herbalists that say its good for you to take every day and not just for immune building. If canned and unopened it's shelf stable up to a year (or two). Once opened you have to store it in the fridge. Does that help?

It's proper canning practice. It prevents any false seals (if the jar were to pop open and you were unaware, the lid could force it closed again yet the food would still be compromised).

It's a light corn syrup... I thought it might be better for children to omit the honey and use another kind of syrup like corn syrup or maple syrup @@SpiraeaHerbs

@@tinahenleyhicks822 The concern with honey is really only children under 1 years old. I would opt for maple syrup or organic cane sugar over corn syrup personally. But I cannot attest to its shelf life! Hope that helps.

You totally can! I have just used this method for years because I used to sell elderberry syrup to the general public and the honey ensured a longer shelf life and less work for my customers.

Nope! The berries are toxic raw. It is very important to cook them first in some capacity.
