In today's video, I'm going to show you how I make shelf-stable herbal syrups that have a shelf-life of 1-2 years! Gone are the days of making fresh batches of herbal syrups every month or two! This method will save you time, energy, and money without sacrificing the quality of your herbal preparations!

im pretty sure that if you add lemon juice to the liquid ,it will also help with the preservation of the syrup too ! im thinking 1 or 1 and a half table spoons of lemon juice from the bottle . this will lower the ph and the lower the ph the harder for bacteria to grow.

Yes, lowering the pH can help extend the shelf life a bit, but not to the extent that alcohol will (as lemon juice is only around 5-6% acid). You'd still have to keep an eye on it for mold growth after a few weeks.

Thanks for sharing this beautiful video! So much important & good info there. I love your house's old-style interior & your calm energy. I'm just finishing making some cough syrup here & checking out how others make it. I love to stay open & keep learning. One thing I started to do lately is that before I strain the herbal infused honey I just boil some water in a pot or kettle & place the whole jar of the herbal honey in it. With the jar & lid on it. This way I can literally just have to pour it out of the jar. It saves a lot of time trying to get it out of the jar & later cleaning all that's been involved. Oh, thank you for your kinds words, Krisztina! Our house is definitely a work in progress. I'm always adding things here and there, and I try to focus on making big changes, one room at a time. And I totally agree with you on always learning. That's how I figured out how to make my syrups more shelf-stable, and now I use this method all the time. And you are totally right about warming the honey before pouring it out. That tiny bit of heat helps so much! Thanks again for your comment, and I hope you enjoy the videos!

No, I use fresh herbs for the honey. If you wanted to reuse your herbs, you could use the herbs strained from your honey in your decoction and perhaps add a bit more to it as well.

I don't, but it would basically be the same as dried herbs only you would double the amount of herbs you use when making the decoction (the water portion) if you're using fresh plants. Hope that's helpful!

Thank you so much for your informative video. I have been searching for a way to make my herbal syrups shelf stable without compromising the quality. If I wanted to make this without alcohol, could I substitute a glycerine-based tincture instead? What would that do to the shelf life?

A glycerite should be able to be substituted for the alcohol tincture, as glycerites have a good shelf life, almost comparable to an alcohol tincture. Most glycerites are made with a 60/40 or 70/30 blend of glycerin to water, again, comparable to the alcohol/water content of a tincture. Because glycerin isn’t as strong of a preservative as alcohol, I would use 50% glycerite, 25% herbal decoction, and 25% herbal honey instead. That should leave you with enough glycerin in your final syrup to help it be shelf-stable for up to a year. Hope that helps!

Being new to this, be kind with my "newbie" question....doesn't that give it a strong alcohol smell and taste ?

That's a great question! I don't think it has an alcohol scent, but it does have a "sweet alcohol bite" as far as taste goes. Basically, it tastes sweet due to the honey. You can definitely taste the flavor of the herbs as well. And it will have a slight alcohol flavor and heat to it as well. If you want to avoid that, you could make a 2:1 ratio herbal syrup with 2 parts herbal honey and 1 part herbal decoction. This won't have as long of a shelf life as a syrup with alcohol added to it, but it will last longer than a standard herbal syrup. Hope that's helpful!

The alcohol tincture is the preservative. It works wonderfully to stabilize the entire mixture when used in the right amount.

Yes, this video was mostly about how to go about making any herbal syrup shelf-stable as opposed to a specific type of syrup which is why I didn't talk at all about the herbs. However, the syrup I was making in this video was for elderberry syrup. You can find info about that recipe and the herbs I used over on my blog. Hope that's helpful!
