Yum! Going to make this for sure! We bought some stuff off your website. A meat slicer, some brine, rubs, apron, and are considering a Yoder but they are so expensive. LOVE your videos. oh i remember i did this with the extra tallow i made from brisket trims. extremely rich. definitely a little bit goes a long way but indeed a delicious flavored mayo

BLT!!! I made BLTs last week, but it was Baloney, lettuce and tomato... yes, I smoked baloney, and sliced it thick for BLTs. This Baconnaise would have been perfect! Awesome video, thanks a bunch!

Bacon fat is a great. I have always liked the combination of bacon and cooked banana so on day (like you) I rendered bacon fat and used it to replace the butter in a banana cake. It was pretty bloody good.

Everyone knows that homemade mayo doesn't last long.... Try fermenting it! From what I have seen some of my favorite homesteaders do, mayo can last in the fridge for months. Not sure about the bacon aspect in this one, but I'm certain it's delicious no matter what.

ok this sounds insanely good, but i knew you were kindred spirit by the time you said butter lettuce. that attention to detail is admirable

ok i know i sound crazy talking about the lettuce, but hear me out. i kinda knew when i clicked on the video it was going to involve rendering bacon fat and mixing it with an oil thats liquid at room temp, but when he busted out the avocado oil i knew i was in for a treat. All the attention to detail, every ingredient had thought put into it. the celery seed, the chives, all that. But the lettuce is where i knew this guy is legit. Lettuce is usually an afterthought. Most people default to romaine, iceberg, or arugala. But butter lettuce? thats my #1 favorite lettuce on a chicken sandwhich. This guy put thought and intent into every single ingredient on that relatively simple sandwhich, right down to the lettuce. Thats how a real chef thinks about his ingredients. seriously impressed

Come on Tom, you gotta season the tomatoes! 😂 I know everything else is properly seasoned, but I've always salted the tomatoes specifically too. In retrospect as I'm typing this comment, I'm wondering if it's actually a bad idea since the salt will pull moisture out of the tomatoes and potentially make the BLT soggy. I definitely noticed it last time I made one, but I also didn't toast the bread. When I did, it was much better but still a little on the juicy side. Guess it makes more sense to salt in advance to avoid that. Either way, awesome video! I'll have to try this out sometime. Never made mayo from scratch actually.

Of fucking course. I tried this on my own years ago. The bacon fat is too bitter. But you used avocado oil! That's genius! You get the bacon flavor without the bitterness.

Is that mustard the same as Dijon mustard? I’m definitely going to make this, along with other things I’m making for my daughter for Christmas and shipping to her. I’m wondering if I could freeze this? I’m freezing my focaccia bread first before shipping with ice packs. I know you can’t freeze mayonnaise successfully, but with the bacon and avocado oils in this baconaise? Just wondering…anyone? Any ideas or suggestions?

You can use a immersion blender and make your mayo in second then add your bacon and chive after. Immersion blender is your best friend 😉 Great recipe 👍

I actually did something merrily similar, but simpler this week. 1/2 pint Kraft real Mayo, added a tablespoon of grated parm, and a few pieces of cooked bacon finely blended.

I cooked a bunch of snags. Kept the fat not down the drain. Was starving one day just made mashed potos no milk no cream just sausage fat. It was nice.

Tried making this twice. Both times I got to about ¼-½c left, it suddenly turned liquid, and I couldn't fix. I used ½c bacon grease to 1c avocado oil like instructed. Any help would b appreciated

Try whisking in the oil in very small drops for half the amount to not break the mayo. If it gets liquid get another yolk and whisk into that yolk the broken liquid slowly again
