Blanched almond butter is a great substitution for coconut manna in recipes. It can be used in candy bars (melted with chocolate) as well as baking recipes, such as my pound cake recipe, or in sweet chaffles (including a short cake chaffle that's coming soon).
Unfortunately, blanched almond butter costs A LOT. I priced out a couple of brands on Amazon at between $2.00 and $2.50 per ounce -- that's $24 or more for a jar! By way of contrast, plain blanched almonds are anywhere from $.50 to $.70 per ounce. And if you want to save even more, you can blanch your own almonds for $.26 per ounce when buying a bag at Costco. Now that 12 oz jar is just over $3 instead of $24 or more.

*Update:* I did another batch and this time I blanched the almonds and then soaked them over night (aka "sprouting"). I then dried out the almonds in my dehydrator. Now this may sound like a lot of work (though honestly it's mostly passive time), but the result was the creamiest, silkiest nut butter I've ever had. It only took a single 50 second run in the blender and I didn't need to add any oil.

I have strawberries waiting for my almonds to dry for the shortcake prep!! How long did it take for them to dry after the long soak, not the quick boil? So far I have had them at the lowest temp possible in the oven for several hours and they still seemed soft. Thank you!! 🌞

Gail M. I’m always surprised at how long this takes - it’s well over 12 hours when I do almonds. I set my oven to Keep Warm - which is 170 on my oven. Sometimes it can take up to 24 hours for them to get crunchy again. If they’re not done when i go to bed at night, i just turn the oven off, leave them in there, and turn it back on in the morning. That way I can check them every few hours. Hope this helps!

@@johnknightiii1351 Yes, but I was shooting for something flavor neutral. If you want it to taste more like almonds, just don't blanch them.

I make mine. A trick for good flavor is in roasting before grinding. Unsurprisingly a Champion juicer does a wonderful job of grinding with the blank plate in. No need to add any oil or salt or sweetner. Before doing all this I happen to also soak over night in water, then dehydrate first. That's when I roast and grind. I leave the skins on. So yummy!

About Peeling the blanched almonds: Edit to Add: I see folks worried about the "drudgery" of peeling. If you can pinch your fingers together, you've just skinned an almond! it doesn't take much pressure or work, it might even happen more easily than you expect and then you have a nut flying the room. I found that leaving them in the cold water makes peeling MUCH easier. I just stuck my hand into the bowl of water, grabbed a nut and squeezed. The skin slipped off and the nut didn't fly across the room like the previous 3 did. I then just lifted the skin out and disposed into a bowl. The water slows down the ejection so it doesn't go anywhere and if you drop the skin, it just floats to the top. I didn't need paper towels or trays. I could see easily which still needed skinning and when I was done I just dumped the entire bowl into the colander and directly onto my dehydrator drying tray Twas super fast and super easy. ETA: and thanks for this suggestion for substitution for coconut manna. I can use coconut oil but I don't like coconut meat and I fear that I might not like coconut manna. Being kind of expensive and none of my friends will eat it if I don't as they hate coconut even more than I do, I'm hesitant to shell out for it. ( why aren't there samples of this stuff?!) . Being able to use blanched almond butter as a sub would make a world of difference and I'd be able to try some recipes that call for coconut manna/butter.

You may be wondering if you can just use blanched almond flour and some oil instead of going through this process. I've tried this and found that what I got didn't taste good and I couldn't get the same smooth texture as using actual almonds. This was using the Kirkland brand almond flour and the same almond oil that I used in this recipe. I'm not saying it won't work for you, but it didn't turn out well for me.

Thanks Steve for that tip on taking the skins off easily. I've been staying away from nuts for the most part because of the enzyme inhibitors in the skin. Now you've given me an option to use nuts in a lot of different ways! One bag... oh so many choices!

A tip I learned about peeling the skins is to wrap the almonds loosely in a tea towel and knead them for a minute.

I finally got this done. It took 4 days to finish but a bit of sea salt and a sprinkle of stevia and i can see myself making midnight trips to the fridge for this goodness. I will also be getting a hose attachment for the almonds that got away from me in the kitchen between the stove and fridge. Ordered a food dehydrator and the twister jar for my blendtec to make this a less time consuming process. Did this first batch in a breville oven at 130 degrees which took 2 days and used a ninja to blend it which took a few whirls but smooth and tasty. I appreciate the info you share to help us stay the course and not spend a ton of funds if we dont want to.

Ohhhh, I wanne know, as well! I never considered, that marzipan would be an easy to make, Keto treat! But it's just almonds and 'sugar', maybe a little dark chocolate...😋

I made some marzipan this morning and it turned out good but I'm sure it can be improved since I was improvising. I used 2 cups of blanched almonds which came to 326g. Blended that in a food processor til it was about the consistency of superfine almond flour. Mixed in 1 1/2 cups of powdered lakanto monk fruit sweetener which came to 300g. Then mixed together 4 tbsp of egg whites (the costco one in a carton) with 1 tsp each of almond extract and vanilla extract, and 2 tbsp of water then drizzled that into the almond mixture with the food processor running (I had to add 1 more tbsp of water to get it to the constency I wanted) It was about the consistency of where your almond butter was between the first and second tbsp of oil...I didn't use oil because I thought it might separate if I end up using this for baking. I rolled the marzipan into a log with plastic wrap and will store it in the fridge. A couple thoughts. It's not as sweet as store bought marzipan, I'd say more like almond paste. If you made it sweeter you'd probably need to add more water. Also from what I remember the store bought marzipan has a stronger almond taste so I'm thinking you could adjust the amount of almond extract if wanted.

Steve, you can do the same thing by just pouring boiling water over the almonds. I have also had success by just soaking the almonds in cold water for 10 minutes to 1/2 hour.

@@SeriousKeto OK, tell me why I am wrong on this. I watched this fine video, and went and did my fasted exercise. I keep a pen and paper near by so I can write down ideas that come to mind while exercising and getting all that great blood flow to the brain. Today's thought: For Blanched Almond Butter, why not just start with Blanched Almond Flour from COSTCO and add in Almond Oil until you get the consistency you want? I have not had time to test this theory. What do you think? I get this great Toasted Almond Oil here BTW! Tastes delicious! Thanks again!!

Thank you SO much! My children LOVE Nutell & Euro Cream and i hated it because it was never something i indended for them to have but it happened and I needed to find a replacement. Almondbutter seems to be the magic "perfect replacement" for them. Except it is so expensive and I (the grown-up) don't like the texture of skins so I have been looking for a good recipe and instructions. I can't wait to try this out!

Hi, I saw your shortcake chaffle video where you said to soak & dry the almonds. What order do I do the soaking, blanching, drying for nut milk and nut butter? Does it matter if I soak first then blanch? Does it matter if I don’t dry them? Love your videos!!!

Depends on your goal. Like I said in the beginning of the video, the recipe "as-is" is to replace coconut manna in my recipes for people who don't like coconut. If you want to use it as almond butter (like with some keto crackers), I'd probably just use skin on almonds. I'd probably soak them overnight, then roast them, then blend them. That would give you a bunch more almond taste that this version.

Awesome! A great add to your video collection for those who prefer to make ingredients from scratch. :-). I use Blanched Almond butter for lots of things. On getting the skins off quickly, you can rub gently the almonds after the ice bath in a bread cloth towel and they will come right off.

@@SeriousKeto A muslin flour sack towel works great and the skins shake right off of the towel. Don't use a towel with a knap or texture or your be picking the skins out of that. Uugh. A lessons learned tip shared.

I wonder what would happen if you put them in a large (quart) mason jar almost full of water and shook them around. Kinda like shaking garlic cloves to get them to peel.

You can also just soak them over night with the same result. I prefer top raw almond butter. They have started the sprouting process so digestion is easier

Yeah, I always sprout when doing almond milk. Sometimes I do for nut butter too. But I figured if I did soak/sprout, then roast, then nut butter in this video, I was bound to have someone say "too much work". We'll ease them in and then add more steps. 😉

Using the ground blanched almonds (or Costco Almond flour) 1 cup, pure almond extract 2T, and powdered sweetener (Costco Monk Fruit) 1/2C , you can make matzipon (or marzipan if you don't do the Berliner sound) to create a sweet almond paste. It is a German Xmas staple in the form of bars, pigs, mini-fruits, etc. Adjust mixture to make a sweet moldable paste. Great with keto chocolate or in keto pastry. A small bar will cost over $2.00 in a Germany deli. Steve, you are an inspiration. I sing your praises to all the keto converts I meet.

Just to confirm -- should that be 2 teaspoons of almond extract or 2 Tablespoons. To me, the capital T indicates "tablespoon" but that seems like A LOT.

Big T for tablespoon. The almond extract provides the moistureto make the mixture moldable. The mixture will ultimately set and harden to a degree. Adjust the extract and sweetener to taste. @@SeriousKeto

I guess blanched almonds are better if you don't want too much almond flavor, but for certain things like your toffee candy bars I'm thinking I might roast the almonds before making the butter for more almond flavor. :)

For whatever reason, I can't eat peanut butter anymore (stomach and BG issues afterwards), so making my own almond butter may be the next step. I hate the store bought stuff, so this may be my next go to since I love nut butter as a keto snack.

Love the videos that teach how to make things from scratch so we don't have to buy pre-packaged EXPENSIVE foods. If you ever figure out how to make a successful low carb milk chocolate, that would be golden. SO many recipes rely on expensive chocolate chips or bars that if we had a sub for expensive low carb Chocolate, it would open up the possibilities immensely.

Fortunately, the milk chocolate from ChocZero isn't obscenely priced if you buy it on their website and use the SERIOUSKETO code. That said, I bought some ingredients specifically for the purpose of trying to make my own. That's all I can say right now... 😉

The tricky thing about chocolate is the tempering. I don't have any experience but it is what I've read and had explained to me. I personally just use Very dark chocolate in my recipes /treats.

Omg mr Steve, I'm so sorry to come here and change the subject, but this is SO EXCITING. Not that blanched almond butter isn't exciting, it totally is. What I'm talking about is black garlic. If you haven't tried this ingredient before, you have to look into it. Its a flavor bomb. It tastes like MSG.

Hmmm, what if I would use the almond flour (from dried leftover pulp from making almond milk) and add almond oil, could it work in the same way as with blanched almonds?

Would you blanch the almonds before you soak them over night to make almond milk? Do you have to bake it after peeling of the skins then soak them over night or can you skip that step since you're going to be soaking them over night? My daughter ran out of almond milk so now is the test of me making it!

If you want blanched almond milk, I would blanch, peel, then soak. I have not found the skins to come off all that easily from just an overnight soak.

Im such a fan of almond butter sandwiches im anxious to try this cause it will save a ton of money. Although my blender sucks. Might chop them up a bit at first but not as good as yours. I ordered that Emersion blender after trying your mashed cauliflower. Maybe that blender could be useful here to. Also im curious if a similar process could be done for other nut spreads? Like if i wanted to try to make pecan butter for sandwiches.

@@SeriousKeto stupid question but if the process is just grinding up almonds and adding oil. Could you get the same end result just adding oil to blanced almond flour? They are almost the same price for 3lbs at Sam's so im curious if it would work.

I've not had success with that. I don't know why it doesn't work, but it hasn't worked for me. The taste and texture are both "off" in my opinion.

Hey. Love your recipes and methods. I had a crazy idea a few days ago that I have not yet tried. So I would like to run it by you and your followers. My food processor is a cheap one with not much power, and I worry about burning it out. I have a good supply of blanched almond flour and am considering converting it to almond butter. Most of the hard work is already done! I would probably add coconut oil or coconut butter and a touch of salt. I haven't worked out the cost per ounce, but it might be an easy hack for folks with a cheapish blender or food processor. Let me know what you think. Thanks.

Why not leave skins on and save a step? I use almond butter and coconut cream every day in my breakfast smoothie. You can go broke buying both of these. Winco has the best price on the planet for grind your own almonds to make butter. They're just roasted with skins on. A nice sized deli style tub usually ends up costing between $5 and 6 bucks. Because I was making blanched almond butter for a specific purpose -- namely to replace coconut manna in recipes where people don't like coconut. If I were making almond butter to eat straight up, I'd soak them, then roast them, then blend them. But this was really to give people a substitution for when I use coconut manna in fat bombs and candy bars.

@@SeriousKeto Winco is amazing! Totally employee owned giant warehouse store that not only has groceries, meats and deli but has some of the largest selection of bulk bins you'll ever see. Not sure where they originated but they're huge out here in the west. Grind your own almond, peanut, cashew and tons of serve yourself coconut oil, honey's etc. I digress. Grind your own almond butter is per pound and I think it's something like 5.69 per.

@@k3of5ks WINCO was founded as an employee owned business as you said. The name is a compilation of Washington, Idaho, Nevada, Colorado and Oregon. The name was already established with Utah started adding stores. I miss that store so much. We lived in Utah for 5 years (until 2017) and it was my go-to for bulk items. I stocked up on many bulk items before moving back to NH knowing that there was nothing like that in the East.

I find that when I first pop one of those into my mouth, I think "wow, just like a Dorito". A couple chews later and I think "wow, just like dissolvable packing peanuts". 😄

If you don't add oil, the fat in the almonds does render eventually and not only will it get your almond butter to an equally smooth consistency as with oil added, it'll also be a sweeter, more balanced product. So, as long as you have the right blender and vessel, just keep grinding, scraping, packing if you need to, and your persistence will pay off.

Being that Almonds are full of phytates, wouldn't it be better to make Macadamia nut butter?

I did a recipe on macadamia nut butter, people complained. So I make a video on almond butter... Personally, phytic acid is not high on my list of concerns.

Look into soaking/sprouting your nuts, that's supposed to lower phytates and it isn't really much more work, just a little time investment. I think, macadamia nuts are just too expensive for most folks (I know, I flinch at their price point) - especially if there is a cheaper, easily available alternative.

My newest purchase is the Accent Series 3500, but I also have an original stainless steel one with the pitcher with the spigot and a wooden tamper.
