I'm a Russian chef, I love this dish but there are a few things Russian cooks do differently: 1) We sauté onions and carrots separately in a pan 2) This one is crucial: beets must be cooked in a separate pan with sugar, vinegar, salt, and tomato paste. Vinegar and tomato paste prevent beets from losing colour thanks to acidity. You really need to cook beets as little as possible (right until they are done) if you wanna preserve the rich red colour. We add the beets at the very last moment, give it a boil, adjust the seasoning and remove from heat. 3) We serve borsch with garlic bread called pampushkas. Basically, Russian garlic crotons. Other than that, it's a good recipe.

Roz Sa, you are so right. When I was a kid working as a cook, chefs were screamers, sometimes kickers. They don't do that anymore. Today they're more professional and get better training without going all the way to Paris. I think TV cooks since Julia have worked hard to polish the image too. Well, maybe not so much Gordon Ramsay.

Because of fasting (Saint is Saint that),Easter and so on , ,the Eastern Slavic cuisine has quite many fish- and vegetarian recipes and mushrooms, of course. Russula-mushrooms especially. :D

How can this mixture be called borscht?? 45 minutes of boiling for beet and 30 minutes for cabbage?? Tne beet lost its dark colour and cabbage lost it taste completely. A very strange receipt... Greetings from Russia.

Dear Chef Eric, Thank you for the wonderful channel, I've tried a few of your recepies - delicious! I would not allow myself to criticize a professional, but in this case (my mother in law is Russian and saw your clip) may I make a small , but very important remark....? The meat should not be chopped and then cooked, in this soupe it is very important to work the opposite way. The whole meat (2 pounds), preferably with fat, few bones (joints) are cooked to get a nice bullion, you have to add the vegetables and continue cooking with the meat inside the pot. After the soupe is ready remove the meat, chop and put it back, remove the joints. Just to make a point I've made two different soups - one with your recepie (using a beef stock) and the other "according to HER" - the b... ch is right, the flavor is better.... Again, I'm not trying to criticize, but to contribute to a wonderful work you are doing. Thanks again, Alick

That looks pretty good. But I must say I've been making borsh is borsh for a long time. What's missing from this is lockstails.

Borshch is a Ukrainian dish. It cannot be Russian. What else they have not stolenl from our Ukrainian heritage? The soup with the beets called borshch because beet in Ukrainian is boo-ryak, and in Russian svjekla.

I'm half Russian and half Ukrainian and the only side of my family that ever made borscht was my mom's side who is Russian. Even if it originated in the Ukraine a shitload of Russians still eat it. It's like stuffed cabbages wedge russian-ukrainian polish in a whole bunch of other people eat. Who gives a fuck dude!
