Today, I'm sharing the star dish from my newest cookbook, Beyond Borscht! Straight off the cover - my classic beef borscht! This Eastern European and Russian beet soup is made with tender chunks of beef tri-tip, potatoes, cabbage, loads of veggies and of course, beets! This delicious tomato based soup is hearty, warming and perfect anytime of year! This traditional recipe has been passed down from generation to generation and I have enjoyed this incredible recipe since childhood!

Please help me here. My great-grandmother was Ukrainian, and remember distinctly her preparing borscht and she would never dilute the stock with water. Why did you? I ask because yours seems to be a bit watery compared to what I grew up with. Besides watering down the stock seems to defeat the purpose of the stock…makes no sense.

I just add some ingredient when my bf asks me .. and I can change meat( sometime without meat ) . But this recipe is the best .. I bought her book on Amazon.. she's such a good teacher...

The first time I tried Borscht was in the Ukrainian district in Manhattan 30 some years ago. I've always thought it was a great soup. I just made a batch today following Tatyana's recipe. This was best version I ever had. Incredible. Her directions are easy to follow and results were fantastic.

If you can get it, try it with venison. Venison borscht is to die for.

@@stephanginther9051 There is a guy here with an elk ranch, but my days of harvesting venison are gone. Elk, of all the game I have eaten, tastes the most like beef steak.

This is a Russian copy of real Ukrainian borscht. The one you tried in a Ukrainian district was most likely cooked with tomato pasta and shredded beets cooked on a pan with all the other chopped veggies BEFORE it is all combined with boiled beef, not fried one😉 that makes the difference, try it 🖤

YES!!!!!!!!!!!!!!!!!!!!!!!!!! This! YES! This, this is needed right now more then ever. Nothing, Nothing beats Borscht! Feeling sad, Have a bowl of Borscht, got a cold, eat Borscht, need a wonderful soup on a cold winter, eat Borscht, need a cold soup for winter eat Borscht, need to celebrate, eat Borscht.

You are right I’m not Russian but this is my favorite Russian dish .. I meet my husband 2 years ago and I first tried this dish at his mom’s I haven’t eat it since 3 months ago that we moved to live on out own been wanting to risk everything to attempt to make this recipe but I’m kinda nervous .. 😅 but I think I’ll give it a try ..

I just made this recipe and it was perfect and my husband (A HUGE Borscht fan) said he would eat it again. We paired it with a fresh baked rosemary focaccia bread from the New Seasons bakery and topped the borscht with a big dollop of sour cream upon serving with the fresh parsley and dill as you recommended for a garnish. 10/10 will make again!

Not only a great tasting soup, but super-healthy! I omitted the red meat, but used beef broth instead. My Aunt was from Ukraine and spoiled me with all kinds of authentic Ukrainian foods.

I’ve been using both your cookbooks and love them. This was my first time making borscht for my husband he’s polish and I wanted to learn some European recipes for him. I was sooo happy with how this turned out it was absolutely delicious this is the only borscht recipe I need, thank you!!

My grandma always cooks borscht for us whenever she’s visiting and what I’ve always enjoyed in my grandma’s borscht is absence of any sort of meat. Instead, to keep the protein value we add white beans that taste amazing after combined with natural beetroot aromas (although not everyone might like it). Love that people are spreading Ukrainian culture and teaching to differentiate from Russian. Much love

I love the idea of adding beans! My dad always adds beans to borscht when he makes it. Grandmas are the best, wish mine was still with us!

The only difference between Ukrainian and Russian borsh (t doesn't belong there lol) is Ukrainian borsh is more likely to be made with pork and not beef (like in this recipe). My Ruski mother's recipe for borsh she got from my Ruski grandmother has pretty much the exact same ingredients as this one, except she doesn't sear the meat first. My evolution of the recipe involves both searing the meat, as well as using both pork and beef - thought the TASTIEST meat to use is oxtail! Definitely extends the cooking time, but well worth the extra savory taste!

First time I'm hearing about the soup and when I heard about it it was from Ukraine. I made it and it is the best stew or soup I've ever eaten❤ I am from the US and I absolutely love it and it will become a staple in my home💙💛😊

⁠@@HonorableBeniah-Ano, it’s not true. It’s origin from Ukraine. Originally Russian version of borshch is schi. Although it’s very popular in all Eastern European countries. But next time, please do not spread fakes. Educate yourself❤

Some Russian friends made this dish about 8 years ago. I had it again in Las Vegas 5 years ago. These 2 were the vegetable version's. Tonight I'm waiting 1 hour before I had my cabbage and golden potatoes. It's my first try with this meal. I have all the ingredients. I'll update you tonight on its tastes. Thanks

My wife is often telling me how much she misses borscht, so when I found your recipe and had a day off I made this. My best buddy is living and working in Kiev Ukraine, I'm sending him this to watch. There is a yearly Borscht Competition in Ukraine that I want to send him to... Borscht is THE ABSOLUTE BEST. My first borscht was my oldest sister's vegetarian cream, butter and beet, a very simple soup. I loved it and researched it. I developed my own recipe (I'm a son of a chef!) which is comparable to your recipe. I use lamb or goat at times, or Texas Axis deer which tastes EXACTLY LIKE BEEF but with zero fat. I had to edit the comment a little for errors in autocorrect... But borscht has become a part of my life! I was so glad I found your video. I even showed it to my wife and family members. I had never heard of this. I have a friend that works on a fishing boat in Alaska. He told me the cook is Ukrainian and made this. He told me it's some of the best soup he's ever had and I found you! My mother was born in Kiev and she made it with dried shrimp and added cooked beans but no tomato sauce, other then that she used the same ingredients. it is delicious! I am going to try your recipe, thank you.

I tried your recipe today and it came out perfect! It's the first time I tried to add the cabbage one minute before the turning off the heat and it made the texture wonderful (Usually it came out too soggy and the cabbage taste overpowered the rest) Thank you so much!

Truly delicious, and actually pretty easy to put together. Some modifications I made is cooking the cabbage a little longer and adding a bay leaf, I think it adds an extra herby fragrance to the soup :) Thank you for sharing your amazing recipe ❤️

I made this soup tonight because of the heavy rains I told my wife before I was going to make it. She asked that I also make another dish for stand by- just in case... No one else thought that it would taste good. The challenge was on. Let me say everyone LOVED It! I now KNOW that it will be in heavy rotation. I love this soup!

You're absolutely right! Once I tasted the soup I immediately reserved some for myself for the next day. What I didn't say in my previous comment was that I paired it with some Russian bread that I bought from a local bakery. The whole experience was sublime with the hot, toasted & buttered bread. It's perfect for a cold weather day.

This is a fantastic recipe, my British hubby loved it. I also experimented and added 50/50 beans/meat for lighter summer version and it was light yet delicious. Can we see творожный кекс/запеканка? 😃

My mom gave me some beets, I had no idea what to do with them. I’m definitely going to try making this soup, thanks for the easy version of it featuring beef broth instead of making it from scratch. I just have to say - this has been one of the rudest and disrespectful comment sections I’ve seen in a very long time, and I use KZfaq every day. Your patience is seriously to be commended! When it comes to culture and their opinions, people can be INSUFFERABLE. Thank you for taking the time to share your UKRAINIAN family’s recipe that they’ve been making for YEARS! People assume you are not truly Eastern European because of your American accent. It’s very disrespectful. Growing up this was my favourite dish my mother used to make!❤️ But she’d always add things like vinegar, apple juice, red wine and a LOT of herbs that I thought would overpower it a little too much. That aftertaste ya know? Anyway this one was great to try and a lot less stressful to work with.

I just finished this and it's great! Thank you for the wonderful recipe. I just personally prefer more cooked cabbage, so I cook it for ten minutes instead of two. But otherwise it is really amazing! I recommend this! ^^

I've made homemade Borscht before after getting inspired from dining years ago at a Russian cafe in Atlanta. I've used many of those items you did except not celery and cabbage, but I guess those make sense too, as the theme is cold-weather crops. Either way, it's such a rich and hearty soup for cold nights, and nutritious. I'll definitely have to try your recipe version!

My family comes from southeastern Poland, near the Ukrainian border. Cold borchst during the summer as an apperitife was with every supper. Of course, it was a vegan variety except for the sour cream, but i still remember the fresh dill and the sour cream just taking it up a notch.

I love this recipe so much. My Ukrainian friends made it for me for the first time, and this recipe is the closest to theirs. I already made this 4 times. It also helps sick heal faster. Such a lovely winter feeling in a cup. Thank you❤

Does it have a strong beet flavor? Can you taste them in the soup? I have to make something Ukranian for class, but I hate beets.

@@cannotbeshaken7889 It doesn't have the earthy flavor of the beets. This soup is slightly sweet from the beets and tomatoes, but you can add a touch of lemon juice to balance the flavors.

Another classic from my mama. I do it similar to hers and yours but I use a smoked ham hock. Removing most of the fat after the hock simmers for a couple hours. YUM. I am actually making this tomorrow for dinner with perogies. You are so lovely to watch. I checked your beautiful pots out as I just can't believe how stunning they are. Can't believe the variety on their website. The price is very high but I am sure the quality is amazing. Cheers!

I'm making it right now by your recipe. The smell is heavenly. Now I'm cooking it for an hour more so the meat gets more tender and soft, and after that I'll add cabbage. I already see this dish will be my discovery of the year 😃 10/10

I lived in Hong Kong in the 70's. Weirdly, this soup was available everywhere, I especially liked the version they served in the Sincere department store restaurant, i used to get the borscht and the crab au gratin every single time. Sometimes i went just for the restaurant in the store.

@@TatyanasEverydayFood Yeah. It's Chinese name literally means "Russian soup"(罗宋汤). I've eaten the soup before, but I never knew it came from Ukraine. Chinese recipe is a bit differnt, with few or no beetroots but more potatos. I am going to cook an authentic borscht according to your recipe. Thanks for the great tutorial.

My Grandmother made it frequently when I was a kid. She was from Yugoslavia. Was not a fan of beets in general but in her soup it was ok.

Made borsht for the resturant following your base recipie. Had to improvise with what I had avaliable. Used au jus instead of beef broth. Added smoked paprika and a small amount of worchrsishire and butter. Tomato sauce and used ribeye steaks for the protein.

Tried this on a whimb..I had most of the ingredients already..turned out pretty good. Tasted like my traditional beef stew ..probably because I didn't have all the ingredients tho.

TFS! My parents immigrated from Ukraine to Montreal, Canada with my 2 brothers. My sister and I were born in Montreal. We speak, read and write Ukrainian and I cook a lot of Ukrainian dishes. Was looking for this classic from my childhood. Checked multiple different recipes and oh boy everyone does the soup their own way. I like this version the most. Not sure about the cabbage at the end as the one I used to eat had way more cooked cabbage. Going to try to make this version but will add the cabbage a bit earlier.

Tanya, did your mom & grandmother cook Borsch with celery in Ukraine too? I’ve never even heard of celery until immigrating to USA. I make mine very similar with boiling beef with bones for base, make zazharka & omit celery :) Congratulations on your book, it looks amazing!

I've received so many comments about the celery! :) Yes, they both used celery. It's funny because I used to hate celery and would ask my mom why she adds it! But you really don't taste it in the soup! I used to do the zasharka, too but I wanted to simplify the recipe and just add the tomato sauce straight into the soup. No difference in flavor! :) Thank you so much! :)

I make mine with celery too, and my Ukrainian mother in law also adds black or kidney beans into her borscht. My wife disapproves of the beans in the borscht because it makes for a "musical" evening at bedtime. LOL

Beets are also good for male sexual health because beets contain nitric acid which keeps blood vessels clean resulting in good prostate health. Don't recall where I read this but some cultures consider beets a fertility food.

I add ground beef and I also smoke 3 t bone steaks before I chop them up and cook them into the soup. Adds a Smokey flavor. The ground beef makes the broth heartier and richer.
