Buñuelos are sweet, crispy treats that are especially popular in the Mexican culture around the holidays. And, while there are different kinds of Buñuelos, these ones are called, "Buñuelos de Viento" because they're made with a mold or rosette iron. Besides being delicious, what makes them so great is the fact that the recipe calls for ingredients you probably already have on hand. Read on for the recipe. And, by the way, if you don't have a rosette iron, you can order one online pretty inexpensively. I'll include some care instructions for rosette irons below, as well.
Buñuelos de Viento
1 cup all purpose flour, sifted
1 Tbsp. sugar
1/4 tsp. baking powder
1/8 tsp. salt
1 egg
1 Tbsp. melted butter
1 tsp. vanilla extract
1 cup milk
*Plus sugar and cinnamon for topping buñuelos
Canola or vegetable oil for frying
Sift together all the dry ingredients into a medium size bowl. Mix and set aside. In separate, larger bowl, whisk together egg, melted butter, and vanilla. Pour dry ingredients into wet ingredients and mix. Add milk a little at a time and continue whisking until batter becomes smooth. Cover and refrigerate for 30 minutes.
In shallow bowl, mix sugar and cinnamon together and set aside.
When ready to make buñuelos, heat oil in frying pan or saucepan over stove set to medium heat. (Oil should be about 2 inches deep). When oil is hot, reduce heat to medium low. Place rosette iron in oil for 5 minutes to get it hot. Take rosette iron out, let excess oil drain off, and dip in batter close to the top without going over. Immediately place iron into oil, jiggle until batter becomes loose. Let buñuelo fry about 1 minute on first side. Flip over and continue cooking another 10-15 seconds. Take out of oil and place on paper towels long enough for excess oil to drain. While it's still warm, dip top side of buñuelo in cinammon sugar mixture and place on serving tray. Before making the next buñuelo, reheat iron first for about 10 seconds, quickly drain excess oil, and repeat the same steps.
This recipe makes between 20 & 30 buñuelos.
If you are using a new rosette iron for the first time, it's recommended that you cure it by placing it in hot oil for 30 minutes. Once it's cured, you won't need to do that again. However, it's also recommended that you do not wash it with soap and water. Instead, wipe it clean with cloth, and keep it stored in plastic so it stays clean.

Great informative useful video. I like good strong flavor. Can you put more cinnamon in the sugar, or do you need to keep a bit "subtle" like you did, so that you don't overwhelm the flavor of the batter? Hmmm maybe for Me a little extra vanillia ? ......... Are these the same as what I have seen presented as Buenuelos " estilo Jalisco"?

Absolutely, add more cinnamon. The only reason I keep it on the lighter side is so they can look more like snowflakes. Lol. As for the vanilla, I probably wouldn’t add too much more because it may change the consistency of the batter. I’m not sure if these are the same as “buñuelos de Jalisco,” but they’re also called “buñuelos de molde” since you make them using a mold. They’re delicious by any name! 😜 Thanks for checking out my video and for taking the time to comment.

@@marcyinspired1442 Thank you, I am wondering why you think the vanilla would "change the consitance of the dough"? Is the worry just the "extra Liquid' would make it "too thin"? I could always just remove the same amount of water as the extra "half a spoon or extra spoon" of vanilla. Or is there a problem with a "chemical reaction" with the "extra" vanilla in the batter? I am not a baker and don't know much about the proper "preperation" of dough,(would that apply to batter also? :-)) . ) I am thinking of adding 2 flavorings in the batter,( vanilla and something else. Or maybe 3 flavorings... ahhh that might be to much. maybe 2 different batches :-)) . :-) . ) Have a good one. :-)

A half a teaspoon probably won’t affect it. I just didn’t know what your idea of strong was. Lol I also like your idea of a second batch. There’s only one way to find out and experimenting is how we come up with great recipes. Let me know how they turn out.

@@marcyinspired1442 Now I am thinking 4 batches. 1 just vanilla, one with vanilla and second flavor. another with vanilla and a second different flavor. and one batch with all three flavors! That is way to many buenuelos! :-O I guess I should head to the thrift store and get a mold first! :-)) Looks like everybody I know would/will be getting some buenuelos! :-)) have a good day.

What size Bunuelos mold did you use. On Amazon there is a 4.7in and a 5.7in mold. Also, I love your videos! I made tamale pie last night. It was delicious and my Family loved it!! Hope you and your family have a Blessed Thanksgiving!!
